Everyone (well, almost!) loves cheese sauce over veggies, or for dipping. But of course there are all the pitfalls of eating cow dairy products. Here is a raw, live, vegan alternative that really stands up for applause! Serve over gently chopped broccoli (food processor may over-chop and thus juice your broccoli!), chopped asparagus, and any other food you would normally top with a cheese sauce. - Place cashews in a large bowl. Pour enough water over cashews to cover.
- Cover the bowl and soak cashews overnight, at least 12 hours.
- Drain the water from cashews; place cashews in a blender. For a tangier cheddar flavor add 1/4 cup freshly squeezed lemon juice to cashews. Pour enough water to come to 1/4-inch below of the top of the cashews. Blend until partially smooth.
- Place nutritional yeast, onion, sunflower seed oil, salt, garlic powder, tamari sauce, turmeric, and cayenne pepper in blender. Blend until smooth.

- Combine the cashews with enough hot water to cover in a heatproof bowl. Allow to stand for about an hour.
- Heat the oil in a small skillet. Add the bell pepper and sauté over medium heat until it starts to brown lightly here and there, stirring frequently.
- Combine the soaked cashews, bell pepper, and all the remaining ingredients in a food processor. Process until smooth. Stop the machine and scrape down the sides with a rubber spatula from time to time. It takes a good few minutes to make this smooth.
- To serve: If using as a dip or spread, transfer to an attractive crock or shallow bowl and surround with fresh bread, grilled bread (bruschetta), crackers, and/or raw vegetables. If using as a sauce, toss with hot noodles or dollop onto baked potatoes or hot cooked grains. It's also a great sauce for steamed broccoli and cauliflower.

- Soak the cashews. You can either do a "quick soak" or soak the cashews for several hours or overnight. To quick soak, boil water on the stovetop, cover the cashews with the boiling water and set aside for 10-15 minutes. Drain (but Keep 1.5 C of warm water to the side to add back into blender)
- In a blender (high powered preferred, a food processor will also work), add the cashews, lemon juice, 1.5 cups of the water, nutritional yeast, smoked paprika, garlic powder, onion powder, chili powder, and the salt.
- If you want it warmer - add the cheese sauce from the blender back into sauce pan. Using a whisk, warm over medium heat, whisking constantly, until it begins to bubble and thicken. Add water slowly as needed, depending on how thick or thin you want the sauce to be.
- Add salt to taste. If the cheese sauce sits for a while, or you refrigerate the leftovers, it will thicken. Simply warm it again on the stove, adding water as needed to thin. Sauce will last for 5 days in the refrigerator.

- Bake the sweet potato for an hour or it’s easily pierced with a fork. When it’s cool enough to handle, peel it and measure out one cup of the potato. You can also peel it and cut it into cubes and microwave until soft to the touch, approximately 15 minutes.
- Put the cashews, 1/2 cup sweet potato, 1 tsp dry yellow mustard, 3 tsp apple cider vinegar, 2 tbsp nutritional yeast, 1 ½ tsp salt, ½ tsp onion powder, 2 tsp miso paste, and ½ to ¾ cups (start with a ½ and add more until you get the desired consistency you’re looking for) milk in the blender and blend on a high speed until the sauce is thick and creamy. You shouldn’t be able to see or feel any pieces of the cashews. If you do, scrape the sides and keep blending until it’s smooth and creamy.
- Note: I use the “whole foods > soup” setting on my Blendtec blender to get the desired consistency.

- In a mixing bowl or liquid measuring cup, soak cashews and carrots in very hot water for 30 minutes (uncovered). Then drain and add to a high-speed blender with 1 cup water, tapioca starch, nutritional yeast, apple cider vinegar, sea salt, garlic powder, and dry mustard (turmeric is optional for deeper color). - Transfer to a medium saucepan and heat over medium heat. Cook, while whisking, for 1-2 minutes or until thickened to a spreadable consistency (see photo). It should resemble the texture of soft cooked polenta.
