My husband loves omelettes and nothing makes him happier. When cooking an omelette, it's important that you keep your temperature on the low side, as you don't want your omelette to get brown.

3 eggs
1 tablespoon milk, or as needed
salt and freshly ground white pepper to taste
2 tablespoons butter
¼ cup shredded Emmentaler cheese

Steps:

  • Beat eggs in a bowl with a whisk. Add milk and season with salt and white pepper. Whisk for a few minutes until egg mixture is foamy; beating in air makes the omelette fluffy.
  • Melt butter in a small, nonstick skillet over medium-low heat. Pour in egg mixture and twirl skillet so bottom is evenly covered with egg. Cook for 1 minute until egg starts to set. Lift edges with a spatula and tilt the skillet so uncooked egg mixture can run towards the bottom of the skillet to set. Repeat until no visible liquid egg remains.
  • Carefully flip omelette and cook for another 30 seconds to 1 minute. Sprinkle Emmentaler cheese in one line in the middle of the omelette and fold omelette in half. Cook for 20 seconds, then slide omelette onto plate.

3 tablespoons cottage cheese with chives
2 tablespoons grated sharp cheddar cheese
1 tablespoon grated parmesan cheese
3 large eggs
1 tablespoon water
salt, to taste
pepper, to taste
1 teaspoon butter or 1 teaspoon margarine

Steps:

  • In a small bowl, mix together the cheeses; set aside.
  • In a bowl, whisk the eggs, water, salt, and pepper.
  • Heat an 8-inch nonstick skillet (or omelet pan) over medium heat.
  • Add butter to skillet; swirl pan to coat the bottom of pan.
  • When butter foams, pour in egg mixture all at once.
  • Let set until edges start to cook; with a spatula, gently lift edges of mixture and tilt skillet to allow uncooked egg mixture to flow underneath.
  • Continue to do this until the top is almost dry.
  • Spoon filling over one half of the omelet.
  • Fold the other side over to cover.
  • Let stand a few seconds to the cheese can melt.
  • Transfer to a warmed plate and serve immediately.

1/4 to 1/2 cup mozzarella cheese, shredded
1/4 cup Cheddar cheese
1/2 tomato, diced
Parmesan cheese

Steps:

  • Beat eggs and milk in a bowl with a wire whisk. Add bacon, sausage, ham, onion, pepper, salt, and green pepper.Heat an 8-inch nonstick skillet over medium-high heat. When warm, spray with cooking spray. Pour egg mixture into the warm skillet and cover. Cook 6 minutes or until egg mixture is set but the top is still moist. Sprinkle shredded mozzarella and cheddar cheese evenly onto half of omelet. Using a spatula, fold egg mixture in half over the cheese and cover again. Cook for an additional 5 minutes. Turn out onto plate and top with fresh tomatoes and parmesan cheese.
