Mediterranean Stew with Navy Beans image

Fresh sage and rosemary add Mediterranean flavor to this hearty stew made with navy beans, tomato, and red bell pepper.

Provided by Alice Waugh

Time 1h

Yield 6

Number Of Ingredients 13

3 tablespoons olive oil
1 medium onion, chopped
1 large tomato, chopped
1 medium red bell pepper, chopped
3 cloves garlic, coarsely chopped
4 leaves fresh sage
1 sprig fresh rosemary
¼ teaspoon red pepper flakes, or more to taste
salt and freshly ground black pepper to taste
3 (16 ounce) cans navy beans, rinsed and drained
1 bay leaf
3 cups water, or as needed to cover
2 tablespoons finely chopped fresh chives, or to taste

Steps:

  • Heat oil in a skillet over medium heat; stir in onion. Cook and stir until the onion has softened and turned translucent, about 5 minutes. Add tomato and bell pepper; cook until pepper has softened, about 3 minutes. Add garlic; cook and stir until fragrant, about 1 minute. Stir in sage, rosemary, pepper flakes, salt, and pepper. Reduce heat to low and cook for 5 minutes.
  • Transfer vegetable mixture to a large pot with beans and bay leaf over medium heat. Add enough water to cover. Cook, stirring occasionally and adding more water, a little at a time, if it looks like the beans are getting dry, about 30 minutes.
  • Sprinkle with chives and serve.

Number Of Ingredients 21

Extra virgin olive oil
1 Large russet potato (peeled, diced into small cubes)
1 medium yellow onion (chopped)
1 15- oz can diced tomatoes
1 tbsp white vinegar
1 tbsp ground coriander
1 tsp Spanish paprika
Salt and pepper
5 cups low sodium vegetable broth, (or broth of your choice)
8- oz frozen spinach, (no need to thaw)
15- oz can red kidney beans, (drained and rinsed )
15- oz can cannellini beans, (drained and rinsed)
15- oz can chickpeas, (drained)
Basil leaves for garnish (optional)
1/3 cup toasted pine nuts for garnish (optional)
2-3 large garlic cloves, (you can start with less garlic if you're not sure)
1 1/2 cup diced fresh tomatoes
15-20 large basil leaves
1/2 cup Private Reserve Greek extra virgin olive oil
Salt and pepper
1/3 cup grated Parmesan cheese

Steps:

  • In a large Dutch oven or heavy pot, heat two tablespoons of olive oil over medium heat until shimmering but not smoking. Add the diced potatoes and onions. Cook for about 4-5 minutes, tossing regularly.
  • Add the canned diced tomatoes, vinegar, spices, salt and pepper. Stir to combine. Cover and cook for another 4 minutes.
  • Uncover, add the vegetable broth and frozen spinach. Raise the heat to medium-high and bring to a boil for 4 minutes or so. Add the kidney beans, cannellini beans, and chickpeas. Bring back to a boil, then reduce heat to medium-low. Cover and cook for another 15 to 20 minutes (potatoes should be tender at this point).
  • While the soup is cooking, make the tomato pesto. In the bowl of a food processor fitted with a blade, place the garlic and fresh tomatoes. Pulse a few times to combine. Add the basil and puree. While the processor is running, drizzle in the olive oil a little bit at a time. Transfer the thick tomato pesto to a bowl, and stir in the grated Parmesan.
  • When the soup is ready, remove from heat. Stir in the tomato pesto.
  • Transfer to serving bowls. Top each bowl with a few basil leaves and toasted pine nuts. Enjoy with your favorite crusty bread!

WHAT TO SERVE WITH TUNA SANDWICHES: 10 BEST SIDES

From slimmingviolet.com
  • Greek salad. Even those who aren’t too keen on salad can’t deny that the Greek version adds something special to any meal it’s served with. Reader Favourites from Slimming Violet!
  • Cottage cheese. Cottage cheese is high in protein and essential nutrients such as calcium. It’s a favourite amongst dieters, but that doesn’t mean it should be overlooked if satisfaction is at the top of your lunchtime agenda.
  • French fries. If you have the luxury of working from home, or you’re serving your tuna sandwich for dinner, you might want to push the boat out and serve a piping hot side dish.
  • Fresh fruit. The best side dishes for tuna sandwiches don’t have to be savoury! A fresh fruit salad, with berries, orange, melon, and grapes, will pack in extra goodness and make for a really well balanced meal.
  • Berries with balsamic vinegar. If you’ve never tried this before, hold judgement until you’ve given it a go! Berries with balsamic vinegar might seem like a bit of an odd combination, but it works so well.
  • Tomato soup. Soup and a sandwich is a famous lunchtime combination, and tomato soup is a quick and tasty choice to pair with tuna. I particularly enjoy adding some cheese and red onion to the sandwich, grilling it, and serving as a toastie.
  • Onion rings. Do you love a bit of crunch with your lunch? If so, try making up a batch of onion rings to serve with your tuna sandwich. It’s reminiscent of a side order you’d be served in a good country pub, and definitely makes things a little more interesting!
  • Crudités. Sliced up veggies are ideal for any lunchbox, and also have a well deserved place at a picnic or buffet lunch for friends. Some delicious options for crudités include
  • Olives. Olives are high in vitamin E and other powerful antioxidants, and many highly recommend them for the benefits they can bring for your skin and general wellbeing.
  • Crisps. Crisps – or potato chips as they’re known across the other side of the pond! – are a crunchy, tasty accompaniment to any sandwich. Better still, you don’t have to do anything more taxing than opening up a bag.
