MEDITERRANEAN COFFEE
I put spice into pretty much everything I can so this recipe fit me to a T. I have yet to add the ask for chocolate syrup (I added the optional found below) and I use splenda in place of sugar. I have been pouring a cup of brewed coffee and adding Splenda, some loose anise seeds, a couple of cloves and a cinnamon stick. I like to bite the seeds and cloves and the coffee is so good. I class it as romantic just because I think it is.

Steps:
- Place coffee, sugar, chocolate syrup, anise seed, cloves and cinnamon into a sauce pan
- Heat to 200 F degrees over medium heat
- Strain into mugs
- Top with whipped cream and twists.

- In a coffee grinder, place whole coffee beans and 5 cardamom pods it and grind until coarsely ground.
- Pour ground coffee and cardamom into the pitcher of the french press, with the lid and plunger off. Set aside.
- Bring to a boil 5 ½ cups water in a tea pot or sauce pan. Once boiling, remove from heat and let cool for 30 seconds.
- Pour ½ of the water into the french press pitcher with coffee grounds at bottom. Wait 30 seconds and stir the water and coffee grounds a little with a spoon. Pour the rest of the hot water into the pitcher, and place the lid with the plunger all the way up on the pitcher. Leave the plunger up and let the pitcher sit for 4 to 5 minutes.

- Measure out a full coffee cup of water (about 2 1/2 -3 ounces or 75-90 mls) and pour into the briki. If you are making more than one coffee make sure your briki is big enough, you will need space to let the coffee bubble and foam.
- Add 2 teaspoons of coffee and 2 teaspoons of sugar for every 1 coffee cup and stir. This ratio is considered a somewhat strong coffee.
- Very slowly let the coffee heat up, (keep the flame very-very low). Do not leave the coffee unattended.
