A tangy sweet and sour treat, the Meyer lemons make it sweeter than a traditional lemon pie, but still keep that citrus kick.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Place sugar, eggs, and lemon juice in a blender; blend until smooth, about 3 minutes.
- Pour melted butter into the blender and blend for 30 seconds more.
- Transfer lemon filling to the pastry shell.
- Bake in the preheated oven until filling is just set, 30 to 35 minutes. Allow pie to rest until completely set before serving, about 15 minutes more.

IMPOSSIBLE LEMON BLENDER PIE
This is one of the easiest and most delicious quick lemon pies you'll ever eat. I first had it at my friend's, Patty, in Tucson.

Steps:
- Cut ends off lemon; slice into 3-4 sections and place in blender.
- Pulverize.
- Then add sugar and eggs.
- Blend well.
- Pour into 8-9 inch frozen pie crust and bake at 350F for 35-40 minutes.
- Top with whipped cream or topping of your choice and garnish with fresh raspberries or other berries.

This pie is so simple. One batch of dough (mixed in the blender) will create a pie with a crust on the bottom, custard in the middle, and brown top.

- Pour into greased 9- or 10-inc pie pan.
- Bake at 350 degrees for 40 minutes or until knife comes out clean.
IMPOSSIBLE BLENDER PIE
This is my grandma's favorite pie, she requests that I make it often. It is a custard type pie. During baking, the flour sinks to the bottom to make a crust! What could be easier? :)
