MENNONITE CABBAGE, POTATO & KIELBASA BAKE



Mennonite Cabbage, Potato & Kielbasa Bake image

Hearty and delicious but simple Mennonite main dish. Tender cabbage shreds, diced potatoes, and savory kielbasa baked together in a creamy casserole. There really is no need to have a side dish with this meal.

1 head, small (about 4-1/2" dia) Cabbage, fresh
2 cup diced Potato, raw
16 oz Hillshire Farm Polska Kielbasa
1 cup Milk, 1%
2 large Egg, fresh, whole, raw
4 slice Bread, wheat (including toast)
1 stick Butter, salted
1 tsp Salt
0.5 tsp Pepper, black

Steps:

  • Preparation:
  • Wash and dice 2 cups of potatoes
  • Slice 1 (16 oz) package of Polish kielbasa
  • Cut 4 slices of wheat bread into cubes
  • Thinly slice 1 stick (1/2 cup) of salted butter
  • Directions
  • Preheat oven to 400 degrees F (200 degrees C).
  • Remove and wash outer leaves from cabbage; line a 13x9-inch baking dish with the leaves to cover the bottom entirely. Shred remaining cabbage.
  • Mix shredded cabbage, potatoes and kielbasa in a large bowl; spread atop the cabbage leaves in the baking dish.
  • In a separate bowl, whisk together milk, eggs, salt and pepper; add bread cubes. Set aside until the bread absorbs some of the liquid (approx. 1-2 minutes); pour over the cabbage mixture. Top with butter slices.
  • Bake in preheated oven until the potatoes are tender and the top is slightly browned, about 45 minutes.
