2 (7 ounce) cans tuna, drained
1 (10 ounce) package frozen peas
1 cup shredded cheddar cheese
1 cup celery, sliced
1/2 cup breadcrumbs
1/4 cup chopped onion
1/4 teaspoon salt
1/8 teaspoon pepper
1 cup mayonnaise
1 (8 ounce) can crescent dinner rolls
sesame seeds
1/2 cup mayonnaise
1/2 cup sour cream
1/2 cup chopped cucumber
1 tablespoon chopped chives
1 teaspoon chopped parsley
1/4 teaspoon salt
1/4 teaspoon dill weed

Steps:

  • Combine tuna, frozen peas, cheddar cheese, celery, bread crumbs, onion, and salt and pepper in a large bowl. Add mayonnaise; mix well. Spoon into 10x6 baking dish. Separate crescent roll dough into 2 rectangles; press perforations to seal. Cut dough into 4 long and 8 short strips. Place strips over casserole in lattice design. Brush lightly with mayonnaise. Sprinkle with sesame seeds. Bake at 350*, 35-40 minutes or until crust is golden brown. Serve with Cool Cucumber Sauce.
  • For Cool Cucumber Sauce: Combine mayonnaise, sour cream, cucumber, chives, parsley, salt, and dill weed. Mix well and chill.

This is one of my family's favorite quick work night meals - I used to make this as a teen for my folks and have continued with my family. My kids (and hubby) request this one!! Fun ways to change it up are to bake crescent rolls in a ball/roll filled with cheese on top of the casserole (I like to start them out first so the bottoms cook a bit first), or top the casserole with fried onions, crushed potato chips (a great use for those old chips in the cupboard), etc. I modify the amounts depending on what I have in the pantry - but it is always great!!!

3 (6 ounce) cans white albacore tuna in water
2 (26 ounce) cans cream of mushroom soup (low sodium if possible)
1 (12 ounce) bag rainbow rotini pasta
1 (8 ounce) bag shredded tillamook sharp cheddar cheese
1 (8 ounce) bag kraft shredded four cheese blend
10 ounces frozen peas (organic preferred)
pepper, to taste
salt, to taste

Steps:

  • Cook pasta al dente (9 minutes) or as directed on package. Drain.
  • Combine in pot pasta, cream of mushroom soup, tuna, peas, salt, pepper and cheese.
  • Mix thoroughly.
  • Transfer into a covered casserole dish and bake at 400 degrees for 30 minutes or until bubbly.
  • Remove from oven and allow to cool for 5 minutes prior to serving.
  • Serving suggestions - serve with crusty bread and salad or green veggie. ;) Enjoy!

2 (6 ounce) cans tuna in water, drained well
1 small onion, diced
1 cup shredded cheese (your choice)
1 cup frozen vegetables, thawed and drained
2 eggs
8 ounces crescent rolls

Steps:

  • Mix all ingredients except crescent sheets. Spray non-stick spray into a line 8x8 baking pan with one crescent roll sheet. Layer tuna mixture onto the first sheet of crescent roll sheet. Top with second crescent sheet, you can press the sheet together so it will look like one continuous sheet. bake at 350 degrees until golden brown, about 25 minutes. Top this with a cheese sauce or grated Parmesan cheese.

SIMPLE TUNA POT PIE

Oh, I love these individual tuna pot pies! I found these on the back of a Chicken of the Sea Tuna pouch, and I am glad I did. Recipe is very easily halved into 2 pot pies. Also, with my changes (The ones in parentheses) these come out to 200 calories per pot pie. Also, if you want a crust or lattice top piece, simply crisscross crescent roll dough on top of pies before baking.

1 cup water
1 chicken bouillon cube
1 cup frozen vegetables, NOT defrosted (personally, I use about 2 cups, and whatever I have in the freezer with success)
1 cup milk (I use skim)
2 tablespoons cornstarch
1/2-1 cup shredded cheddar cheese (I use 0.5 cup 2% sharp, and it's good and cheesy)
1 (7 ounce) envelope solid white tuna packed in water or 1 (12 ounce) can chunk light tuna, drained and flaked
1 (8 ounce) can crescent roll dough (optional)

Steps:

  • Preheat oven to 375°F.
  • In medium saucepan, combine water, vegetables, and bouillon cube. Bring to a boil over medium heat; cook for 2 minutes longer.
  • Dissolve cornstarch in milk, stir into vegetable saucepan and cook until thickened (maybe a little less than 2 minutes.) Stir in tuna and cheese.
  • Spoon mixture into 4 (3/4 cup to 1.5 cup) individual pie pans or casserole dishes.
  • Optional step: Separate crescent roll dough into 4 rectangles, cut each rectangle into six strips. Attach crust by crisscrossing six dough strips over each pot pie and pressing down firmly; trim excess dough.
  • Bakes pies at 375°F for 15 to 20 minutes.

1 can (12 ounces) albacore white tuna in water
1 cup frozen peas and carrots (about 5 ounces)

1 tablespoon Dijon mustard
1-1/2 teaspoons dried minced onion
1 teaspoon Italian seasoning

Steps:

  • Preheat oven to 375°. Unroll crescent dough and separate into triangles. On an ungreased 12-in. pizza pan, arrange triangles in a ring with points toward the outside and wide ends overlapping. Press overlapping dough to seal., In a small bowl, combine the remaining ingredients. Spoon across wide end of triangles. Fold pointed end of triangles over filling, tucking points under to form a ring (filling will be visible)., Bake 15-20 minutes or until golden brown and heated through.
