MENNONITE PEANUT BUTTER COOKIE'S
My mom was brought up in a Mennonite church in South Dakota. Her family church published a cookbook back in the 60's. In that cookbook are these amazing peanut butter cookies. I wrote in the front of the cookbook that it will be willed to me. I have made many batches over the years. They are one of a kind.

Steps:
- 1. In large mixing bowl cream shortening, granulated sugar and brown sugar till light and fluffy. Add eggs, vanilla and peanut butter. Mix well.
- 2. In medium bowl combine flour, baking soda, salt. Add into creamed mixture. Mix well.
- 3. Preheat oven to 375F. Place 1 large tablespoon of cookie dough 1 inch apart and flatten with a fork. Bake for 10 minutes. Let cool slightly and remove from pan. Cool on a cookie rack.

- Heat oven to 325 degrees F.
- Mix all ingredients with large spoon until well blended.
- Roll into 24 balls; place, 4 inches apart, on baking sheets. Flatten with fork.
- Bake 20 min. or until lightly browned. (Do not overbake.)
- Cool 5 min. on baking sheets; transfer to wire racks. Cool completely.

- Cream butter, peanut butter, and sugars together in a bowl; beat in eggs.
- In a separate bowl, sift flour, baking powder, baking soda, and salt; stir into butter mixture. Put dough in refrigerator for 1 hour.
- Roll dough into 1 inch balls and put on baking sheets. Flatten each ball with a fork, making a crisscross pattern. Bake in a preheated 375 degrees F oven for about 10 minutes or until cookies begin to brown.
