MELONRITA
From the Reata restaurant, Fort Worth, TX. This drink was developed to complement the summertime rooftop crawfish boils. The secret of getting the most flavor from your fruit is in the muddling, which means you firmly crush the watermelon with a long spoon.

Steps:
- Combine all ingredients in a drink shaker.
- Muddle the watermelon in the bottom of the shaker, and shake gently twice.
- Rim a glass with the sugar and add the ice cubes.
- Pour over ice and garnish with the watermelon wedge.
- Reata Sweet & Sour Mix.
- Makes 4 cups.
- 3 cups sugar.
- 4 cups water.
- 1 cinnamon stick.
- 1 1/2 cups lime juice, preferablly fresh squeezed.
- In a large saucepan, combine the sugar, water and cinnamon, stirring until the sugar is dissolved.
- Bring to a boil over medium-high heat, then lower heat, add the lime juice and simmer 5 minutes.
- Remove from the heat and let cool.
- When cool, remove the cinnamon stick.
- Store in an airtight container and refrigerate.

- Moisten rim of 1 cocktail glass with lime wedge. If desired, sprinkle salt on a plate; dip rim in salt. Fill glass with ice. In an empty cocktail shaker, combine tequila, melon liqueur, and lime juice. Fill with ice; cover and shake until frost forms on the outside of the shaker, 15-20 seconds. Strain into prepared glass. Garnish with lime wedge and, if desired, melon balls.

THE PERFECT MARGARITA
Mastering the margarita requires a certain amount of practice, but once you dial-in your perfect ratio, it's a really easy cocktail to replicate. The classic recipe is 3 parts tequila, 2 parts triple sec, and 1 part freshly squeezed lime juice, and you should probably start off pretty close to that, but my personal favorite proportions are 4-3-2.

- Moisten the rim of a glass with a lime wedge. Sprinkle salt onto a plate. Lightly dip the moistened rim into the salt. Place a large ice cube in the glass and freeze the prepared glass until ready to serve.
- Fill a cocktail shaker with fresh ice. Add tequila, triple sec, and lime juice. Cover and shake vigorously until outside of the shaker has frosted. Strain into the prepared glass and garnish with a slice of lime.

WATERMELON MARGARITA
Mixing cocktails may seem intimidating, but it's actually quite intuitive once you understand how to balance the alcohol, sweetness and acidity. In "3-Ingredient Cocktails" (Ten Speed Press, 2017), Robert Simonson presents the formula for a perfect margarita: 1½ ounces tequila, 1 ounce Cointreau and 3/4 ounce lime juice, shaken and served. Even easier to memorize, this version uses 6 ounces fresh watermelon juice - a sweet but subtle nod to summer - and 2 ounces each tequila, Cointreau and lime juice. Be sure to taste and add more watermelon juice if your margarita is too boozy, and extra lime juice or even a pinch of salt if it's too sweet.

- Prepare the salted rim, if using: In a small shallow bowl or plate, combine the sea salt and Tajín. Set aside.
- In a shaker filled with ice, combine the watermelon juice, tequila, Cointreau (if using), lime juice and jalapeño (if using). Shake to combine. (Note: The watermelon flavor shines brighter without the Cointreau, but the liqueur takes the drink into more traditional margarita territory. If you'd like to compare, first try the mixture without, the liqueur, then add 1 ounce of it per serving.)
- Using one of the squeezed lime halves, run it along the rim of two rocks glasses, then dip the rims into the salt mixture. Fill the glasses with ice, then strain the margaritas into the glasses and enjoy immediately.
