Mediterranean Fish Cakes image

Mixed seafood patties blended with fresh herbs and spices, lightly pan-fried or grilled and served with lemon wedges and salad. Perfect, healthy and tasty dinner--enjoy with a nice Pinot Grigio! Substitute salmon, crab, or sole to create a variety of delicious alternatives.

4 tablespoons olive oil, divided
6 ounces fresh bay scallops
½ medium onion
4 cloves garlic
5 sun-dried tomatoes, chopped
1 egg
1 bunch fresh parsley
6 basil leaves
2 fresh hot chile peppers, seeded
1 tablespoon Italian seasoning
½ cup bread crumbs
1 (9 ounce) can tuna, drained
1 (6.5 ounce) can shrimp, drained
4 tablespoons all-purpose flour

Steps:

  • Heat 1 tablespoon olive oil in a skillet over medium-high heat. Stir in scallops; cook, turning until white on all sides. Drain, and set scallops aside to cool.
  • Place into a food processor the onion, garlic, sun-dried tomatoes, egg, and 1 tablespoon olive oil. Then add parsley, basil leaves, chiles, and Italian seasoning. Pulse on medium setting until finely chopped. Place scallops, tuna, and shrimp into food processor, and pulse on low. Gradually pour in breadcrumbs, continuing to pulse until the mixture becomes firm and slightly sticky but is not pureed to a paste (the seafood should maintain some texture).
  • Form the mixture into palm-size patties, about 1 inch thick. Place on a plate, cover, and refrigerate for 1 hour.
  • Heat 2 tablespoons olive oil in a large skillet over medium heat. Dredge patties lightly in flour; shake off excess flour, and place patties in skillet. Cook until golden brown on both sides.

3 spring onions
½ a bunch of fresh flat-leaf parsley
1 large free-range egg
750 g cooked crabmeat, from sustainable sources
300 g mashed potatoes
1 teaspoon ground white pepper
1 teaspoon cayenne pepper
plain flour, for dusting
olive oil
watercress
tartare sauce

Steps:

  • Trim and finely chop the spring onions, and pick and finely chop the parsley. Beat the egg.
  • Combine the crabmeat, potatoes, spring onion, parsley, white pepper, cayenne and egg in a bowl with a little sea salt.
  • Refrigerate for 30 minutes, then shape into 6cm cakes.
  • Dust with flour and shallow-fry in oil over a medium heat for about 5 minutes each side or until golden-brown.
  • Serve with pinches of watercress and a dollop of tartare sauce.

1 lb backfin crab meat, picked over
1/2 cup black olives, sliced
1 (7 ounce) jar roasted red peppers
6 cups mixed greens (chef's choice)
1/2 cup goat cheese or 1/2 cup feta cheese, crumbled and divided
2 fluid ounces freshly squeezed lemon juice
1 1/2 teaspoons Dijon mustard
1/4 cup shallots or 1/4 cup green onion, chopped
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon oregano
2/3 cup extra virgin olive oil
1 (6 ounce) jar artichoke hearts, drained and quartered

Steps:

  • Whisk together lemon juice, mustard, shallots or green onions, salt, pepper, and oregano in a large bowl.
  • Gradually whisk in oil.
  • Remove and reserve 1/3 cup dressing.
  • To the remaining dressing in large bowl, add crabmeat, artichokes, olives, and roasted peppers.
  • Place the greens and half of the goat cheese or feta cheese in a salad bowl.
  • Drizzle with reserved 1/3 cup dressing and mix lightly until leaves are evenly coated.

1 cup fresh Italian Parsley
3 Brown Eggs
1 cups bread crumbs
1/2 cup Graham cracker crumbs
1/2 tsp ground corriander
1/2 tsp salt & Pepper
1/2 tsp ground mustard
1/2 tsp chopped garlic
1/2 tsp basil chopped fine
1 white onion diced fine
1 red sweet pepper diced fine
6 grape leaves
1 cup cooked rice
1 Tsp lemon juice

Steps:

  • Preparations: pre heat oven/ broiler 350 degrees Combine crab, eggs, spices, crumbs, lemon, onion peppers and rice. roll mixture into small cigar rolls and broil them for 7 minutes...remove from oven and wrap them in the grape leaves tight...re-place in oven for 10 more minutes and then serve.
