MANGO AND MELON SALSA
A delicious salsa that is very good with grilled fish (tuna, swordfish). It is also very good with Corn Chips or Nacho Chips.

Steps:
- I also like to add a couple of sprinkles of Cumin.
- It adds a really nice flavour.
- Honey is also optional, if the lime is really tart, you may want to add a small teaspoon of honey.
- Cube the melons, mango, and red pepper.
- Quarter the cherry tomatoes.
- Slice the red onion into very thin rounds.
- Combine in a bowl.
- Sprinkle with 1/2 tsp.
- garlic salt, or mix in pulversized garlic.
- Add the lime juice.
- Chop and add the cilantro leaves.
- Sprinkle with black pepper, cayenne, salt, and cumin.
- Mix together.
- (At this point the smell is heavenly).
- Garnish with a few thin slices of star fruit.
- (For me this is purely an aesthetic thing).
- If it is too sour, add a bit of sugar or honey.

WATERMELON - MANGO SALSA

- 1. Dice watermelon and mango into small cubes.
- 2. Blend all other ingredients into fruit cubes
- 3. Chill well, serve.

WATERMELON SALSA
Steps:
- Stir together the lime zest, lime juice, sugar and 3/4 teaspoon pepper in a bowl. Add the watermelon, cucumber, mango, jalapeno, onion and basil and toss gently. Chill the salsa until ready to serve.
- Add the garlic salt just before serving. Serve with chips.

- Assemble the salsa and set aside to let the flavors meld and mingle while you prepare the scallops.
- Tap the top and bottom of each scallop gently on the parmesan cheese, shake excess off. Heat 2 tablespoons of olive oil in a large, non-stick skillet over medium-high heat. Once the oil is hot, add the scallops. Make sure the scallops do not touch each other. Fry 2 minutes on each side, timing depends on size of your scallops. They should have a golden brown crust. If you take a peek in the interior, they should be rare-ish. They'll finish cooking on their own from residual heat after you remove them from the pan. Overcooked scallops are a sin!
