- Preheat oven to 375°. Invert squash in an 11 x 7-in. baking dish. Add water and cover with foil. Bake until tender, 50-60 minutes. , Meanwhile, cook beef, onion and celery over medium heat until no longer pink; drain. Stir in the flour, salt and sage until blended. Add milk. Bring to a boil. Cook and stir for 2 minutes or until thickened and bubbly. Stir in rice. , Transfer squash to a baking sheet. Fill cavity with meat mixture. Bake at 350° for 30 minutes. Remove from oven; sprinkle with cheese and bake 3-5 minutes longer or until cheese is melted.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Sprinkle squash with salt and pepper, and lightly spray with cooking oil. Place in a baking dish flesh side down, and cover with plastic wrap.
- Microwave on high for 10 to 15 minutes, or until flesh is fork-tender.
- Meanwhile, cook beef and pork in 1 tablespoon of oil on medium high heat until well browned, stirring frequently to crumble. Drain, and set aside. In the same skillet, cook the onion and garlic until onion is translucent. Combine beef and pork with cheese and onions, and spoon mixture into squash halves.
- Bake, uncovered, in the preheated oven for 15 to 20 minutes, or until cheese is melted and squash is lightly browned. Season with salt and pepper to taste. Serve hot.

MEATY STUFFED ACORN SQUASH
My husband and oldest daughter love this since it tastes like sausage but without all of the calories and fat. So filling and perfect for fall! I use the all green squash since the mottled ones can be harder to cut, I have found.

Steps:
- 1. Put acorn squash into tray, cut side up, and fill bottom of tray with some water. Bake at 400 oven for about 30 minutes, til not to soft. Let cool slightly and salt and pepper well.
- 2. Saute onion and peppers and then add turkey and garlic. Cook completely. Drain and set aside to cool slightly. Mix bread crumbs or cornbread mix with parmesan cheese into meat mixture with the spices. Salt and pepper to what you think. If using mix, the seasoning packet has salt, along with parm, so take that into consideration.
- 3. Add in blended eggs. Pack and mound meat mixture into squash center with cupped hand until all is used up, if possible. Top with shredded cheese and bake until filling is set, about 30 minutes. Do not let burn, but will get a good crust.
GROUND BEEF STUFFED ACORN SQUASH

- Invert squash in two ungreased 13-in. x 9-in. baking dishes. Add water and cover with foil. Bake at 375° for 40-45 minutes or until tender. , Meanwhile, cook the beef, celery and onion over medium heat until meat is no longer pink and vegetables are tender; drain. Add the apple, rice, sunflower kernels and curry. Cook and stir until apple is tender. Remove from the heat. Stir in the egg, 1 teaspoon brown sugar and 3/4 teaspoon salt. , Place squash cut side up on a baking sheet. Place 1 teaspoon remaining brown sugar and 1 teaspoon butter in each half. - Preheat oven to 375 degrees F. Lightly coat a large baking sheet with cooking spray.
- Cut squash in half horizontally. Scoop out and discard seeds. Place the squash cut-side down on the prepared baking sheet. Bake until tender, about 45 minutes.
- Meanwhile, lightly coat a large skillet with cooking spray; heat over medium heat. Add sausage and cook, stirring and breaking up with a wooden spoon, until lightly browned, 3 to 5 minutes. Add onion and bell pepper; cook, stirring often, until softened, 3 to 5 minutes. Stir in garlic, chili powder and cumin; cook for 30 seconds. Stir in tomatoes, beans, salt and hot sauce, scraping up any browned bits. Cover, reduce heat, and simmer until the tomatoes are broken down, 10 to 12 minutes.
- When the squash are tender, reduce oven temperature to 325 degrees . Fill the squash halves with the turkey mixture. Top with cheese. Place on the baking sheet and bake until the filling is heated through and the cheese is melted, 8 to 10 minutes.

ACORN SQUASH STUFFED WITH CURRIED MEAT
This recipe is from Apple Companion, which I found at Amish Acres in the heart of Indiana's Amish country. If you ever have a chance, pick up a copy of this cookbook! I have found most of the recipes to be outstanding, including this one, which I make at least once every fall or winter.

Steps:
- Cut acorn squash in half from stem to tip and scrape out seeds; set aside.
- In a heavy, non-reactive (such as enameled) skillet, melt the butter over medium heat.
- Sauté onion for 2-3 minutes.
- Quick trick: Use one of those handy green peeling/coring/slicing units that attach to the counter with suction.
- You can find these at most stores for around$20if you dont have one, I recommend getting one.
- They work really well, and save lots of time!
- Core and slice the apple with the peeling arm wedged out of action.
- Slice the spiral to form small, uniform dice.
- Add the apple, garlic and curry powder to the skillet.
- Sauté, stirring, for about 3 more minutes, or until apple is beginning to soften and curry has become quite fragrant.
- Add lamb and mix thoroughly, breaking up chunks.
- Brown lamb and stir in cumin, cayenne and salt.
- Add cream; allow to boil and reduce until thick.
- Pack as much of the lamb mixture as possible into the hollowed out squash halves.
- Place the squash in a baking dish just large enough to hold them upright.
- Pour 1 inch of boiling water in the dish and cover tightly.
- If baking in the oven, use foil.
- If microwaving, use microwave-safe plastic wrap, ventilated with 2 slits.
- Bake in preheated 400 F degree oven for 1 hour, or at 70% power in microwave for about 25 minutes, until the flesh of the squash is tender when pierced with a fork.

- Discard seeds and sprinkle squash with a little salt.

- Roast Acorn Squash: Slice the squash in half. Scoop out the seeds, leaving a hollow cavity in the middle of each half. Rub with olive oil, salt, and pepper. Place cut side down on a baking sheet and roast 30 minutes.
- Make the Filling: Cook ground lamb, with a dash of salt and pepper, in a nonstick skillet or dutch oven over medium heat until done and browned through. Set aside. Wipe out the dutch oven, if using. Add 2 TBSP olive oil or butter, and add the diced onion and sautee over medium heat until it begins to soften. Add the garlic and celery with a pinch of salt and pepper, and the sage and thyme. Cook, stirring, until the celery is crisp tender. Add the apples, cranberries, and cooked rice and stir to combine. Add the meat last. Taste, and add more seasoning as desired.
- Assemble + Finish Baking: Spoon the mixture into the hollowed out space in each of the squash halves, filling all the way full. Place the squash back on the baking sheet (right side up), sprinkle with parmesan (if using) and bake for 5-7 more minutes, until the cheese is melted.
