MELT-IN-THE-MOUTH MINCE PIES



Melt-In-The-Mouth Mince Pies image

A Sophie Grigson recipe. This pastry is easy to work with and has great taste and texture. It freezes really well too.

Number Of Ingredients 8

500 g mincemeat
milk, for brushing
caster sugar, to sprinkle
300 g plain flour
3 tablespoons icing sugar
175 g unsalted butter, fridge cold
175 g soft cheese
3 tablespoons single cream or 3 tablespoons double cream

Steps:

  • PASTRY:.
  • Sift the flour into a bowl with the icing sugar and 1/2 tsp salt. Using a knife or a processor, cut the butter and cream cheese into the flour mixture until it resembles coarse breadcrumbs.
  • Add enough cream to mix to a soft dough. Gather into a ball and knead very briefly to smooth it out. Divide dough into 2; wrap each in cling film and chill for at least an hour.
  • Lightly grease your bun tins. On a lightly floured surface roll out the pastry to the thickness of a coin, then stamp out equal numbers of 6cm and 7cm circles. Roll up the offcuts, knead lightly, and then roll out again.
  • Use the larger circles to line the cups of the tins. Place a heaped tsp of mincemeat in each cup, cover with the smaller disc and lightly press together. Make a small hole in the centre of each lid for the steam. Chill for 30 minutes before baking.
  • Heat oven to220/gas 7 and place a baking sheet in the oven to heat up (the intense blast of heat to the bases helps them to cook through more effectively).
  • Bake for 10 minutes approx; reduce heat to 180/gas 4, then cook another 10 minutes, until golden brown. Brush lightly with milk, dust with caster sugar, and then return to the oven for approx 1 minute.
  • Cool in the tins for 5 minutes, and then ease out. These will freeze for up to 3 months!

I got this recipe several years ago from a church cookbook and I have made it so many times. My family loves it. It can be made up and refrigerated over night, then just pop it in the oven the next day. Serve with a salad and your meal is complete.

1 (3 lb) chicken
1 (10 1/2 ounce) can cream of chicken soup
1 teaspoon salt
1 cup buttermilk
2 cups reserved chicken broth
1 cup self-rising flour
1/2 teaspoon black pepper
1/2 cup margarine, melted
1 (16 ounce) can veg-all mixed vegetables

Steps:

  • Boil chicken until tender. Debone and cut into small pieces. Reserve 2 cups of broth. Put chicken in a 9x13 pan. In saucepan, bring 2 cups broth and 10 1/2 can cream of chicken soup to a boil. Drain 16 ounce can of veg-all vegatables and pour over chicken. Pour broth mixture over vegetables. In a bowl combine flour, salt, pepper, buttermilk and margarine. Mix thoroughly with spoon to form batter. Spread batter on top. Bake at 425 for 30 minutes.
  • For OAMC: Bake as directed above, then wrap, seal and label. Note: You may want to make slightly saucier if you want it creamier from the freezer.

3 c cooked chicken, diced
10 oz package frozen mixed vegetables
1 can(s) cream of celery soup undiluted
1 c chicken broth
1/4 tsp pepper
1 c self rising flour
1 c milk
1/2 c butter melted

Steps:

  • 1. Preheat oven to 400 degrees
  • 2. Grease a shallow 2 quart baking dish
  • 3. Place chicken and vegetables in the baking dish
  • 4. Mix soup, broth, and pepper; pour over chicken mixture.
  • 5. Combine flour, milk, and butter; stir until smooth. Pour over mixture.
  • 6. Bake for 40 or 45 minutes, or until brown.
