MEATLOAF WITH BBQ GLAZE
Steps:
- lightly butter a 21cm x 14cm x 7cm (8 1/2 inch x 5 1/2 inch x 2 1/2 inch) loaf pan
- preheat oven to 180c (355f
- combine all meatloaf ingredients in a bowl
- wet your hands and thoroughly mix everything together
- spoon and press meat into pan
- bake on middle shelf for 30 minutes
- meanwhile make the bbq glaze
- remove pan from oven and drain fat and discard
- pour bbq glaze over meatloaf and return to oven for 45 minutes
- baste every 10 minutes
- remove from oven
- serve and enjoy!
- place all ingredients in a small saucepan
- bring to a boil and reduce to a simmer for 10 minutes

MEATLOAF WITH BBQ SAUCE GLAZE
Steps:
- Gather the ingredients. Lightly grease a 9 x 5 x 3-inch loaf pan with cooking spray. Preheat the oven to 350 F.
- In a large bowl, combine the ground beef and pork, breadcrumbs, egg, 2/3 cup ketchup, 2 tablespoons Creole mustard, 1 tablespoon Worcestershire sauce, grill seasoning, and chopped onion.
- Bake for 1 hour, then carefully drain off excess grease.
- In a small bowl, combine the topping ingredients and spread over the top of the loaf. Continue baking for 15 to 20 minutes longer, or until the internal temperature reads between 155 F and 160 F on a digital thermometer.
- Remove from the oven, tent with foil, and let rest for about 10 minutes before slicing and serving.

- Preheat oven to 350 degrees F (175 degrees C).
- In a small bowl, combine the ketchup, brown sugar, 1 tablespoon lemon juice and mustard powder.
- In a separate large bowl, combine the ground beef, bread, onion, egg, bouillon, remaining lemon juice and 1/3 of the ketchup mixture from the small bowl. Mix this well and place in a 5x9 inch loaf pan.
- Bake at 350 degrees F (175 degrees C) for 1 hour, drain any excess fat, coat with remaining ketchup mixture and bake for 10 more minutes.

MINI MEATLOAVES WITH BBQ GLAZE
I love meatloaf but don't always have time to wait the hour and change a regular loaf takes to cook. This recipe makes great individual-size meatloaves for the family in about half the time. I like to bake a batch of these, then wrap and freeze them for a perfect make-ahead entrée.

- Preheat the oven to 400 degrees F. Spray a 6-cavity mini loaf pan with nonstick spray.
- Melt the butter in a large skillet over medium-high heat. Add the onions, celery, carrot and garlic and cook, stirring occasionally, until the vegetables are lightly browned, 4 to 5 minutes. Add the thyme and cook for an additional minute. Remove from the heat and allow to cool.
- Beat the eggs until combined in a large bowl. Add the ground chuck, sausage, cream, ketchup, breadcrumbs, Worcestershire, salt and pepper. Pour in the cooked vegetables. Use your hands to massage the meatloaf mix together until well combined (glove up for this if you like!).
- For the glaze: Stir the ketchup, barbecue sauce and mustard together in a small bowl until well mixed. Set aside.
- Divide the meat mixture evenly between the loaf pans, pushing down and flattening the tops of the meatloaves. Top each loaf with about 1/4 cup of the glaze. Bake until cooked through (an instant-read thermometer inserted into the loaves should register 160 degrees F), 25 to 35 minutes.
- Remove the meatloaves from the oven and allow to rest for 5 minutes. Remove the loaves from the pans and serve warm.
