Boneless breasts of chicken stuffed with a Mediterranean cheese stuffing.

4 skinless, boneless chicken breast halves - pounded thin
4 ounces cream cheese, softened
⅓ cup feta cheese
1 teaspoon garlic powder
2 teaspoons dried dill weed
2 tablespoons melted butter
salt and pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • TO MAKE FILLING: In a large bowl beat the cream cheese until smooth. Add the feta cheese, dill weed and garlic powder. Beat until smooth and creamy.
  • Put a dollop of 1/4 of the filling on each breast, then roll and tie the breasts with cooking string to seal. Brush each breast with melted butter/margarine and sprinkle with salt and pepper to taste. Bake uncovered in the preheated oven for 20 minutes or until the juices run clear.

This is something I thought would be nice when I bought a package of boneless chicken thighs and realized I could roll them open and stuff them with my favorite ingredients. It's easy, healthy... and it impresses my wife.

6 -9 boneless skinless chicken thighs
4 -5 black olives, minced not sliced
4 -5 mushrooms, minced not sliced
1/8 cup pine nuts (optional)
1/4 cup feta cheese (preferably damp packed in water)
1/8 cup approx olive oil or 1/8 cup sesame oil
1 tablespoon curry powder
2 tablespoons oregano
1 / tbsp black pepper
1 teaspoon cayenne pepper (optional)
1 garlic clove (minced)
1 cup Baby Spinach (minced)

Steps:

  • Put oil, curry, oregano, pepper, cayenne pepper, and minced garlic into a small mixing bowl and stir with a fork.
  • Pour oil and spice mixture into glass or ceramic baking dish and coat the whole bottom of pan with oil/spice mixture.
  • Wash the chicken thighs under cold water and roll them out flat.
  • Drag both sides of each thigh through the oil/spice mixture in baking dish and lay them flat and orderly in baking dish.
  • Lightly brown the pine nuts in a non-stick frying pan for 1 minute, then mince.
  • Put minced pine nuts, minced spinach, crumbled feta cheese, minced black olives, minced mushrooms into a bowl and toss them together. This is your stuffing.
  • Place generous amount of stuffing on each flattened thigh.
  • Roll the thighs around the stuffing to enclose it.
  • Preheat oven to 375 (oven temperatures vary) and bake for 30 -40 minutes or until chicken is white throughout when sliced.
  • Serve with rice and a vegetable or salad.

16 oz mild bulk breakfast sausage
1/4 cup chopped fresh parsley
2 tbs minced onion
8 slices bacon
8 boneless skinless chicken thighs
1 tbs honey

Steps:

  • Preheat oven to 400 degrees F. Line a large baking sheet with parchment or foil.
  • In a large bowl, mix the sausage, parsley and minced onion. Divide into 8 equal portions and shape each into a log no longer than the length of the chicken where the bone was.
  • Place chicken skinned side down and open them out. Place a log in the center of each thigh where the bone was and fold the chicken around it.
  • Wrap each thigh in one strip of bacon, seam side under the chicken.
  • Place the chicken on the prepared pan and brush each thigh with the honey.
  • Bake for 35 minutes or until cooked through and the bacon is golden brown and crispy. Let the chicken rest for 10 minutes before serving.

½ cup Parmesan cheese, grated
½ tablespoon olive oil
¼ teaspoon salt
¼ teaspoon pepper
1 pound boneless, skinless chicken thighs
3 tablespoons prepared pesto

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C). Line a baking sheet with parchment paper.
  • Combine panko, Parmesan cheese, olive oil, salt, and pepper in a bowl.
  • Place chicken thighs onto the prepared baking sheet and coat each side with pesto. Press panko mixture onto chicken.
  • Bake in the preheated oven until chicken is no longer pink in the center and the juices run clear, about 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

I found this recipe in my local newspaper. It is a big hit when I am having company. I usually broil it for a few minutes to brown after cooking. I hope you enjoy it as much as my family and I do.

salt and pepper
1 pinch cumin
1 pinch cayenne pepper (optional)
1 dozen chicken thigh
1/4-1/2 cup olive oil
1 large vidalia onion, chopped
4 garlic cloves, chopped
2/3 cup sherry wine
1 (28 ounce) can crushed tomatoes
2 bay leaves
1/4 cup black olives, pitted and halved
1 tablespoon fresh basil

Steps:

  • Mix salt, pepper, cumin and cayenne and rub mixtures over the chicken thighs.
  • In large heavy skillet, heat oil over medium high heat. Saute chicken until golden brown. Remove from pan. Drain, leaving 2 tablespoons fat.
  • Reduce heat to medium. Add onion and garlic and saute about 10 minutes.
  • Turn heat to high and add sherry to the onion and garlic mixture. Cook until the liquid is reduced, about 5 minutes. Add crushed tomatoes, bay leaves, olives,basil and salt and pepper to taste. Return chicken to pan.
  • Cook,covered, about 35 to 40 minutes,until chicken begins to fall away from the bone. Serve over couscous.

  • On a large baking sheet, toss together the onion, bell pepper, garlic, potatoes, artichoke heart, tomatoes and capers with 2 tablespoons olive oil, 1 teaspoon salt, 1 teaspoon black pepper, red pepper flakes, and half of the oregano until evenly combined. Shake the pan so that everything is in a single layer.
  • Place the chicken things on top of the veggies, spacing them out evenly on the baking sheet. Drizzle the chicken with the remaining olive oil and season with the remaining salt, pepper and oregano.
  • Roast until the chicken has begun to brown on top, and the veggies have softened, about 30 minutes. Remove the pan from the oven and sprinkle with kalamata olives. Return the chicken to the oven and continue to cook for 10 minutes longer. The chicken should register 165 degrees F with a thermometer. Remove the pan from the oven let the chicken rest for about 5 to 10 minutes before serving. Garnish with fresh lemon juice, feta and parsley. Enjoy!
