Provided by Holland House

Categories     Trusted Brands: Recipes and Tips     Holland House®

Time 30m

Yield 4

Number Of Ingredients 8

1 cup Holland House® Sake Cooking Wine
2 tablespoons brown sugar, not packed
1 teaspoon toasted sesame oil
1 teaspoon cornstarch
1 ½ pounds pork tenderloin
2 tablespoons toasted sesame seeds, or more if desired
2 tablespoons butter
Minced green onion (garnish)

Steps:

  • Combine sake cooking wine, sugar, sesame oil and cornstarch. Stir to dissolve cornstarch; set aside.
  • Cut pork into 1/2-inch slices; season with salt and pepper to taste. Press half the sesame seeds onto one side of each medallion. Melt butter in 12-inch saute pan. Cook pork, seed side down, over medium-high heat until lightly browned, about 8 minutes. While cooking, press remaining sesame seeds onto tops of medallions. Turn over and continue to cook 4-6 minutes. Increase heat to high, add sauce and cook 2 minutes or until sauce bubbles and thickens slightly. Serve pork medallions drizzled with sake sauce. Sprinkle with any remaining sesame seeds and green onion.

MEDALLION OF PORK WITH SESAME SEEDS

Medallion of Pork With Sesame Seeds image

Provided by Pierre Franey

Categories     dinner, main course

Time 40m

Yield 4 servings

Number Of Ingredients 14

8 slices boneless loin of pork, about 3 ounces each, trimmed of excess fat
2 tablespoons finely chopped shallots
1 tablespoon grated fresh ginger root
4 tablespoons dry white wine
2 tablespoons sherry wine
1/8 teaspoon red hot pepper flakes
Freshly ground pepper to taste
2 tablespoons dark soy sauce
1 egg white
2 tablespoons cornstarch
1 3/4 cups sesame seeds
2 tablespoons vegetable or corn oil
2 tablespoons butter
2 tablespoons coarsely chopped fresh coriander

Steps:

  • Place the pork slices on a flat surface. Pound the meat lightly with a mallet or meat pounder.
  • Combine the shallots, ginger, white wine, sherry, pepper flakes, ground pepper and soy sauce in a bowl and blend. Place the pork in a dish. Pour the mixture over the pork and marinate for 10 minutes.
  • Combine the egg white with the cornstarch in a bowl and beat well with a wire whisk to blend.
  • Drain the pork medallions, reserving the marinade. Brush the medallions with the egg white mixture.
  • Pour the sesame seeds into a flat dish and dip the medallions one at a time in the seeds to coat both sides generously.
  • Heat the oil in a nonstick skillet large enough to hold the slices in one layer. When the oil is hot, add the slices of meat and cook over medium heat about 5 minutes or until brown. Turn the slices over and cook about 5 minutes. Reduce the heat and continue cooking for about 2 minutes longer, turning the slices occasionally. Transfer the meat to a warm serving platter.
  • In a small saucepan, add the reserved marinade and bring to a simmer. Cook about 2 minutes. Stir in the butter and blend well.
  • Spoon the sauce over the pork medallions and sprinkle with coriander. Serve immediately.

HONEY SESAME PORK TENDERLOIN

Honey Sesame Pork Tenderloin image

We love this variation of pork tenderloin. It's excellent served over rice. Delicious! The prep time does not include marinating, which is 2 hours. Enjoy!

Provided by LifeIsGood

Categories     Pork

Time 45m

Yield 4 serving(s)

Number Of Ingredients 8

1 lb whole pork tenderloin
1/2 cup soy sauce (I recommend using low-sodium soy sauce)
2 garlic cloves, minced
1 tablespoon fresh ginger, grated
1 tablespoon sesame oil
1/4 cup honey
2 tablespoons packed brown sugar
4 tablespoons sesame seeds

Steps:

  • Combine soy sauce, ginger, garlic and sesame oil.
  • Place tenderloin in a resealable plastic food storage bag and pour the soy sauce mixture into it.
  • Marinate for 2 hours in the refrigerator. **I do not recommend marinating this any longer than 2 hours - as the pork will become too salty tasting**.
  • Preheat oven to 375 degrees.
  • Remove pork from marinade and pat dry with a paper towel.
  • Mix honey and brown sugar on a plate. (You could use a whisk if you're having trouble mixing these ingredients.).
  • Place sesame seeds on another plate.
  • Roll pork in honey mixture and then roll in the sesame seeds.
  • Roast in a shallow pan for 20 to 30 minutes or until meat thermometer inserted into the thickest part registers 160 degrees.
  • Suggested to serve over rice.
