MELLOW GARLIC & BASIL VINAIGRETTE

Steps:
- Put the garlic and oil in a small saucepan and heat to medium low, so the cloves are just barely sizzling but not browning. Simmer for 10 minutes, remove from the heat, and add 10 of the basil leaves. Let sit for about another 20 minutes and then remove the garlic and basil leaves.
- In a small bowl, whisk the vinegar, lemon zest, mustard, salt, and pepper. Slowly whisk in the flavored oil until the dressing is creamy and blended. Roll the remaining basil leaves into a tight roll and slice across to make thin shreds. Stir into the dressing. Taste and adjust the seasonings.

SIMPLE VINAIGRETTE

- Set a medium bowl on a kitchen towel shaped like an "O" (this helps keep the bowl steady while whisking). Whisk together the vinegar, mustard, garlic, 1 1/4 teaspoons salt and a few grinds of pepper in the bowl. Slowly drizzle in the oil while whisking continuously until the mixture is combined and blended well. Use right away, or refrigerate in a sealed container for up to 3 days.
MAPLE VINAIGRETTE
This is from IGA's list of recipes. Since I'm always on the lookout for new salad dressings this piqued my interest. This goes well with leafy greens such as curly green and red lettuce. But I'm sure it goes well with other salads as well.

- Best made in a food processor: combine all ingredients in food processor except oil; let oil drip slowly down through the feed tube while machine is running; let process until oil is combined.
- Taste and add more salt and pepper if desired.
- You can also whisk all ingredients together in a mixing bowl.
- Makes enough to toss 1 or 2 salads, depending on how much dressing you put on a salad; keep refrigerated if not using right away.
