- Preheat oven to 350°F/180°C and line a cupcake/muffin baking pan with 12 cupcake liners.
- In a medium sized bowl, whisk together the eggs, sugar, oil, and vanilla extract.
- Stir in milk, then add the rest of the ingredients (flour, cocoa powder, baking powder, salt), and mix until just combined but do not over mix. They batter won't be very thick, sort of runny and that's okay.
- Pour the batter into liners, and bake for 18-20 minutes or until a toothpick comes out clean. When completely cooled down, decorate.

These snowmen are melt-in-your-mouth delicious! Made with donut holes, and decorated with vanilla frosting and royal icing, they're the perfect addition to your holiday dessert spread.

- Make the frosting: In a medium bowl, mix together the frosting and white food coloring gel until well combined. Add the powdered sugar and mix again until fully incorporated and smooth.
- Make the royal icing: Sift the powdered sugar into a medium bowl and add the salt. To one side of the bowl, add the vanilla and egg white powder. Starting from that side, begin whisking the powdered sugar into the vanilla, gathering more as you whisk to prevent lumps from forming. Add water, 1 teaspoon at a time as needed, and continue whisking until all of the powdered sugar is incorporated. Divide the icing between 2 smaller bowls. Add the orange food coloring gel to one bowl and the black food coloring gel to the other and mix well. Transfer to 2 separate piping bags fitted with small round tips or zip-top bags with a corner snipped off.
- Assemble the cupcakes: Cut the donut holes in half. Spread frosting over a cupcake. Place 2 donut hole halves on the cupcake. Cover with frosting. Repeat with the remaining cupcakes, donut holes, and frosting.
- Using the black frosting, pipe eyes and buttons onto the snowmen. Use the orange frosting to pipe carrot noses.

- Press a vanilla wafer cookie vertically into the top of each cupcake as far as it will go. Place frosting in a small microwave-safe bowl and microwave on high for 15 seconds, stirring every 5 seconds, until a thick drizzling consistency is reached. (If frosting melts to much, let it stand at room temperature to firm up slightly.) Carefully spoon frosting over cupcakes and wafers to coat, allowing some to drip down the sides.
- For hats, place chocolate and shortening in a separate small microwave-safe bowl. Microwave on high for 1 minute, stirring after 30 seconds, until melted and smooth. Dip cookie halves into melted chocolate, letting excess drip off. Place on a sheet of waxed paper; immediately top with a miniature chocolate peanut butter cup. Chill until firm.
- Meanwhile, place remaining chocolate in a resealable plastic bag. Snip a small hole from one corner. Add dots of melted chocolate to wafer heads for eyes, and place an orange jimmy sprinkle on each cupcake for nose. Once set, place hats near heads on each cupcake.

- Cover the bottom of a marshmallow with frosting and place towards the back of the cupcake. If there is a gap where the marshmallow meets the top of the cupcake, fill the gap in with frosting. You want it to look like it’s melting into the top of the cupcake.
- Shape fondant into small carrot shapes to form the snowman's nose. Dab a small bit of frosting on the back end of the carrot nose and gently press it onto the center of the marshmallow. Hold the nose in place for a minute to allow it to start to dry and stick. Add a little extra frosting around the carrot nose if needed to help secure it in place.
- Using black icing, add 2 dots for the snowman's eyes and a series of dots to become the snowman's mouth. Then, draw arms and hands coming out from the bottom sides of the marshmallow.
