Quick and simple baked feta recipe has hot and creamy feta cheese surrounded by marinara tomato sauce for fantastic, yet easy appetizer dip.

8 ounce block feta, (brine drained)
1 ½ cups marinara
½ teaspoon (optional) crushed red pepper
(optional) fresh basil
crostini or sliced baguette
crackers

Steps:

  • Preheat oven to 400°F.
  • Pour marinara into a small baking dish. Place feta on top and sprinkle on crushed red pepper, if using. Bake for 20-25 minutes, or until sauce is bubbly and cheese is hot.
  • Sprinkle fresh basil on top and serve with crostini, sliced baguette, or crackers.

This Baked Feta Cheese Dip is the perfect appetizer for any party!

1 cup crumbled feta cheese
3 cloves of garlic (, minced)
1/4 cup of your favorite tomato sauce ((I use my homemade sauce))
1/2 cup part-skim mozzarella cheese (, shredded)
1/2 cup mild cheddar cheese (, shredded)

Steps:

  • Preheat oven at 400.
  • In a small oven-safe baking dish, or a clay pot, layer the crumbled cheese, covering the entire bottom of the dish.
  • Sprinkle the minced garlic on top of the feta cheese.
  • Spoon the tomato sauce, covering the entire cheese and garlic mixture
  • Mix together the mozzarella cheese and the cheddar cheese; layer on top of the tomato sauce.
  • Bake it in the oven for 15 minutes, or until the cheese is melted.
  • Serve it warm with a side of flatbread or tortilla chips.

½ cup olive oil
½ cup plain yogurt
3 tablespoons fresh lemon juice
1 tablespoon paprika
1 small garlic clove, minced
1 teaspoon freshly ground black pepper
¼ teaspoon cayenne pepper, or to taste
1 pinch white sugar
1 pound feta cheese, cut into small cubes

Steps:

  • Combine olive oil, yogurt, lemon juice, paprika, garlic, black pepper, cayenne pepper, and sugar in a food processor; pulse mixture until smooth. Add a couple feta cubes at a time, processing between batches until mixture until thick and smooth.
  • Transfer dip to a bowl, cover with plastic wrap, and refrigerate at least 1 hour.

Sheet-Pan Baked Feta With Broccolini, Tomatoes and Lemon image

When baked, feta gains an almost creamy texture, similar to goat cheese but with feta's characteristic tang. In this easy vegetarian sheet-pan dinner, broccolini (or broccoli), grape tomatoes and lemon slices roast alongside the feta until the broccolini crisp, the tomatoes burst and the lemon rinds soften. (Remember, broccolini has a tender, delicious stalk so only the bottom 1/2-inch needs to be trimmed.) Serve this dish over a pile of orzo for a complete meal. If you like, cut the broccolini, feta and lemon into bite-size pieces and toss with the orzo.

1 bunch broccolini, ends trimmed, thick stalks split lengthwise, or broccoli, stalks trimmed and cut into bite-size pieces
1 pint grape tomatoes, halved (about 2 cups)
1 small red onion, peeled, quartered and cut into 2-inch wedges
1 lemon, 1/2 cut into thin rounds and the remaining 1/2 left intact, for serving
3 tablespoons olive oil, plus more for serving
1 teaspoon ground cumin
1/2 teaspoon red-pepper flakes
Kosher salt and black pepper
2 (6- to 8-ounce) blocks feta, cut into 1-inch slices
Cooked orzo or farro, for serving
1/2 cup fresh basil or cilantro leaves and fine stems, roughly chopped (optional)

Steps:

  • Heat the oven to 400 degrees with a rack set in the lower third. On a sheet pan, combine the broccolini, tomatoes, onion and lemon slices with the olive oil and toss. Add cumin and red-pepper flakes, season with salt and pepper, and toss again until evenly coated. Nestle the feta slices into the vegetables. (It's OK if they break apart a little.)
  • Roast 15 to 20 minutes, stirring halfway through but leaving the feta in place, until the broccolini is charred at the tips, the stems are easily pierced with a fork and the tomato skins start to blister and break down.
  • Serve over orzo or farro. Drizzle with olive oil and serve with the remaining lemon half for squeezing. Top with fresh herbs, if using.

1 cup arrabbiata sauce
3 cloves garlic, minced
1/2 teaspoon crushed red pepper flakes
1 tablespoon fresh oregano, chopped
1 tablespoon fresh basil, chopped
1 tablespoon fresh parsley, chopped

Steps:

  • Preheat oven to 350 degrees.
  • Spray a small baking dish with non stick spray. Place feta on baking dish. Combine sauce and garlic. Pour around and over the feta cheese. Sprinkle cheese with crushed red pepper flakes. Bake for 20 minutes.
  • Remove feta from oven and top with fresh herbs. Serve immediately.

This is a staple in my apartment. I wash and reuse the dish I make it with more than any other dish in my apartment, I think. I picked up a liking for feta while in Greece during the summer of 2006. Don't be too heavy-handed with the onion powder, though. I like onion, but not so that it overpowers the feta. Great with a hearty bread and makes a good sandwich spread as well.
