SHRIMP AND VEGGIE CHEAT SHEET WITH HOISIN DRESSING



Shrimp and Veggie Cheat Sheet with Hoisin Dressing image

Hoisin is a Chinese sauce made of soybeans. It has a strong flavor: it's a little sweet, a little salty, a little umami. It's kind of like a Chinese barbecue sauce!

Number Of Ingredients 19

1 pound jumbo shrimp (21/25), peeled, deveined, tails off
Kosher salt and freshly ground black pepper
3 tablespoons hoisin sauce
3 tablespoons soy sauce
1 tablespoon rice wine vinegar
1 teaspoon Dijon mustard
1 teaspoon grated fresh ginger
1 teaspoon sesame oil
1 large clove garlic, grated
1/4 cup vegetable oil
12 ounces baby bok choy (3 to 5 heads, depending on the size), halved lengthwise
1 red bell pepper, cut into 1/2-inch strips
4 cups cooked brown rice, or any grain you like, such as quinoa
1 tablespoon sesame seeds
4 scallions, thinly sliced
1/4 cup chopped peanuts
1 cup crunchy chow mein noodles
1/4 cup fresh cilantro, chopped
Sriracha, if desired

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
  • Sprinkle the shrimp with 1/2 teaspoon each of salt and pepper. Set aside.
  • Whisk the hoisin, soy, vinegar, Dijon, ginger, sesame oil and garlic together in a large bowl. Whisk in the vegetable oil. Add the bok choy to the bowl, then toss, then transfer them to one side of the baking sheet. Add the red pepper to the bowl, then toss in the remaining marinade, and transfer them to the center of the baking sheet. Toss the shrimp in the remaining marinade and arrange it on the last side of the baking sheet. Pour any remaining marinade over the vegetables and shrimp. Bake until the shrimp are pink and opaque and the vegetables are starting to char, 15 to 20 minutes. Remove from the oven and set aside. (The bok choy can be chopped into smaller pieces if desired.)
  • Divide the rice among 4 bowls. Add a few shrimp and the vegetables to each bowl. Top with the sesame seeds, scallions, peanuts, crunchy noodles and cilantro. Drizzle with the sriracha, if using. Serve warm!

Mediterranean shrimp

Cooking an entire meal on a sheet pan is an easy, delicious way to get dinner on the table. Katie adds ingredients at different times to make sure everything cooks perfectly. The vegetables go in the oven first since they need more time to roast and become tender and sweet. The shrimp get added a little later so they don't overcook. Katie suggests serving this meal with a toasted baguette-cooked right on the sheet pan, too-and with a cold glass of a crisp white wine such as Sauvignon Blanc.

3 Tbsp White wine dry variety
3 Tbsp Extra virgin olive oil divided
4 clove(s) Garlic clove minced, divided
12 oz Canned artichoke hearts without oil drained
8 oz Uncooked haricot vert trimmed and cut in half
2 cup(s) Grape tomatoes
1 medium Uncooked red onion(s) cut into chunks
10 olive(s) Pitted Kalamata olives coarsely chopped
2 Tbsp Capers drained and coarsely chopped
0.75 tsp Kosher salt divided
0.375 tsp Black pepper freshly ground, divided
0.5 tsp Dried oregano
0.25 tsp Crushed red pepper flakes
1 medium Lemon(s) zested and juiced
1 pound(s) Uncooked shrimp large, peeled, deveined
4 oz Crumbled feta cheese

Steps:

  • Preheat oven to 450°F.
  • To prepare vegetables, in a large bowl, whisk wine, 2 tbsp oil, and 3 minced garlic cloves. Add artichokes, haricot vert, tomatoes, onion, olives, and capers, and toss to coat. Season vegetable mixture with ½ tsp salt and ¼ tsp pepper. Transfer to a large baking sheet and spread vegetables into an even layer. Roast until tomatoes begin to release their juices, 10 to 12 minutes.
  • While vegetables roast, in the same bowl, combine remaining 1 tbsp oil, remaining minced garlic clove, oregano, crushed red pepper, and lemon zest and juice. Add shrimp and toss to coat. Season with remaining ¼ tsp salt and a pinch pepper.
  • Remove baking sheet from oven and add shrimp. Stir and spread shrimp and vegetables into an even layer. Roast until shrimp are pink and opaque, 8 to 10 minutes. Transfer to a serving bowl and sprinkle with cheese.
  • Serving size: about 1 ½ cups vegetables, ¼ lb shrimp, and 1 oz cheese

