PEA DIP
This is a fresh, zingy dip which is bursting with flavour and a wonderful sense of vitality. I like it with warm pitta bread or melba toast, but it would be good with just about anything. I have even used it to dress pasta, which was rather yummy. All quantities given are approximate - feel free to vary them according to taste.

- Whizz peas (lightly cooked, if you prefer), lime juice, chilli, spring onion and mint together in the food processor (or use a hand blender) until they form a pâté. The texture can be smooth or coarse, as you wish.
- Season to taste with salt and pepper, then serve very cold.

- Place the peas and 5 cups water in a medium saucepan. Bring to a boil over medium-high heat. Reduce the heat to low and cook, uncovered, for 40 minutes.
- Add the garlic to the saucepan. Continue cooking for 5 to 10 minutes longer or until the peas are very soft and falling apart. Cool slightly.
- Meanwhile, finely grate 1 and 1/2 teaspoons lemon zest from the lemon. Juice the lemon, measure 2 tablespoons of juice.
- Transfer the peas and garlic to a food processor or high speed blender. Add 1/2 cup (125 mL) water. Blend until completley smooth.
- Add the lemon zest, lemon juice, turmeric, and (optional) salt. Blend until completley smooth, adding more water as needed to achieve a thick, smooth consistency.
- Taste and adjust the seasonings to your liking. Transfer to an airtight container and refrigerate until cold (the dip will thicken as it chills).
- Serve plain or topped with any of the suggested topping ideas. Use as a dip or spread.

- Rinse the split peas under running cold water.
- Put in medium-sized pan and add the coarsely chopped onion, the garlic and plenty of cold water.
- Bring to a boil, reduce heat and simmer 45 minutes or until very tender.
- Drain, reserving some of the cooking liquid, and put in a food processor or blender.
- Add 5 tablespoons of the oil and process until smooth.
- If the mixture seems too dry, add enough of the reserved liquid to form a smooth, thick puree. (If you don't have a food processor you can mash the spilt peas with a fork in a bowl).
- Add the oregano and season to taste with salt and pepper.
- Turn the mixture into a serving bowl and sprinkle with the finely chopped onion and extra oregano, if desired.
- Drizzle over the remaining oil.
- Serve warm or cold with savory biscuits.

- Heat a tablespoon of the olive oil in a pot over medium heat. Add the onion. Sautee the onion for 5-7 minutes, or until it's clear and soft. Add the garlic and cook for 2-3 minutes, stirring frequently, or until the garlic is very fragrant.
- Add the split peas and the water to the pot. Bring the water to a boil and reduce to a simmer. Simmer the split peas for 30-35 minutes, or until they're very tender. Most of the water should be absorbed into the split peas, but the mixture should be moist--similar to a thick soup.
- Transfer the whole mixture to a food processor fitted with the S blade and add an additional tablespoon of olive oil, the lemon juice, salt, cumin, sumac, and red pepper flakes, if using. Process until the dip retains some of its texture, but is fairly smooth (you can also continue blending until it's totally smooth, if you prefer a uniform texture that's similar to hummus). Add a few splashes of water or another tablespoon of olive oil if desired, to create a thinner dip.
- Top the dip with a drizzle of olive oil and any toppings of choice. Serve the dip warm, with pita chips, crackers, or veggies. Dip will keep in an airtight container in the fridge for up to four days.

- Place the split peas in a bowl and pour tap water. Wait 2-3 minutes and use a colander to rinse them with plenty of water. Repeat until the water is crystal clear (2-3 more times). Drain and transfer to a pot.
