HOT PEPPER RELISH

Won first prize at New Mexico State Fair! Delicious! Sweet and hot! Mexican, Spanish and Southwestern influence!

Number Of Ingredients 7

18 red chili peppers, seeded and stemmed
18 green chili peppers, seeded and stemmed (you can use green bell peppers for less heat)
4 lbs onions, peeled (about6-8)
1 tablespoon canning salt (You can use regular salt)
boiling water
2 1/2 cups cider vinegar
3/4-1 cup sugar

Steps:

  • Put peppers and onions through food chopper, or chop in water in blender and drain.
  • Place in 6 quart kettle.
  • Add salt; cover with boiling water.
  • Let stand 10 minutes.
  • Drain and discard liquid.
  • Add vinegar and sugar to vegs.
  • Bring to boil, simmer 20 minutes.
  • Ladle into 7 pint jars, pressing down as you pack so liquid covers vegs.
  • Wipe jar rim, adjust lids.
  • Process in boiling water bath 15 minutes.
  • Start to count processing time when water in canner returns to boiling.
  • Remove jars.

1 1/2 lbs plum tomatoes, cored and roughly chopped
1/2 red bell pepper, seeded, stemmed, and minced
2 teaspoons ground cumin
1 tablespoon minced onion
salt, to taste
cayenne pepper, to taste
1 lime, juice of
2 tablespoons cilantro, chopped

Steps:

  • Combine tomatoes, bell pepper, cumin, onion, salt, cayenne pepper, and lime juice. Taste and adjust seasonings if needed.
  • Just before serving, add cilantro.

6 cups fresh tomatoes, chopped
1 cup onion, chopped
1 cup green pepper, chopped
1/2 cup sugar
1 cup white vinegar
2 teaspoons celery seeds
2 teaspoons salt
1/2 teaspoon black pepper

Steps:

  • To prepare the tomatoes peel them by soaking them in boiling water for a couple of minutes, the skin shoould peel off easier.
  • Remove the seeds and chop them.
  • Combine the sugar, vinegar, celery seeds, salt and pepper in a large bowl.
  • Stir until the sugar is dissolved.
  • Now add the chopped tomatoes, onion and green pepper.
  • Store the relish in an airtight container in the refrigerator overnight.

4 cups red peppers or 4 cups green peppers, chopped
2 cups onions, chopped
3 cups vinegar
6 cups sugar
1 tablespoon mustard seeds
1 tablespoon celery seed
4 tablespoons pickling salt (not iodized)

Steps:

  • Mix tomatoes, onion, pepper and salt, let stand 1 hour.
  • Drain well and add remaining ingredients (tie spices in cheesecloth).
  • Bring to a boil and simmer 20 minutes.
  • Pour into sterilized jars and seal.
  • Process in boiling water bath 20 minutes.

It can be made a little hotter by subbing in some extra Jalapenos or even using Habeneros instead. It is wonderful with any sort of meat or even just having a few spoonfuls on your plate as a sort of side dish is good. THIS RECIPE ASSUMES KNOWLEDGE OF SAFE WATER BATH CANNING METHODS

20 medium tomatoes, peeled and chopped (about 5 lbs)
1 1/2 cups onions, chopped
3/4 cup green pepper, chopped
1/4 cup diced jalapeno (that is 1 of my tweaks-it originally called for 1 cup green peppers & no hot pepper)
2 teaspoons celery seeds
2 teaspoons pickling salt (non iodized salt)
3/4 teaspoon cinnamon
3/4 teaspoon clove
3/4 teaspoon allspice
3/4 teaspoon ginger
1 cup vinegar
1 teaspoon crushed red pepper flakes (another addition, feel free to omit)
1 cup sugar

Steps:

  • Peel tomatoes by boiling water method- dip each tomato briefly in boiling water and then immediately drop into a pot of cold water; the skins should peel off quite easily after that.
  • Mix all ingredients in large, preferably non stick, pot.
  • Simmer over medium heat to desired thickness, stirring occasionally to prevent sticking.
  • Spoon mixture into sterilized pint jars and seal with lids and bands.
  • Process in a boiling water bath for 15 minutes; will keep stored in cool place for up to a year.

15 ripe tomatoes - peeled, seeded, and chopped
4 Granny Smith apples - peeled, cored, and chopped
5 sweet onions, chopped
2 cups white sugar
5 fluid ounces white vinegar
1 tablespoon pickling spice, bundled in cheesecloth
6 1-pint canning jars with lids and rings

Steps:

  • Combine tomatoes, apples, onions, sugar, vinegar, and pickling spice bundle in a large pot; bring to a boil and cook together about 10 minutes, stirring occasionally.
  • Sterilize the jars and lids in boiling water for at least 5 minutes. Pack the tomato mixture into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars into the boiling water using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Bring the water to a rolling boil, cover the pot, and process for 40 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

3 large red bell peppers, roasted and peeled, and seeds and Membranes discarded
2 garlic cloves, peeled and chopped finely
1 tablespoon ground cumin
1/4 teaspoon cayenne
1 tablespoon olive oil
2 tablespoons lemon juice
1/4 cup chopped fresh parsley
salt & freshly ground black pepper
1 loaf baguette, cut into 1 inch slices on the diagonal

Steps:

  • Place the tomatoes in a frying pan and saute on high heat until they thicken,6 to 8 minutes. Remove from the pan and place in a bowl.
  • Finely chop the roasted bell pepper and add to the tomatoes. Add the garlic, cumin, cayenne, olive oil, lemon juice and parsley. Mix well. Season with salt and pepper to taste and place on a serving dish.
  • Serve with the baguette slices.
  • Note: this can be made 1 day in advance. However, do not add the garlic until ready to use.
