FREE-FORM CHOCOLATE CANDIES
Steps:
- Turn a rimmed baking sheet over and place a sheet of parchment paper on top. Spoon or pipe quarter-size mounds of chocolate onto parchment, spacing about 2" apart (you should have about 30). Using a small offset spatula or the back of a spoon, spread outward in a circular motion to make silver-dollar-size disks. Top as desired. (You don't need to use all the toppings on every disk.) Chill until cold and set, 30-35 minutes.
- Carefully peel candies off of parchment just before serving.

- Candies can be made 4 days ahead. Keep chilled.
MENDIANTS (CHOCOLATE WITH DRIED FRUIT AND NUTS)
These French-style chocolate disks are as pretty as can be and a cinch to make. Craft a batch to gift and you'll spread cheer to friends and neighbors, colleagues, and everyone else who made this year sweeter.

Steps:
- Spoon 1-tablespoon dollops of chocolate onto parchment-lined baking sheets (you can also fill a small squeeze bottle with the chocolate and squeeze dollops onto baking sheet); bang a few times on countertop to flatten slightly. Top with a few pieces of dried fruit and a nut or two.
- Let stand until set, about 15 minutes. Store in an airtight container at room temperature up to 1 month.
MENDIANTS - BEAUTIFUL LITTLE CHOCOLATES
These are the cutest little things I've seen in ages. Mendiants are simple to make but the finished article is so elegant you'd be forgiven for thinking you'd bought them for an expensive chocolatier!

Steps:
- Place a sheet of waxed paper on a marble slab or other smooth, cold surface. Melt chocolate in a microwave oven or in a bowl over hot water. (To make life easier only melt 1/2 the chocolate first then the other half).
- Place a scant teaspoonful of melted chocolate on the sheet, and shape into a disk using the back of a spoon. Make several at a time so that the chocolate does not become too cool.
- Place a pistachio, raisin, almond, and halved strip of orange peel on each disk, and leave to cool completely.
- The mendiants are ready when they come off the waxed paper with ease.
