Tender, boneless chicken breasts are marinated in sun dried tomato dressing, grilled with sweet bell peppers, and served atop a crunchy romaine bed sprinkled with feta and olives.

1 ½ cups sun-dried tomato and oregano salad dressing
4 skinless, boneless chicken breast halves
2 red bell peppers, halved and seeded
1 head romaine lettuce - rinsed, dried, and torn into bite-size pieces
1 cup black olives, drained
4 ounces feta cheese, crumbled
½ cup sun-dried tomato and oregano salad dressing

Steps:

  • In a shallow dish, arrange chicken breasts and evenly cover with 1 cup of the salad dressing. Cover tightly and marinate in the refrigerator for 20 minutes to an hour.
  • Preheat your grill to high heat. While grill is preheating, arrange lettuce, olives and feta cheese in a salad bowl.
  • Remove chicken from marinade and place on grill. Cook chicken breasts for 6 to 8 minutes per side. Arrange peppers on grill, and baste with the reserved 1/2 cup dressing. (Don't use the leftover chicken marinade!) The peppers will need only a few minutes - be careful not to burn them!
  • Remove chicken and peppers from the grill and, when cool enough to handle, slice into strips. Arrange peppers and chicken on top of the salad and serve with the last 1/2 cup of dressing.

1 package (12 ounces) uncooked tricolor spiral pasta
2 tablespoons olive oil, divided
1 pound boneless skinless chicken breasts, cut into 1/2-inch pieces
1 large sweet red pepper, chopped
1 medium onion, chopped
3 garlic cloves, peeled and thinly sliced
1 cup white wine or reduced-sodium chicken broth
1/4 cup julienned soft sun-dried tomatoes (not packed in oil)
1 teaspoon dried basil
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon pepper
1 can (14-1/2 ounces) reduced-sodium chicken broth
1 can (14 ounces) water-packed quartered artichoke hearts, drained
1 package (6 ounces) fresh baby spinach
1 cup (4 ounces) crumbled feta cheese
Thinly sliced fresh basil leaves and shaved Parmesan cheese, optional

Steps:

  • Cook pasta according to package directions. In a 6-qt. stockpot, heat 1 tablespoon oil over medium-high heat. Add chicken; cook and stir 4-6 minutes or until no longer pink. Remove from pot., In same pot, heat remaining oil over medium heat. Add red pepper and onion; cook and stir 4-5 minutes or until onion is tender. Add garlic; cook 1 minute longer. Add wine, sun-dried tomatoes and seasonings; bring to a boil. Reduce heat; simmer 5 minutes, stirring to loosen browned bits from pot., Add broth and artichoke hearts; return to a boil. Stir in spinach and chicken; cook just until spinach is wilted., Drain pasta; stir into chicken mixture. Stir in feta cheese. If desired, top servings with basil and Parmesan cheese.

1 can (8 oz) Muir Glen™ organic tomato sauce
1/2 teaspoon dried oregano leaves
1 teaspoon dried basil leaves
1/4 cup pitted Kalamata olives, quartered lengthwise
3/4 cup crumbled reduced-fat feta cheese (3 oz)

Steps:

  • In 4-quart Dutch oven, cook and drain pasta as directed on package, omitting salt. Return to Dutch oven; cover to keep warm.
  • Meanwhile, in 12-inch nonstick skillet, heat oil over medium heat. Add onion; cook 3 to 4 minutes, stirring occasionally, until crisp-tender. Add zucchini and garlic; cook 2 minutes. 2 teaspoons olive oil
2 tablespoons white wine
6 skinless, boneless chicken breast halves
3 cloves garlic, minced
½ cup diced onion
3 cups tomatoes, chopped
½ cup white wine
2 teaspoons chopped fresh thyme
1 tablespoon chopped fresh basil
½ cup kalamata olives
¼ cup chopped fresh parsley
salt and pepper to taste

Steps:

