1 cup shortening
1-1/2 cups sugar
2 large eggs
1-1/2 teaspoons lemon extract
1/2 teaspoon vanilla extract
3-1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
FROSTING :
1 package (8 ounces) cream cheese, softened
1/2 cup shortening
1 teaspoon lemon extract
1 teaspoon vanilla extract
2 cups confectioners' sugar
Yellow colored sugar

Steps:

  • In a large bowl, cream shortening and sugar until light and fluffy. Beat in eggs and extracts. In another bowl, whisk flour, baking powder and salt; gradually beat into creamed mixture., Preheat oven to 375°. Divide dough in half. On a lightly floured surface, roll each portion to 1/8-in. thickness. Cut with a floured 3-in. flower-shaped cookie cutter. Place 1 in. apart on greased baking sheets., Bake 6-8 minutes or until edges are light brown. Cool on pans 2 minutes. Remove to wire racks to cool completely., For frosting, in a bowl, beat cream cheese, shortening and extracts until blended. Gradually beat in confectioners' sugar until smooth. Spread over cookies; sprinkle with colored sugar. Let stand until set. Store in airtight containers in the refrigerator.

2 cups all-purpose flour
2 cups white sugar
2 (3.5 ounce) packages instant coconut cream pudding mix
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
1 ¼ cups vegetable oil
5 eggs
2 cups canned pumpkin puree

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease two 9x5 inch loaf pans.
  • In a large bowl, combine flour, sugar, pudding mix, baking soda, salt and cinnamon. Stir in the oil, eggs and pumpkin until just blended.. Stir the flour mixture into the egg mixture. Pour batter into prepared pans.
  • Bake in preheated oven for 1 hour, or until a toothpick inserted into center of the loaf comes out clean. Remove from oven and let stand 15 minutes, then remove from pans and cool on wire rack.

If you like lemon chicken this is heavenly. The recipe comes from Susan Branch's Heart of the Home cookbook. It is simple and has only a few ingredients. The results are soooooooo goooooooooooood and nice enough for a special occasion.

3 whole boneless skinless chicken breasts, halved
1 1/2 cups flour
1/3 cup butter
2 tablespoons olive oil
salt and pepper
4 tablespoons butter
4 tablespoons parsley, finely chopped
1 lemon

Steps:

  • Dry chicken and pound out with a mallet until evenly flat. Coat with flour.
  • Melt butter and olive oil in a large skillet over meduim high heat.
  • Cook chicken breast for approximately 3 minutes on each side or until browned and cooked through.
  • Remove chicken from skillet and season with salt and pepper. Keep warm in oven while you prepare sauce.
  • Add remaining butter to skillet to melt while scrapping up brown bits from the bottom.
  • Remove from heat and add parsley and juice from 1/2 a lemon. Cut other 1/2 of the lemon into thin slices to use as a garnish.
  • Pour hot sauce over chicken and serve.

⅓ cup lemon juice
⅓ cup flaked coconut
⅓ cup chopped walnuts
1 (8 ounce) can crushed pineapple, drained
1 (12 ounce) container frozen whipped topping, thawed
1 (10 inch) pie crust, baked and cooled

Steps:

  • Gently combine the sweetened condensed milk, lemon juice, coconut, chopped nuts and drained crushed pineapple. Fold in the whipped topping. Pour batter into the prepared pie shell. Refrigerate for several hours before serving.

1 cup sugar
1/4 cup flour
1/8 teaspoon salt
1/3 cup lemon juice
2 grated lemons, rind of (approx. 5 tbsp)
3 egg yolks
1 1/2 cups milk
2 tablespoons melted butter
3 egg whites

Steps:

  • Combine sugar, flour, salt, lemon juice and grated lemon rind.
  • Add egg yolks which have been well beaten, the milk and melted butter.
  • Last, fold in egg whites which have also been well beaten.
  • Put ingredients into a buttered 9" baking dish which has been set in a larger pan containing about 1" of hot water.
  • (both pans will go into the oven.) Bake for 45 minutes at 325 degrees F.
  • Remove baking dish at once from hot water and allow to cool before serving.

1 cup unsalted butter, softened
1/2 cup powdered sugar (plus more for coating the cookies)
1/4 tsp salt
1 tsp vanilla extract
grated zest of 3 small lemons (use the juice for another recipe)
2 cups all purpose flour

Steps:

  • Preheat oven to 350F.
  • In a stand mixer or with electric beaters, cream together the butter, powdered sugar, salt, vanilla extract, and lemon zest until light and fluffy (1-2 minutes)
  • Add the flour, and mix just until the dough comes together. Give it a final stir by hand to make sure everything is evenly incorporated.
  • Using about 1 tablespoon of dough, roll each cookie into a ball and place on an ungreased baking sheet, about an inch apart.
  • Bake for 10-12 minutes. The cookies will still be pale and very soft when they come out of the oven, do not over bake. Allow to partially cool on the baking sheet before gently removing to a rack.
  • While the cookies are still barely warm, roll them in powdered sugar. Give them a second coat when they are completely cool. Note: if your powdered sugar is lumpy, be sure to sift it before coating.
