4 salmon fillets (6 ounces each)
1/2 teaspoon salt, divided
1/2 cup olive oil
2 tablespoons balsamic vinegar
2 teaspoons honey
1 teaspoon Dijon mustard
3 plum tomatoes, chopped
1/4 cup chopped red onion
1/4 cup chopped green pepper
2 tablespoons chopped pitted green olives
2 tablespoons chopped ripe olives

Steps:

  • Place salmon in a greased 15x10x1-in. baking pan; sprinkle with 1/4 teaspoon salt. In a small bowl, whisk the oil, vinegar, honey, mustard and remaining salt. Spoon 1 tablespoon over each fillet., In a large bowl, combine the tomatoes, onion, green pepper, olives and remaining oil mixture. Spoon over fillets. , Bake at 425° for 12-15 minutes or until fish flakes easily with a fork.

An easy salmon recipe with so much flavor, this dijon salmon recipe is a family favorite. This baked salmon is juicy, tender and very easy to make.

1.5 lb salmon
1/3 cup dijon mustard
1 tbsp olive oil
2 tbsp lemon juice
1/4 tsp salt
1 tbsp fresh dill (chopped)
4 cloves garlic (minced)
1 tbsp capers
1 lemon (sliced)

Steps:

  • Heat the oven to 400F and line a baking sheet with parchment paper.
  • Place the salmon skin side down on the baking sheet.
  • In a small bowl, mix dijon mustard, olive oil, lemon juice, salt, dill, garlic and capers.
  • Slather the salmon with the dijon mixture using a silicon brush. Top with a few lemon slices if desired.
  • Bake dijon salmon in the oven for 18-23 minutes depending on the thickness of the fish. The salmon is ready once it's light in color and flakes easily with a fork.

BAKED LEMON GARLIC SALMON RECIPE

2 lb salmon fillet
Kosher salt
Extra virgin olive oil (I used Early Harvest Greek extra virgin olive oil)
1/2 lemon, sliced into rounds
Parsley for garnish
Zest of 1 large lemon
Juice of 2 lemons
3 tbsp extra virgin olive oil (I used Early Harvest Greek extra virgin olive oil)
5 garlic cloves, chopped
2 tsp dry oregano
1 tsp sweet paprika
1/2 tsp black pepper

Steps:

  • Heat oven to 375 degrees F.
  • Make the lemon-garlic sauce. In a small bowl or measuring cup, mix together the lemon juice, lemon zest, extra virgin olive oil, garlic, oregano, paprika and black pepper. Give the sauce a good whisk.
  • Prepare a sheet pan lined with a large piece of foil (should be large enough to fold over salmon). Brush top of the foil with extra virgin olive oil.
  • Now, pat salmon dry and season well on both sides with kosher salt. Place it on the foiled sheetpan. Top with lemon garlic sauce (make sure to spread the sauce evenly.)
  • Fold foil over the salmon (seam-side up). Bake for 15 to 20 minutes until salmon is almost completely cooked through at the thickest part (cooking time will vary based on the thickness of your fish. If your salmon is thinner, check several minutes early to ensure your salmon does not overcook. If your piece is very thick, 1 1/2 or more inches, it may take a bit longer.)
  • Carefully remove from oven and open foil to uncover the top of the salmon. Place under the broiler briefly, about 3 minutes or so. Watch closely as it broils to make sure it doesn't overcook and the garlic does not burn.)

½ cup olive oil
¼ cup balsamic vinegar
4 cloves garlic, pressed
4 (3 ounce) fillets salmon
1 tablespoon chopped fresh cilantro
1 tablespoon chopped fresh basil
1 ½ teaspoons garlic salt

Steps:

  • Mix together the olive oil and balsamic vinegar in a small bowl. Arrange the salmon fillets in a shallow baking dish. Rub garlic onto the fillets, then pour the vinegar and oil over them, turning once to coat. Season with cilantro, basil, and garlic salt. Set aside to marinate for 10 minutes.
  • Preheat your oven's broiler.
  • Place the salmon about 6 inches from the heat source, and broil for 15 minutes, turning once, or until browned on both sides and easily flaked with a fork. Brush occasionally with the sauce from the pan.

1/2 tsp rosemary
1/2 tsp sea salt
4 salmon fillets, skin on
1 Tbsp, plus 2 tsp olive oil, divided
2 Tbsp sugar
1 medium fennel bulb, cored and thinly sliced
1 cup cherry or grape tomatoes
lemon wedges

Steps:

  • 1. Mix seasonings in medium bowl. Sprinkle 2 tsp over salmon. Reserve remaining seasoning mixture in bowl. Set Aside. 2. Heat 1 Tbsp of oil in large skillet on medium-high heat. Place salmon skin-side up, in skillet. Cook 5 minutes. 3. Meanwhile add sugar and remaining 2 tsp oil to reserved seasoning mixture, mix well. Add fennel and tomatoes; toss to coat. Turn salmon fillets. Place fennel mixture around salmon in skillet in skillet. Cook 6 minutes or until fish flakes easily with a fork. Serve with lemon wedges.
