Steps:
- Beat pudding mix and milk with whisk 2 min. (Pudding will be thick.)
- Spoon into resealable plastic bag; press excess air from bag, then seal bag. Cut small piece from one bottom corner of bag; use to pipe pudding onto wafers.
- Top with bananas and COOL WHIP.

FROZEN BANANA BITES
A simple dessert that people love! You can use anything you want in place of the toffee: sprinkles, nuts, cookie crumbs, or whatever! This is also really good with dark chocolate.

Steps:
- Cover a baking sheet with waxed paper.
- Spoon a thin layer of peanut butter on top of each banana slice. Insert a toothpick through the peanut butter layer into the banana. Place banana bites onto the prepared baking sheet; freeze for 30 minutes to overnight.
- Melt chocolate and shortening in the top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching.
- Cover another baking sheet with waxed paper.
- Remove 2 to 4 banana bites from the freezer at a time; coat each bite with chocolate mixture. Place coated banana bites on the second baking sheet; sprinkle each with toffee bits. Repeat until all the bites are coated. Return banana bites to freezer until set, at least 1 hour. Allow bites to sit in room temperature for about 15 minutes before serving.

- In a small bowl, mix sugars and cinnamon until blended. In a large bowl, whisk the first 5 beignet ingredients. In another bowl, whisk egg, bananas, milk and 2 tablespoons oil until blended. Add to flour mixture; stir just until moistened., In an electric skillet or deep fryer, heat oil to 375°. Drop tablespoonfuls of batter, a few at a time, into hot oil. Fry about 45-60 seconds on each side or until golden brown. Drain on paper towels. Roll warm beignets in sugar mixture.

BROWN BUTTER BANANA MUFFINS

- Preheat the oven to 375 degrees F. Line a 12-cup muffin tin with paper muffin liners.
- Peel the bananas and add to a large bowl. Add the agave syrup and mash the bananas with a fork until very liquefied but still a little lumpy.
- Melt the butter in a small saucepan or skillet over medium heat. Cook, stirring occasionally, until the milk solids have turned a nutty golden brown.
- To the brown butter, add about 1 cup of the mashed banana mixture and whisk to combine. Cook for a few more minutes until a darker golden color is achieved. Add to the remaining mashed banana mixture and whisk to combine, then whisk in the egg. Fold in the flour, in 2 batches, with a rubber spatula, until just combined; do not over mix. With an ice cream scoop, evenly divide the batter among the muffin tin cups.
- Bake in the center of the oven until golden brown and the tops spring back when pressed, about 25 minutes. Cool for 5 minutes in the pan, then transfer the muffins to a rack to cool completely. Serve warm or at room temperature.
BANANA NUTELLA® BITES
A quick and easy dessert made with puff pastry filled with Nutella® and bananas. Top it with a creamy cream cheese topping and you have a taste to die for.

- Preheat oven to 375 degrees F (190 degrees C). Grease two 24-count mini-muffin tins with cooking spray.
- Cut each puff pastry sheet into quarters. Cut each quarter into 4 square pieces. Fill each mini-muffin cup with 1 puff pastry square.
- Spread 1 teaspoon chocolate-hazelnut spread over each pastry square. Place 3 banana slices on top.
- Bake in the preheated oven until golden brown, 15 to 18 minutes.. Transfer to a wire rack to cool completely.
- Beat cream cheese in a bowl with an electric mixer until smooth, about 2 minutes. Add heavy cream, sugar, and vanilla extract; beat until frosting is thick and creamy.
- Pipe or spoon cream cheese frosting on over banana slices.

- Combine chocolate chips and butter in 1 quart saucepan. Cook over low heat, stirring occasionally, until chocolate is melted (3 to 4 minutes).
- Pour chocolate into 1 cup measuring cup. Using two forks, dip each banana chunk into chocolate; let excess drip off. Place onto waxed paper-lined tray. sprinkle with suggested toppings. Freeze at least 30 minutes or until firm.
- TIPS: If chocolate becomes too thick, reheat over low heat, stirring constantly, until melted.
