Steps:
- Combine all ingredients besides the chicken in a mixing bowl. Whisk together.
- After the chicken is trimmed place the chicken in the bowl of mixed ingredients.
- Mix the marinade over the chicken until well coated.
- Leave chicken in the mixing bowl. Cover with saran wrap and let marinade for about 1-2 hours. ~Meanwhile soak your skewers in cold water for 30 minutes.
- Pre heat your oven to 425.
- Place foil on a baking sheet.
- Start skewing your chicken pieces and bell pepper pieces, in whichever order you like and place on the baking sheet.
- Leave in the oven for about 35-40 minutes on a middle shelf. If you like you can pour more of the marinade over the skewers about 5 minutes before they are fully cooked.
- NOTE: It is best to cut the chicken with kitchen shears I find it so much easier than using a knife (which is what I tried using the first time I made these. Took forever. Trust me shears are the WAY TO GO).
- *please remember all my recipes are made using a gas stove top and oven. So cooking times may vary.

MEDITERRANEAN CHICKEN KABOBS

- In large shallow glass or plastic dish or resealable food-storage plastic bag, mix garlic, rosemary, oregano, 1/2 teaspoon of the salt, 1/4 teaspoon of the pepper, 3 tablespoons of the lemon juice and 5 tablespoons of the oil. Add chicken; turn to coat. Cover or seal; refrigerate 30 minutes to marinate.
- Heat gas or charcoal grill. In small bowl, mix remaining 1/2 teaspoon salt, 1/4 teaspoon pepper, 1 tablespoon lemon juice and 1 tablespoon oil; set aside.
- Remove chicken from marinade; discard marinade. On 6 (10- to 12-inch) metal skewers, alternately thread chicken, bell pepper and onion, leaving space between pieces.
- Place skewers on grill over medium-high heat. Cover grill; cook 8 to 10 minutes, turning occasionally and basting with lemon juice mixture, until chicken is no longer pink in center and vegetables are tender. Discard any remaining lemon juice mixture.

Steps:
- Cut the chicken breast into 1 - 1 1/2 inch pieces and set aside.
- In a large bowl, mix olive oil with minced garlic, paprika, cumin, sumac, cayenne, salt and lemon juice.
- Add the chicken pieces to the bowl and stir well so all pieces are coated with the marinade.
- Cover with a plastic wrap, and place the bowl in the fridge. Marinate the chicken for at least one hour up to 24 hours.
- Once ready to grill, take the bowl out of the fridge.
- Heat the grill to medium heat.
- Thread the chicken pieces and vegetables on skewers.
- Once all the skewers are ready, start grilling the kabobs.
- Grill one side for 5-8 minutes and then grill the other side. Make sure the kabobs are not undercooked.
- Serve warm with your favorite side dish.

- In a medium bowl, combine the yogurt, olive oil, paprika, cumin, cinnamon, red pepper flakes, lemon zest, lemon juice, salt, pepper and garlic.
- Line a baking sheet with aluminum foil for easy clean up. Thread the chicken onto metal skewers, folding if the pieces are long and thin, alternating with the red onions. Be sure not to cram the skewers. (Note: You'll need between 6-8 skewers.) Place the kabobs on the prepared baking sheet. Brush the marinade all over the meat, coating well. Cover and refrigerate at least eight hours or overnight.
- Preheat the grill to medium-high heat. To grease the grill, lightly dip a wad of paper towels in vegetable oil and, using tongs, carefully rub over the grates several times until glossy and coated. Grill the chicken kabobs until golden brown and cooked through, turning the skewers occasionally, 13 to 15 minutes. (The yogurt marinade makes these kabobs prone to sticking to the grill grates; if necessary, use a metal BBQ spatula to scrape underneath the kabobs and release them.) Transfer the kabobs to a platter and serve.
- Note: I've specified boneless skinless chicken thighs for this recipe; they're juicier and more flavorful than chicken breasts, and they work better in this type of yogurt and lemon-based marinade. They're also much easier to cook without drying out.

- In a small bowl, combine the paprika, thyme, nutmeg,cardamom, and a generous pinch of salt and pepper. Generously coat the chicken with the spices.
- Place the chicken cubes in a deep dish with the sliced yellow onions. Combine the minced garlic and lemon juice and add them to the chicken dish. Add a generous drizzle of extra virgin olive oil. Toss the chicken to make sure it's well-coated. Cover and refrigerate for 2 to 4 hours (if you don't have the time to marinate, allow the chicken about 30 minutes or so at room temperature before grilling).
- A few minutes before grilling, thread the chicken cubes, green peppers, red peppers and red onion onto wood skewers (skewers must be soaked in water for at least 1 hour before using).
