½ cup ketchup
½ cup packed brown sugar
1 ½ teaspoons salt
½ teaspoon chili powder
1 ½ pounds lean ground beef
1 ½ cups croutons, crushed
1 small onion, chopped
2 eggs
¼ cup milk
¼ teaspoon ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5-inch loaf pan.
  • Stir ketchup, brown sugar, salt, and chili powder together in a bowl until smooth. Spread a small amount of the ketchup mixture into the bottom of the prepared loaf pan.
  • Mix ground beef, croutons, onion, eggs, milk, and black pepper together in a large bowl; shape into a loaf and put into prepared pan. Spread remaining ketchup mixture over the loaf.
  • Bake in the preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

½ cup ketchup
1 ½ pounds lean ground beef
¾ cup milk
2 eggs
1 ½ teaspoons salt
¼ teaspoon ground black pepper
1 small onion, chopped

¾ cup finely crushed saltine cracker crumbs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 5x9 inch loaf pan.
  • Press the brown sugar in the bottom of the prepared loaf pan and spread the ketchup over the sugar.
  • In a mixing bowl, mix thoroughly all remaining ingredients and shape into a loaf. Place on top of the ketchup.

1 onion, chopped

garlic powder, to taste
6 slices gluten free bread, cubed
1/2 cup milk
1 egg
2 tablespoons yellow mustard, divided
1/2 cup ketchup, divided
2 tablespoons brown sugar

Steps:

  • Preheat oven to 350.
  • Mix ground beef, onion, salt, pepper and garlic powder in a bowl.
  • Mix in bread, milk, egg, 1 tbsp mustard, and 1/4 cup ketchup.
  • Press mixture into a loaf and put in baking dish.
  • In a small bowl, stir together 1 tbsp mustard, 1/4 cup ketchup and 2 tbsp brown sugar. Pour on top of the meat loaf within the last 20-30 minutes of cooking.
  • Bake for about an hour until it's cooked through.

2 tablespoons Dijon mustard
2 pounds 85 or 93 percent lean ground turkey
1 ounce Parmesan cheese, grated (1/2 cup)
1/3 cup chopped fresh parsley
Glaze
1 cup ketchup
1/4 cup packed brown sugar
2 1/2 teaspoons cider vinegar
1/2 teaspoon hot sauce

  • Do not use 99 percent lean ground turkey in this recipe; it will make a dry meatloaf. Three tablespoons of rolled oats, chopped fine, can be substituted for the quick oats; do not use steel-cut oats. 1. FOR THE MEATLOAF: Adjust oven rack to upper-middle position and heat oven to 350 degrees. Line wire rack with aluminum foil and set in rimmed baking sheet. Melt butter in 10-inch skillet over low heat. Stir baking soda into melted butter. 1 large eggs

1 small yellow onion (, chopped finely)
1/4 teaspoon ground ginger
3/4 cup finely crushed saltine cracker crumbs
2 slices sandwich bread ((any variety, this is to soak up the fat, not for consuming))

Steps:

  • Preheat oven to 350 degrees.
  • Lay the two pieces of sandwich bread onto the pan.
  • In a large bowl, mix the beef, milk, egg, salt, pepper, onion, ginger and saltines.
  • Shape the mixture into a loaf on top of the bread.
  • Bake for 45 minutes.
  • While the meatloaf is cooking add the brown sugar, ketchup and Worcestershire Sauce in a small bowl and mix.
  • Glaze the meatloaf and cook a final fifteen minutes.
  • Since you're adding bread under the meatloaf you can also cook potatoes or other vegetables on the side without worrying about too much fat running over.

1/2 cup ketchup
4 tablespoons brown sugar
4 teaspoons cider vinegar
2 teaspoons olive oil
3/4 cup diced celery
2 garlic cloves, minced
2 extra large eggs
1/2 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon ground black pepper
2 teaspoons Dijon mustard
2 teaspoons Worcestershire sauce
1/4 teaspoon red hot pepper sauce
1/2 cup whole milk or 1/2 cup plain yogurt
1 lb jimmy dean low-fat sausage
1 lb ground buffalo meat
2/3 cup crushed saltine crackers

Steps:

  • For the Glaze: Mix all ingredients in small saucepan and set aside.
  • For the meat loaf: Heat oven to 350°. Heat oil in medium skillet; add celery and garlic. Saute until softened, about 5 minutes. Set aside while preparing main ingredients.
  • Mix eggs with thyme, salt, pepper, mustard, worcestershire sauce, pepper sauce, and milk or yogurt. Add egg mixture to meat in large bowl along with crackers, parsley and cooked celery and garlic. Mix with fork until evenly blended and meat mixture does not stick to bowl. (If mixture sticks, add more yogurt or milk, a couple of tablespoons at a time, until mixture no longer sticks.).
  • Turn meat mixture onto waxed paper. With wet hands, shape into loaf and place in meatloaf pan or shallow pan. Brush with half the glaze and arrange bacon slices on top.
  • Bake loaf until bacon is crisp and internal temperature of loaf registers 160 degrees, about 1 hour 15 minutes. Take out of oven and let rest under foil for 20 minutes. Simmer remaining glaze over medium heat until thickened slightly. Slice meat loaf and serve with extra glaze passed separately.

Brown Sugar Glaze:
1/3 cup ketchup
3 tablespoons brown sugar
1 tablespoon yellow mustard

Steps:

  • Preheat your oven to 375 degrees.
  • Mix the ground beef, salt, pepper, onion, green peppers, egg, oats and diced tomatoes well. You may have to use your hands, but don't overwork the meat. Just until the ingredients are mixed in.
  • Form a loaf and place in a baking dish.
  • Mix ketchup, brown sugar and mustard together and spread over meatloaf.

1 ⅓ pounds grass-fed ground beef
1 ⅓ cups bread crumbs
1 small yellow onion (chopped)
1 green bell pepper (chopped)

Steps:

  • Preheat your oven to 350 degrees. Lightly spray a loaf pan with non-stick cooking spray.
  • Combine ketchup, brown sugar, and salt in a small mixing bowl and allow to sit for a couple of minutes to allow sugar to dissolve.
  • Spoon one-third cup of sauce into bottom of a loaf pan. Set aside.
  • Place ground beef, bread crumbs, onion, bell pepper, eggs, milk, and one-third cup of glaze into food processor and process until mixture is thoroughly blended.

1 tsp olive oil
1/2 sweet yellow onion, diced
2 cloves of garlic, minced
1/4 cup of 2% milk
1 large egg
1 tsp thyme
1 tsp Dijon mustard
1 tsp Worcestershire sauce
1/8 tsp hot pepper sauce
Sea salt and freshly cracked pepper, to taste
1 1/4 lbs 93% lean ground turkey (not all turkey breast)
1/2 cup + 2 1/2 tbsp fresh bread crumbs
2 tbsp fresh parsley, chopped
1/2 cup of ketchup
2 tbsp packed light brown sugar
2 tbsp cider vinegar

Steps:

  • Preheat the oven to 350 degrees. Line a baking sheet with tin foil then place a wire rack on top. Fold a piece of tin foil into a 10 x 6 inch rectangle and place on top of the wire rack; set aside. Chop some leftover rustic bread into cubes (I used roasted garlic bread) making sure to slice the bottom of the loaf off first (it's too hard for breadcrumbs). Once the bread is in cubes, place into a food processor, and pulse until you have fine bread crumbs. Heat the olive oil in a skillet over medium heat. Add the onion; cover and cook, stirring occasionally, until the onion has softened; about 5-7 minutes. Add the minced garlic and cook, stirring constantly, for 1 minute. Remove from the heat and set aside to cool. Whisk together the milk, egg, thyme, mustard, Worcestershire sauce, hot sauce, sea salt, and freshly cracked pepper, to taste in a small bowl. In another large bowl, mix the turkey, bread crumbs, parsley, cooked onion mixture, and egg mixture together with your hands until uniformly combined. Press the mixture together into a compact mass, then turn it out onto the foil rectangle on top of the wire rack. Using your hands, press the meat into an evenly thick loaf about 2 inches tall and 1 inch smaller than the foil on all sides. Stir the ketchup, sugar, and vinegar together, then brush half of the mixture evenly over the meatloaf. Bake the meatloaf for 45 minutes. Brush the meatloaf with a bit more glaze, and continue to bake until the center of the loaf registers 160 degrees with a meat thermometer, about 15-20 minutes longer.   • Preheat the oven to 350 degrees. Line a baking sheet with tin foil then place a wire rack on top. Fold a piece of tin foil into a 10 x 6 inch rectangle and place on top of the wire rack; set aside.
  • Chop some leftover rustic bread into cubes (I used roasted garlic bread) making sure to slice the bottom of the loaf off first (it's too hard for breadcrumbs). Once the bread is in cubes, place into a food processor, and pulse until you have fine bread crumbs.
  • Heat the olive oil in a skillet over medium heat. Add the onion; cover and cook, stirring occasionally, until the onion has softened; about 5-7 minutes. Add the minced garlic and cook, stirring constantly, for 1 minute. Remove from the heat and set aside to cool.
  • Whisk together the milk, egg, thyme, mustard, Worcestershire sauce, hot sauce, sea salt, and freshly cracked pepper, to taste in a small bowl. In another large bowl, mix the turkey, bread crumbs, parsley, cooked onion mixture, and egg mixture together with your hands until uniformly combined. Press the mixture together into a compact mass, then turn it out onto the foil rectangle on top of the wire rack. Using your hands, press the meat into an evenly thick loaf about 2 inches tall and 1 inch smaller than the foil on all sides.
