My sister-in-law from New Mexico made this for us over the holidays. Very delicious and satisfying - especially with home-made tortillas!

1 tablespoon vegetable oil
1 pound ground beef
5 medium potatoes - peeled and cubed
1 (14.5 ounce) can stewed tomatoes
1 cup chopped green chile peppers
½ cup chopped onion
2 cups water
salt and pepper to taste

Steps:

  • Heat oil in a large stockpot over medium-high heat. Crumble beef into pot and cook, stirring frequently, until well-browned. Drain excess fat, and return to the stove.
  • Add potatoes, stewed tomatoes, green chilies, onion, and water to the pot with the beef, and stir to combine. Bring to a boil, reduce heat, and simmer 1 hour to blend flavors. Season to taste with salt and pepper, and serve.

2 lbs pork, cubed
1/4 cup flour
2 tablespoons vegetable oil
2 onions, chopped
3 cups green chili peppers, chopped
2 (14 1/2 ounce) cans tomatoes
2 cups water
1/2 teaspoon garlic powder
2 teaspoons salt

Steps:

  • Dredge pork in flour, shaking off excess.
  • In a large soup pot, heat oil and brown pork. Remove pork and set aside.
  • Saute onions in same pot and then return pork to pan, and stir in remainder of ingredients. Simmer for 1 hour or until meat is tender and mixture has thickened.

2 (14-ounce) cans Great Northern beans, drained and rinsed
2 (4-ounce) cans diced mild green chiles
1 cup salsa verde
1½ cups vegetable broth
1 lb. baby red potatoes, cut into ½ inch cubes
1 medium yellow onion, diced (about 2 cups)
4 garlic cloves, minced
1 teaspoon ground cumin
1 teaspoon dried oregano
Juice of 1/2 large lime (about 2 tablespoons)
Fine salt and black pepper to taste
Optional for serving: Thinly sliced green onions, fresh cilantro, jalapeño slices, diced or sliced avocado, sour cream (omit for vegan), shredded white cheddar cheese (omit for vegan), and/or lime wedges

Steps:

  • To a 6-quart slow cooker, add the beans, green chiles, salsa verde, broth, potatoes, onion, garlic, cumin, and oregano. Stir all the ingredients to combine.
  • Place the lid on the slow cooker and cook for 8 hours on low or 4-5 hours on high or until the potatoes are tender.
  • Stir in the lime juice. If you prefer a thinner consistency to your stew, stir in some additional broth.
  • Serve with your favorite toppings.

  • Combine the pork, flour, pepper and garlic powder in a gallon size Ziploc bag. Shake to coat thoroughly and then set aside.
  • In a large pot over medium heat, warm the oil. Add the fresh garlic and onion and sauté until translucent, approximately 2-3 minutes.
  • Add the dusted pork and cook until browned, approximately 5 minutes. Add the chiles, enchilada sauce, stock and salt and bring to a boil. Cover and simmer on low for 45 minutes.
  • Add the potatoes and raise heat to boil. Reduce to a simmer and cook until the potatoes are tender, approximately 15 minutes. Enjoy!
