1/2 medium honeydew melon
1 cup red seedless grapes, halved
8 boston lettuce leaves
1 cup low-fat vanilla yogurt
1 tablespoon honey
1 tablespoon frozen orange juice concentrate, thawed and undiluted
ground nutmeg (optional)

Steps:

  • Peel melons; discard seeds and membranes.
  • Cut each melon half lengthwise into 8 slices.
  • Divide melon and grapes evenly among 4 lettuce lined salad plates.
  • Combine yogurt, honey and juice concentrate; stir well.
  • Drizzle 1/4 cup yogurt mixture over each salad; sprinkle with nutmeg, if desired.

Tricolor Melon Salad with Yogurt Honey Dressing image

1 1/2 cups plain yogurt, drained overnight in a sieve
1/4 cup honey
1 tablespoon passionfruit liqueur (optional)
2 tablespoons finely chopped fresh mint
1/2 small ripe honeydew melon, halved and seeded
1/2 small ripe crenshaw or cantaloupe melon, halved and seeded
1/4 small watermelon (about 1 pound), seeds removed
Sprigs of fresh mint, for garnish

Steps:

  • In a small bowl, whisk together the yogurt, honey, liqueur, if using, and the mint. Set aside.
  • Scoop out the melon flesh and cut it into 1inch cubes. Combine them in a bowl or on a platter and toss together very gently until the colors are evenly distributed.
  • Drizzle the dressing back and forth across the melon in a thin stream. Garnish with sprigs of mint and serve.

1/2 teaspoon vanilla
1 cantaloupe
1 honeydew melon
2 (32 ounce) cups red seedless grapes

Steps:

  • Combine lime zest, lime juice, orange juice concentrate, and vanilla in small bowl; set aside.
  • Cut melon in half.
  • Slice each half into 1-inch wedges; trim away rind.
  • Cut melon into 3/4-inch pieces.
  • Combine fruit and dressing.

1/2 teaspoon ground mustard
1/2 teaspoon paprika
1/8 teaspoon salt
1/8 teaspoon celery seed
1/2 cup vegetable oil
Boston lettuce
6 oranges, peeled and sliced

Steps:

  • In a blender or food processor, combine the first nine ingredients; blend until slightly thickened. Pour into a jar or airtight container; chill. Line a serving platter or individual salad plates with lettuce. Arrange orange slices on top. Shake dressing; drizzle over oranges.

Steps:
