DAD'S MEATLOAF WITH TOMATO RELISH

Extra-virgin olive oil
1 onion, finely diced
2 garlic cloves, minced
2 bay leaves
2 red bell peppers, cored, seeded, and finely diced
2 tomatoes, halved, seeded, and finely diced
1/4 cup chopped fresh flat-leaf parsley
1 (12-ounce) bottle ketchup
1 tablespoon Worcestershire sauce
Sea salt and freshly ground black pepper
3 slices white bread, crusts removed, torn into chunks by hand
1/4 cup whole milk
1 1/2 pounds ground beef
1 pound ground pork
2 eggs
Leaves from 2 fresh thyme sprigs
Salt and freshly ground black pepper
3 to 4 bacon slices

Steps:

  • Preheat the oven to 350 degrees F.
  • Coat a skillet with a 2-count of oil and place over medium heat. Saute the onion, garlic, and bay leaves for a few minutes to create a base flavor. Throw in the red peppers and cook them for a couple of minutes to soften. Now add the tomatoes; adding them at this point lets them hold their shape and prevents them from disintegrating. Stir in the parsley, ketchup, and Worcestershire; season with salt and pepper. Simmer the relish for 5 minutes to pull all the flavors together. Remove it from the heat; you should have about 4 cups of relish.
  • Place the torn white bread in a bowl and add the milk to just barely cover, swish the bread around in the milk and let it sit while you get the rest of the ingredients for the meat loaf together.
  • This is where you get your hands dirty! In a large mixing bowl, combine the ground beef and pork with 1 1/2 cups of the tomato relish, the eggs, and thyme; season with salt and pepper. Squeeze the excess milk from the bread and add the soaked bread to the meat mixture. To test, fry a small "hamburger" patty of the meatloaf until cooked; the patty should hold together but still have a soft consistency. Taste the patty for seasoning.
  • Lightly oil a cookie sheet. Transfer the meat mixture to the center of the cookie sheet and form into a log about 9 inches long and about 4 inches wide. Coat the top of the meatloaf with another 1/2 cup of the tomato relish. Lay the bacon across the top lengthwise.
  • Bake the meatloaf for 1 to 1 1/2 hours until the bacon is crisp and the meatloaf is firm. Rotate the meat loaf while it's baking every now and then to insure that the bacon browns evenly. Remove the meatloaf from the oven and let it cool a bit before slicing. Serve with the remaining tomato relish on the side. Unbelievably moist!

1 small onion, chopped
½ cup dill pickle juice
¾ teaspoon salt
¼ teaspoon ground black pepper
1 slice bread, torn into small pieces
1 pound lean ground beef
¼ cup chopped dill pickles
¼ cup ketchup
2 tablespoons water
1 tablespoon brown sugar
½ teaspoon Worcestershire sauce

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 8x8 inch baking dish.
  • Beat the egg in a mixing bowl. Whisk in the onion, pickle juice, salt, and pepper. Stir in the bread until soggy, then mix in the ground beef until evenly combined. Form into a loaf and place into the prepared pan. Stir together the chopped pickles, ketchup, water, sugar, and Worcestershire sauce; pour over the meatloaf.
  • Bake in the preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

1 tablespoon Dijon mustard
1/2 teaspoon hot sauce

1 teaspoon kosher salt
1/2 teaspoon ground black pepper
1 pound ground beef chuck
8 ounces ground pork
8 ounces ground veal
8 ounces sharp cheddar, shredded (2 1/3 cups)
1/3 cup chopped flat-leaf parsley
2 tablespoons tomato paste
1 tablespoon balsamic vinegar
2 tablespoons water

Steps:

  • Preheat oven to 400 degrees F.
  • Cook bacon in a medium nonstick skillet over medium-low heat, until crispy and fat renders, about 10 minutes. Remove bacon with a slotted spoon to a paper towel-lined plate, reserving renderings in the skillet. Cook the onions and garlic in the pan drippings until brown, about 15 minutes. Let cool.
  • Meanwhile, in a large bowl whisk the eggs, mustard, hot sauce, Worcestershire, cream, salt, and pepper. Add the meat, cheese, parsley, and cooked onion. Chop and add the bacon. Mix with a fork until evenly blended. Whisk the glaze ingredients together in a bowl.
  • Dampen hands with water and on a foil-lined cookie sheet, pat mixture into a loaf shape. Bake until an instant-read thermometer inserted into the center of the loaf registers 155 degrees F, about 1 hour. Spread the glaze onto the meatloaf after about 50 minutes. Let loaf rest for at least 10 minutes before serving.

1 celery rib, finely chopped
1 small green pepper, finely chopped
1 tablespoon canola oil
1 garlic clove, minced
1 large egg, lightly beaten

1 tablespoon dry red wine or beef broth
1 teaspoon prepared mustard
1 teaspoon Worcestershire sauce
1 cup soft bread crumbs
1 tablespoon all-purpose flour

1/2 teaspoon chili powder
1 pound lean ground beef (90% lean)

Steps:

  • In a large skillet, saute the onion, celery and green pepper in oil until tender. Add garlic; cook 1 minute longer. Transfer to a large bowl; cool slightly., Add the egg, horseradish, wine, mustard, Worcestershire sauce, bread crumbs, flour, brown sugar and seasonings. Crumble beef and sausage over mixture and mix well. Pat into an ungreased 9x5-in. loaf pan. Place bacon strips over meat loaf; tuck in ends., Bake, uncovered, at 350° for 55 minutes. Combine tomatoes and tomato sauce; spoon over loaf. Bake 5-10 minutes longer or until no pink remains and a thermometer reads 160°.

1 tablespoon extra-virgin olive oil
1 garlic clove, minced
2 pounds ground beef (85% lean)
2 large eggs, preferably pasture-raised
3/4 cup fresh bread crumbs
1 tablespoon chopped fresh oregano, or 1/2 tablespoon dried Sicilian oregano
2 tablespoons Dijon mustard
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 tablespoons ketchup
12 slices bacon
4 ciabatta rolls
8 slices yellow Cheddar cheese
8 tablespoons Tomato Relish (see page 182)

Steps:

  • Preheat the oven to 350°F.
  • In a skillet over medium heat, sauté the onion in the oil until golden. Add the garlic and sauté for 1 to 2 minutes (be careful not to burn the garlic). Remove from the heat and set aside to cool.
  • In a bowl, combine the beef, eggs, onion bread crumbs, oregano, mustard, salt, and pepper. Form a loaf (approximately 7 x 5 x 3 inches in size) and place it in a roasting pan. Cover the loaf evenly with the ketchup. Bake for about 1 hour, until it reaches an internal temperature of 145°F. Remove and allow to rest slightly, then cut into 1/2-inch slices.
  • In a heavy skillet over medium-high heat, cook the bacon until golden brown and crisp on both sides. Transfer to paper towels to drain.
  • Slice the ciabatta rolls in half. Top each bottom half with a slice of warm meatloaf and the cheese. Place the relish on the top halves and top with the bacon. Place all the roll pieces in the 350°F oven and remove once the cheese has melted and the relish is heated through. Close the sandwiches, cut into halves, and serve.

  • Fire up a lidded barbecue ready for indirect cooking (with the coals heaped to one side) so you can cook the fatty away from the high heat of the fire. Add a chunk of smoking wood to the fire for extra smokiness if you like.
  • Begin by making the woven bacon blanket to enclose the fatty. Vertically line up 8 of the bacon slices next to each other on a flat baking sheet. Working left to right, fold every other slice in half upwards. Lay a slice horizontally across the centre of the vertical slices. Unfold the vertical slices back over the horizontal one then fold up the other set of vertical slices. Lay over another horizontal slice and unfold the folded ones. Repeat to form a neat interwoven blanket.
  • Arrange the beef mince over the bacon in an even layer. Sprinkle over the barbecue spices and some seasoning. Sprinkle the cheese in a line down the centre, then dollop over the relish.
  • Roll up the fatty as tightly as you can into a neat, fat, sausage shape. Take the fatty to the barbecue and rest on the grill bars, seam-side down, away from the fire. Lower the lid and cook gently for 35-40 minutes, using tongs to turn it a few times so it browns evenly. Use a digital probe thermometer to check the internal temperature. It is cooked when it reads 65-70°C. Let the fatty rest for a few minutes before carving into thick slices; stuff them into buns and eat like a burger, or have it on its own as a meatloaf.
