GRANDMA'S CLASSIC BISCUITS AND SAUSAGE GRAVY
Steps:
- Brown the sausage in a large, deep skillet. I like to use a cast iron skillet. Cook the sausage on medium heat, breaking it up into pieces, cooking until no pink remains, about 10 minutes.
- When the sausage is cooked through add the unsalted butter and stir until melted. Next, add the flour and stir into sausage until dissolved.
- Pour the milk into the skillet with the sausage and raise heat the bring the mixture to a boil. Once boiling reduce heat and continuously whisk until the gravy begins to thicken. About 5 minutes.
- Add in spices and stir until combined. Taste and adjust gravy seasoning to you liking, then serve over top of warm biscuits, enjoy!

SAUSAGE BISCUITS AND GRAVY
Often imitated, never duplicated. Just make sure that after you make this for breakfast, you have a window of opportunity to go back to bed, because you won't be able to do much after consuming this. Cast-iron skillet is preferred. I prefer the taste that the maple sausage lends to the dish, however you could easily substitute regular or sage sausage in lieu of the maple. Steps:
- With your finger, tear small pieces of sausage and add them in a single layer to a large heavy skillet. Brown the sausage over medium-high heat until no longer pink. Reduce the heat to medium-low. Sprinkle on half the flour and stir so that the sausage soaks it all up, then add more little by little. Stir it around and cook it for another minute or so, then pour in the milk, stirring constantly.
- Cook the gravy, stirring frequently, until it thickens. (This may take a good 10 to 12 minutes.) Sprinkle in the seasoned salt and pepper and continue cooking until very thick and luscious. If it gets too thick too soon, just splash in another 1/2 cup of milk or more if needed. Taste and adjust the seasoning.
- Spoon the sausage gravy over warm biscuits and serve immediately!
MERM'S BISCUITS AND SAUSAGE GRAVY
This is a slightly modified version of my beloved Mom's (her grandkids called her Merm) recipe. My family loves this stuff and they insist I make it for breakfast every holiday and sometime for dinner. I serve it by putting the buttered biscuits on a big plate, smothering them with the gravy and then topping them with either scrambled or over-easy eggs, depending on the preference of the person eating them. This is pure comfort food for my family!

- Preheat the oven to 425° F. Spray an 8-inch or 9-inch round pan with a light coat of cooking spray and set aside.
- Cook the sausage in a large skillet over medium heat, breaking up the meat with a wooden spoon. When the sausage is no longer pink, use a slotted spoon to remove the cooked sausage to a plate lined with paper towels (leave the drippings in the skillet). You should have about ¼ cup of drippings. If you sausage is leaner, you may need to add butter to the skillet to equal ¼ cup of fat.

- In a large skillet over medium-high heat, crumble and brown the sausage. Don't just cook it, but actually allow it to brown some. It adds flavor. Do not drain the grease away.
- Gradually add the milk, stirring well after each addition. Reduce to a simmer and allow the gravy to thicken, stirring frequently. For thicker gravy, add about 2 cups total. For thinner gravy, add more milk. Add salt and lots of black pepper to taste. Serve immediately.
