Homemade cranberry relish.

1 ½ pounds fresh cranberries
2 pears - peeled, cored, and quartered
2 Granny Smith apples - peeled, cored, and quartered
2 oranges - zested, peeled, and segmented
2 lemons - zested, peeled, and segmented
¾ cup white sugar
¼ cup brandy
¼ cup cranberry juice

Steps:

  • Combine cranberries, pears, apples, oranges, and lemons in a food processor; grind to a fine consistency. Transfer to a large glass bowl. Stir sugar, orange zest, and lemon zest into the fruit mixture. Add brandy and cranberry juice; stir.
  • Cover bowl with plastic wrap and refrigerate for at least 24 hours.

One 12-ounce bag fresh cranberries, frozen for a few hours before processing
1 navel orange, skin on, cut into chunks, seeds and excess white pith removed
3/4 cup granulated sugar
1/3 cup honey

Steps:

  • Place the frozen cranberries, orange, granulated sugar and honey in a food processor. Process until the mixture is evenly chopped. Store in the refrigerator until needed. Serve as a condiment for roasted turkey.

1 (20 ounce) can crushed pineapple, drained
2 Granny Smith apples - peeled, cored and cut into wedges
2 (11 ounce) cans mandarin oranges, drained
1 teaspoon granulated sugar

Steps:

  • In a food processor, combine cranberries, pineapple, apples and oranges. Blend into small chunks, add sugar if needed. Chill and serve.

3 (12 ounce) bags cranberries, washed
2 large oranges, peeled
2 large apples
3/4 orange, rind of
3 cups sugar

Steps:

  • Grind cranberries, apples, oranges, and orange peel in a food processor. (I've used a blender in a pinch, but be careful not to over process.).
  • Mix in sugar and let stand. The color will darken as it sits. Refrigerate.

I made cranberry sauce for the first time this Thanksgiving and it turned out great. I got the idea from venus2 and elaborated on it. All 14 members of my family loved it and I hope you do too :) (Prep time includes sitting time)

Yield 3-4 cups of cranberry sauce, 6-8 serving(s)

Number Of Ingredients 7

3 cups cranberries
3/4 cup sugar
2 teaspoons orange zest
1 cinnamon stick
1 1/2 cups pinot noir wine (or any type of red wine)
1 tablespoon cornstarch
1/2 cup water

Steps:

  • Bring the berries, sugar, and wine up to a boil.
  • Add the orange zest and cinnamon stick and keep it boiling for another minute or so.
  • Mix the cornstarch and water and add it to the cranberries and let it boil for another minute while stirring.
  • Take the cranberries out of the pan and place in a tupperware and let sit for a good 3 or 4 hours for the flavors to meld together.
  • When ready to serve, heat it up in a pan again and serve warm and enjoy!
