This easy and refreshing starter featuring cantaloupe and cured ham (Parma ham for instance) can also be served as an appetizer: just cut the cantaloupe into bite-size pieces, wrap them with ham and spear them on skewers for a colorful snack! Use superior quality Italian ham for best results.

1 cantaloupe - seeded and cut into 8 wedges
8 thin slices prosciutto

Steps:

  • Remove the flesh from the rind of the cantaloupe; wrap each piece of cantaloupe with a slice of the ham. Serve cold.

1/2 Galia melon (or your favorite melon)
Juice of 1/2 lime
1 teaspoon freshly ground pepper
1/4 pound prosciutto or Serrano ham, thinly sliced

Steps:

  • Cut off the rind of the melon, then slice the melon into long wedges and put on a platter. Squeeze the lime juice over the melon and sprinkle with the pepper. Fold up the ham and arrange alongside the melon.

1 ripe honeydew melon, about 3 pounds, inner flesh cut into 1-inch pieces (about 5 cups)
1/2 cup chopped fresh mint
3 tablespoons melon liqueur (recommended: Midori)
2 tablespoons fresh lime juice, or more if desired
2 tablespoons super fine sugar
1 cup ripe cantaloupe balls
4 grissini (thin breadsticks)
8 thin slices prosciutto, Serrano, or other mild ham
2 tablespoons creme fraiche, garnish
Mint, for garnishing

Steps:

  • In 2 batches in a food processor, puree the melon, mint, 2 1/2 tablespoons of the liqueur, lime juice and sugar. Taste for acidity, you may add more lime juice here if desired. Place in a pitcher or bowl and refrigerate until well chilled.
  • In a bowl, toss the cantaloupe balls with the remaining 1/2 tablespoon liqueur and let macerate in the refrigerator.
  • Cut each breadstick in half crosswise and wrap each piece with a slice of ham.
  • To serve, ladle the soup into 4 shallow bowls. Swirl 1 1/2 teaspoons of the creme fraiche into the center of each serving and arrange a portion of cantaloupe decoratively in each bowl. Arrange 2 breadsticks on the rim of each bowl, and serve. Garnish with fresh mint springs.

  • To prepare the melon, cut about 1/2-inch off of the top and bottom, and then moving your knife downwards into the fruit, just inside the rind, cut off the skin. You'll curve your knife slightly to follow the shape of the melon. Then cut the melon in half and use a spoon to remove the seeds. Place the melon halves, round side up, and then cut it into super thin slices, lengthwise. Then, cut those thin slices into very thin strips.
  • Cut the prosciutto into very thin strips and add them to the melon, separating the slices with your fingers as you do so (they easily stick together).
  • Add the pine nuts to a small sauté pan and place it over medium-low heat. Moving the pan around often, heat just until they're golden, about 3 minutes. (Be careful, as they can go from just right to too dark in seconds.) Set aside to cool.