3 tablespoons dry white wine
2 tablespoons extra-virgin olive oil
3 cloves garlic, minced
12 ounces jarred artichoke hearts, drained
8 ounces haricot vert, trimmed and cut in half
1 pint grape tomatoes
1/3 cup kalamata olives, pitted and coarsely chopped
2 tablespoons capers, drained and coarsely chopped
1 red onion, cut into chunks
Kosher salt and freshly ground black pepper
1 tablespoon extra-virgin olive oil
1/2 teaspoon dried oregano
1/4 teaspoon crushed red pepper
1 clove garlic, minced
Grated zest and juice of 1 lemon
1 pound cleaned large shrimp
Kosher salt and freshly ground black pepper
1 baguette, cut in half lengthwise and then crosswise into 4 pieces total
Extra-virgin olive oil, for drizzling
4 ounces crumbled feta cheese

Steps:

  • Preheat the oven to 450 degrees F.
  • For the vegetables: In a large bowl, whisk the white wine, olive oil and garlic. Add the artichokes, haricot vert, tomatoes, olives, capers and onions and toss to coat. Season with about 1/2 teaspoon salt and 1/4 teaspoon pepper. Transfer the mixture to a baking sheet and evenly spread out. Roast until the tomatoes begin to release their juices, 10 to 12 minutes.
  • For the shrimp: While the vegetables are roasting, use the same bowl and mix together the olive oil, oregano, red pepper, garlic and lemon zest and juice. Add the shrimp and toss to coat. Season with about 1/4 teaspoon salt and a pinch of black pepper.
  • Drizzle the baguette pieces with olive oil.
  • Remove the baking sheet from the oven and add the shrimp. Stir and evenly spread out the shrimp and vegetables. Add the pieces of baguette around the perimeter. Roast until the shrimp is pink and opaque, 8 to 10 minutes.
  • Transfer to a serving bowl, sprinkle with the crumbled feta and serve with the bread.

EASY FRIED SHRIMP AND TARTAR SAUCE



Easy Fried Shrimp and Tartar Sauce image

1 quart vegetable oil, for frying
1/2 cup white rice flour
1/2 cup beer
1 pound peeled and deveined large shrimp, tail-on
Kosher salt and freshly cracked black pepper
Tartar Sauce, recipe follows, for serving
3/4 cup mayonnaise
1 tablespoon minced fresh dill
1 tablespoon minced cornichons
1 tablespoon white wine vinegar
2 teaspoons chopped capers (rinsed and drained)
1 teaspoon Dijon mustard
Kosher salt and freshly cracked black pepper

Steps:

  • Pour the oil into a heavy-bottomed pot fitted with a deep-frying thermometer. Heat over medium-high heat to 375 degrees F. Line a baking sheet with paper towels and top with a cooling rack.
  • In a medium mixing bowl, whisk together the rice flour and beer until a smooth batter is formed. Season with 1/2 teaspoon salt and pepper.
  • Lightly salt the shrimp. Holding the tails, dip the shrimp into the batter to evenly coat on both sides.
  • One by one, gently drop the battered shrimp into the hot oil. Fry, flipping once if necessary, until golden brown on both sides, 1 to 2 minutes. While frying the shrimp, be sure to monitor the temperature of the oil and maintain it at 375 degrees F. Transfer the fried shrimp to the cooling rack and sprinkle generously with salt.
  • Serve the fried shrimp with Tartar Sauce for dipping.
  • Mix the mayonnaise, dill, cornichons, vinegar, capers, mustard and some salt and pepper in a small bowl. Refrigerate until serving.

GREEK SOUVLAKI CHEAT SHEET



Greek Souvlaki Cheat Sheet image

1/4 cup olive oil
2 tablespoons red wine vinegar
1 teaspoon onion powder
1 teaspoon dried oregano
1/2 teaspoon garlic powder
Kosher salt and freshly ground black pepper
4 boneless, skinless chicken breasts, cubed
1 pint cherry tomatoes, halved
1 red onion, thinly sliced
4 pitas, cut in half
Tzatziki Dip, recipe follows, for serving
1/2 cup plain Greek-style yogurt
2 tablespoons chopped peeled and seeded cucumber
1 teaspoon red wine vinegar
1 teaspoon minced fresh mint
Pinch kosher salt
1 small clove garlic, minced

Steps:

  • Put a baking sheet in the oven and preheat the oven to 400 degrees F.
  • In a large bowl, whisk the oil, vinegar, onion powder, oregano and garlic powder; season with salt and pepper. Add the chicken, tomatoes and onion and toss to coat.
  • Carefully remove the baking sheet from the oven and evenly spread the chicken mixture on it.
  • Bake for 10 minutes, then add the pita around the edge of the baking sheet and bake until the chicken is cooked through, another 5 minutes. (If desired, you can also broil the mixture for a couple of minutes more for more color.)
  • Serve with the Tzatziki Dip.
  • Combine the yogurt, cucumber, vinegar, mint, salt and garlic in a small bowl. Refrigerate until serving.
