Ingredients

1/2 lb white cheddar cheese (grated)
2 tablespoons sweet gherkins (optional)
2 tablespoons pimientos (chopped)
1/2 cup mayonnaise
6 large eggs (hard boiled)
1 1/2 tablespoons sweet gherkins (chopped)
1/3 cup celery (chopped)
1 1/2 tablespoons green onions (chopped)
1/3 cup mayonnaise
1 lb boneless skinless chicken breasts or 1 lb chicken tenders
1 cup buttermilk
1/3 cup celery
1/3 cup mayonnaise

Steps:

For pimento cheese, stir together all ingredients until mixed.
For egg salad, combine ingredients and stir well.
For chicken salad, place chicken in baking dish and pour buttermilk over chicken.
Sprinkle chicken with salt and pepper and bake at 400°F for 20-30 minutes or until tender and no pink shows inside.
Let chicken cool, then chop and add celery and mayonnaise.
