2 c fresh cranberries
1/2 c sugar
1/2 c walnuts or pecans
2 eggs, well beaten
1 c sugar
1 c flour
2/3 c melted butter

Steps:

  • 1. Spread cranberries in well-greased 10-inch pan; sprinkle with sugar and walnuts.
  • 2. Add eggs; continue to beat until light.
  • 3. Add sugar, flour and butter.
  • 4. Pour batter over cranberry mixture.
  • 5. Bake for 1 hour at 325 degrees or until golden brown.

This makes a pretty holiday pie. For an added touch you can tint some coconut green and sprinkle it on top. Make it in one 10 inch or two 8 inch pie shells.

1 (14 ounce) can sweetened condensed milk
⅓ cup lemon juice
⅓ cup flaked coconut
⅓ cup chopped walnuts
1 (8 ounce) can crushed pineapple, drained
1 (12 ounce) container frozen whipped topping, thawed
1 (10 inch) pie crust, baked and cooled

Steps:

  • Gently combine the sweetened condensed milk, lemon juice, coconut, chopped nuts and drained crushed pineapple. Fold in the whipped topping. Pour batter into the prepared pie shell. Refrigerate for several hours before serving.

1/2 c. sugar
1/2 c. chopped nuts
2 eggs
1 c. sugar
1 c. flour
1/2 c. margarine, melted
1/4 c. melted shortening

Steps:

  • Grease well a 10 inch pie plate. Spread cranberries over the bottom of the plate. Sprinkle with 1/2 cup sugar and nuts. Beat eggs well. Add 1 cup sugar gradually and beat until thoroughly mixed. Add flour, melted butter and shortening to egg-sugar mixture. Beat well. Pour batter over top of cranberries. Bake in a slow oven (325 degrees) for 60 minutes or until crust is golden brown. Cut like pie. Serve either warm or cold with generous scoops of vanilla ice-cream.
