MEME'S "SPECIAL K" MUFFINS

Muffins are my favorite breakfast food. I am always trying to come up with ways to make them somewhat healthier. My grandkids love these.....and so do I.

Number Of Ingredients 12

1 1/2 c special k cereal (any flavor)
1 c buttermilk
1/4 c hot water
1/4 c canola oil
1 large egg
1/4 c brown sugar, firmly packed
1/4 c sugar
1 large ripe banana
1 1/4 c flour
1 1/4 tsp baking soda
1/4 tsp salt
3/4 c dried cranberries (blueberries are also good)

Steps:

  • 1. Coarsley crush cereal. Soak in hot water, buttermilk, canola oil for 5 minutes. Add beaten egg. Add both sugars. Add mashed banana. Stir till well blended.
  • 2. Mix flour,baking soda, and salt together. Add to cereal mixture, stir well. Stir in cranberries or choice of fruit.
  • 3. Bake in greased muffin tins at 350 degrees for 19 minutes. Makes 12-14 muffins.

Your favorite cereal can now be a part of your baking. These Special K muffins are made with oil and applesauce instead of butter as well as whole wheat flour for a healthy breakfast option. Made with cinnamon, brown sugar, with a few cranberries thrown in, these muffins have a warm taste and are perfect for the wintertime.

6 3/4 tablespoons milk
2 tablespoons vegetable oil
2 egg whites
7/8 cup applesauce
5 1/4 ounces Special K Cereal slightly crushed
7/8 cup whole wheat flour
7/8 cup brown sugar
1 teaspoon cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
1 cup cranberries
powdered sugar for garnish, optional

Steps:

  • Preheat oven to 200 degrees Celsius.
  • Line muffin pan with 12-15 cupcake papers.
  • Set aside.
  • In a large bowl, mix the milk, oil, and egg whites.
  • Add all the remaining ingredients, except the powdered sugar, and stir, just until well mixed.
  • Pour batter in pan, and bake about 20 minutes.
  • Remove from oven, let cool, and sprinkle with powdered sugar.

I have been trying to find a recipe that would be close to the muffins at Mimi's restaurant. This one is the closest I have found and they ARE yummy. Found at Cooks.com. If you don't have buttermilk, just put two teaspoons apple cider vinegar in two cups regular milk and let stand for 15 minutes.

1/2 cup butter
1/2 cup white sugar
1/2 cup dark brown sugar, packed
5 tablespoons honey
3 tablespoons boiling water
3 cups dates, pureed in food processor or 3 cups prunes, pureed in food processor. Measure before processing
1/2 cup honey
1/3 cup vegetable oil
3 large eggs
2 cups buttermilk
1 cup wheat bran
3 cups all-purpose flour
2 1/2 teaspoons baking soda
1 1/2 teaspoons salt

Steps:

  • Preheat oven to 375.
  • GLAZE.
  • Cream butter with sugars until light and fluffy.
  • Beat in honey and water.
  • Using a brush, coat bottom and sides of muffin tins.
  • MUFFINS.
  • Mix fruit, honey and oil until smooth.
  • Beat in eggs, then buttermilk and bran.
  • Sift flour, baking soda and salt together.
  • Add to mixture and beat until just combined.
  • Fill tins 3/4 full.
  • Bake for 20 - 25 minutes until springy to the touch.
  • Cool for 2 minutes then invert on rack to cool completely.