  • Heat the oil and 2 tablespoons white wine in a large skillet over medium heat. Add chicken and saute about 4 to 6 minutes each side, until golden. Remove chicken from skillet and set aside.
  • Saute garlic in pan drippings for 30 seconds, then add onion and saute for 3 minutes. Add tomatoes and bring to a boil. Lower heat, add 1/2 cup white wine and simmer for 10 minutes. Add thyme and basil and simmer for 5 more minutes.
  • Return chicken to skillet and cover. Cook over low heat until the chicken is cooked through and no longer pink inside. Add olives and parsley to the skillet and cook for 1 minute. Season with salt and pepper to taste and serve.

1/4 cup chopped sun-dried tomato (not packed in oil)
1/4 cup water
4 ounces rigatoni pasta or 3 cups rigatoni pasta
1 1/2 cups diced chicken breasts (roasted or grilled) or 8 ounces diced chicken breasts (roasted or grilled)
1 cup chopped canned artichoke heart (drained)
1/4 cup sliced black olives
1/4 cup sliced scallion
5/8 cup low-fat Italian salad dressing (nonfat or lowfat) or 5/8 cup reduced-fat red wine vinaigrette (nonfat or lowfat)
8 cups torn romaine lettuce
1/4 cup chopped walnuts (optional)
1/4 cup grated parmesan cheese

Steps:

  • Combine the dried tomatoes and water in a small pot and bring to a boil over high heat. Reduce heat to low, cover, and simmer for 2 minutes or until the tomatoes are soft and the liquid is absorbed. Set aside to cool to room temperature.
  • Cook the pasta al dente according to package directions. Drain, rinse with cool water and drain again.
  • Put the cooked pasta in a medium sized bowl. Add the tomatoes, chicken, artichoke hearts, olive and scallions; toss to mix well. Pour 1/4 cup of the dressing over pasta mixture, and toss to mix well. Cover the pasta mixture and refrigerate for at least 2 hours.
  • When ready to serve, place the romaine in a large bowl and add the pasta mixture, the remaining dressing, and, if desired, the walnuts. Toss to mix well. Sprinkle the Parmesan cheese over the salad and toss again. Serve immediately.

3 Tbsp Olive oil (Divided 2:1)
2 Tbsp Lemon Juice
Salt and pepper to taste
1 Tsp Minced Garlic
1 Tsp Italian Seasoning
1 Cup Diced Tomatoes
¼ Cup Crumbled Feta Cheese
2 Tbsp Chopped Fresh Herbs (such as chives, parsley or green onion)

Steps:

  • Place the 2 tablespoons of olive oil, 2 tablespoons of lemon juice, 2 tablespoons of water, salt and pepper to taste, garlic and Italian seasoning in a resealable plastic bag.
  • Add the chicken; seal and shake to coat.
  • Marinate in the refrigerator for at least 30 minutes or up to 4 hours.
  • Heat the remaining teaspoon of olive oil in a pan over medium heat.
  • Remove the chicken from the marinade and add to the pan.
  • Cook for 5-7 minutes on each side or until done.
  • While the chicken is cooking, stir together the tomatoes, feta cheese and herbs. Add salt and pepper to taste.
  • Spoon the tomato mixture over the chicken and serve.

  • Heat a non-stick pan (medium heat) and add 1 Tbsp olive oil. Add in the tuna, chickpeas, basil, tomato paste, 1 tbsp lemon juice, 1 garlic clove and the crushed red pepper. Mix everything together and keep stirring for 4-5 minutes, so that the chickpeas and tuna absorb all the flavors.
  • In a large bowl mix the cabbage with 1 clove of garlic, 1 tbsp lemon juice, a pinch of salt and 1 tbsp olive oil, mix very well!
  • Arrange your bowl: Start with 1/2 cup cabbage, around 4 Tbsp of the tuna + chickpeas, then 1/4 cup olives, 1/2 avocado, some jalapeno and 2 Tbsp hummus. Top with some toasted sesame seeds.
