These frosted lemon cookies are a delicious refrigerator cookie, and they are quick and easy to make.

¾ cup butter, softened
⅓ cup confectioners' sugar
1 tablespoon lemon juice
1 teaspoon lemon zest
1 ¼ cups all-purpose flour
½ cup cornstarch
¾ cup confectioners' sugar
¼ cup butter, softened
1 teaspoon lemon juice
1 teaspoon lemon zest

Steps:

  • In a medium bowl, cream together 3/4 cup butter and 1/3 cup confectioners' sugar until smooth. Stir in 1 tablespoon lemon juice and 1 teaspoon lemon zest. Combine the flour and corn starch, and blend into the lemon mixture to form a soft dough. Divide dough in half, roll each half into a log about 8 inches long and 1 inch in diameter. Wrap in plastic wrap and refrigerate for 2 hours, or until firm.
  • Preheat oven to 350 degrees F (175 degrees C). Cut each roll into 1/4 inch slices and place onto the cookie sheet.
  • Bake in the preheated oven for 8 to 12 minutes, or until set. Cool completely before frosting.
  • In a small bowl, blend together 3/4 cup confectioners' sugar, 1/4 cup butter, 1 teaspoon lemon juice, and 1 teaspoon lemon zest with an electric mixer until smooth. Frost cookies and allow to dry before serving or storing.

Raspberry Meltaway Cookies just melt in your mouth! Soft dough made with cornstarch and powdered sugar compliments these raspberry cookies beautifully. Perfect topped with a simple almond glaze swirled with raspberry jam.

1 cup butter (softened, 2 sticks)
¾ cup cornstarch
¾ cup powdered sugar
1 ½ tsp almond extract
1- 1 ½ cups all-purpose flour**
1 ½ cups Powdered Sugar
3 TBSP butter
3 TBSP milk
½ tsp vanilla extract
2-3 TBSP seedless red raspberry jam

Steps:

  • Mix together butter and cornstarch until well combined. Add in powdered sugar and extract and mix until smooth. Add flour and mix until dough comes together and flour is all incorporated. Cover and refrigerate 10-15 minutes.
  • Preheat oven to 350 degrees F.
  • Scoop out about 1/2 a tablespoonful of dough. (I use a small cookie scoop!) Roll into a ball and lay on parchment on a cookie sheet. Lay cookie dough balls out 4 across in 5 rows, fitting about 20 cookies per sheet.
  • Bake 9 minutes. Remove from oven and flatten the tops of each cookie by gently pressing down with the bottom of a glass. Let sit for 2 minutes before transferring parchment to a cooling rack.
  • Whisk vanilla glaze ingredients until smooth and desired consistency is achieved. Let cool slightly before spooning onto cookies.
  • Let cool about 10 minutes. Spoon glaze on top. Transfer jam to a small bag and cut the corner to pipe 4-5 small drops of jam on top of glaze on each cookie. Use a toothpick to swirl the jam and the glaze.
  • Let cool to set. Store in an airtight container.

2-4 tablespoons milk

Steps:

  • Preheat oven to 350º F. Line a baking sheet with parchment paper.
  • In a large mixing bowl, cream butter, egg yolks, vanilla, and almond extract together
  • Add powdered sugar, flour, cream of tartar, and baking soda. Beat well. The dough will appear to be crumbly. Work it with your hands until it forms a ball.
  • Roll dough into 1-inch balls and place them on the baking sheet.
  • Flatten each ball with your fingers or a flat glass cup. Lightly flour the bottom of the cup if itsticks.
  • Bake for 10 minutes or until the bottoms are lightly brown. Allow cooling.
  • To prepare the frosting, beat powdered sugar, butter, and milk together. If it is toothick, add a little milk. If it is too thin, add a bit more powdered sugar
  • When cookies are cool, frost, add sprinkles, and enjoy!

Sweet, tangy, buttery, bright spring cookies that melt in your mouth! I recommend using light-colored cookie sheets to ensure the bottom of your cookies don't brown. I've had good results from airbake cookie sheets.

2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup (2 sticks) butter, softened
3/4 cup granulated sugar
1 large egg
2 teaspoons lemon extract
1 cup powdered sugar
1 1/2 teaspoons lemon extract
milk (or water) as needed to thin to spreading consistency
lemon zest for topping

Steps:

  • Preheat the oven to 375 degrees F and line a light-colored baking sheet with parchment paper. In a medium bowl, whisk together the flour, baking powder, and salt. In a separate large bowl, cream together the butter and sugar until pale, light, and fluffy (2-3 minutes). Add the egg and lemon extract and mix until just combined. Add the flour mixture in about 4 additions, mixing until just combined after each. Mix to completely combine.
  • Roll the mixture into 1-tablespoon balls between your hands (get them really smooth), place them on prepared baking sheet about 2 inches apart, and gently flatten them with the bottom of a glass.
  • Bake the cookies for 7 and a half minutes. They won't brown at all, but they're ready! Let them cool on the baking sheet for 5 minutes before transferring them to a cooling rack to cool completely.
  • In a small bowl, whisk together the powdered sugar and lemon extract. Add milk or water in tablespoon measures, whisking after each addition, until the icing reaches spreading (not pouring) consistency. Use the back of a spoon to spread the icing onto each cooled cookie, zesting a lemon over them after you ice each batch of 5 or so (so the icing won't set before the zest hits it).
  • Let the cookies rest for 10 minutes so the icing sets completely and serve. Store leftovers in an airtight container in the fridge, but serve at room temperature.

2 and 1/2 cup (340g) all-purpose flour
1/2 cup powdered sugar to coat the cookies

Steps:

  • Preheat oven to 350F (180C). Line a baking sheet with parchment.
  • In a large bowl, mix butter, powdered sugar, lemon zest and cinnamon until creamy.
  • Add in cornstarch and mix them well.
  • Add in flour and mix with a spatula until everything is combined.
  • Use a teaspoon to scoop dough and make tiny balls. Place them on the baking sheet.
  • Bake for 12-15 minutes or until their bottom is slightly golden. Remove from the oven and let them cool in the baking sheet.
  • Roll them into powdered sugar or sprinkles.

⅓ cup confectioners' sugar for decoration

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Cream butter with an electric mixer until light. Gradually add the fructose and beat thoroughly. Beat in the almond extract, vanilla extract and water.
  • Combine the flour, salt and pecans. Add to the creamed mixture, a little at a time, beating well after each addition.
