CLASSIC MEATLOAF RECIPE



Classic Meatloaf Recipe image

Lots of beefy goodness in this perfectly seasoned classic meatloaf. Topped with a tomato-based glaze that adds just the right amount of sweetness and tartness to this amazing comfort food.

Number Of Ingredients 11

1½ lbs ground beef
¾ cup quick oatmeal
¾ cup milk
1 egg
½ cup onion, finely diced (or grate it if your kids will freak out if they see a piece of onion)
1¼ tsp salt
¼ tsp pepper
GLAZE
⅓ cup ketchup
2 Tbsp brown sugar
1 Tbsp mustard

Steps:

  • Preheat oven to 350 degrees.
  • Combine ground beef, oatmeal, milk, egg, onion, salt, and pepper in a medium-sized mixing bowl. Using your hand, incorporate everything into the meat. This only takes 30 seconds or so. You do not want to over-mix.
  • Transfer meat into a large loaf pan and press it down evenly into the pan.
  • For the glaze, mix ketchup, brown sugar, and mustard in a small bowl. Pour evenly over meatloaf.
  • Bake at 350 degrees for 1 hour and 20 minutes.
  • Remove from oven and drain off excess grease. Let stand for 5 minutes before serving.

2 pounds lean ground beef
20 saltine crackers, crushed into crumbs
1 large egg, slightly beaten
1/2 cup ketchup
1 tablespoon mustard
1 teaspoon salt
1/2 teaspoon pepper
1/2 yellow onion, finely chopped
Optional: white bread slices, lettuce, and tomato for sandwiches

Steps:

  • Preheat the oven to 350 degrees Fahrenheit.
  • Combine the beef, cracker crumbs, egg, ketchup, mustard, salt, pepper, and onion in a large bowl. Blend in a stand mixer just until combined.
  • Form the mixture into two loaves and place them in a 9x3x2-inch baking pan, crosswise.
  • Bake the loaves for an hour or until brown.
  • Transfer the loaves into serving plates right away. Let them cool slightly to firm up.
  • Slice, serve, and enjoy!
  • *If making a sandwich, cut 2 slices of meatloaf. Place them on top of a slice of white bread, and top with lettuce and tomato. Cover with another piece of white bread.

1/2 red onion
1 1/2 cups quick oats
2 eggs
2 (4 ounce) cans tomato sauce
chili powder
garlic powder
onion powder
parsley
liquid smoke
Worcestershire sauce
2 cups ketchup
1 cup brown sugar

Steps:

  • Chop the onion then mix all the ingredients for the meat portion together, uncooked. All the seasonings should be eyeballed in -- just use your own knowledge of what tastes your family likes. Not too much of the liquid smoke or Worcestershire, but give a good few shakes of each. This really adds flavor. Mix together the ketchup and brown sugar for the topping and set aside.
  • Bake at 350°F for 30 minutes. Pull out the meatloaf and drain the excess juice from the pan. Put on the topping and bake for another 30 minutes. This goes very well with cheesy potatoes! Also, the leftovers can be used as meatloaf sandwiches, yummy!
  • ENJOY!

This is my personal favorite and I have never had any complaints.

2 large eggs
1 pkg lipton onion soup mix
1 lb 80/20 hamburger meat
1 can(s) rotel original
1/2 pkg crumbled ritz crackers
1/4 c ketchup
1 tsp worcestershire sauce
1/2 c green bell pepper finely chopped
1/8 tsp salt and pepper

Steps:

  • 1. Heat oven to 350 degree
  • 2. Combine all ingredients in bowl and spray meatloaf pan with cooking spray
  • 3. place ingredients in pan and cook in the oven for 45 minutes to an hour or until you feel it is done. I cook until the center is not pink and I drain the fat half way through cooking. Do not let meatloaf sit in the grease after you take it out of the oven, remove from pan and drippings.
  • 4. Serve with mashed potatoes, brown gravy and carrots or asparagus, or any other vegetable and cornbread. This recipe is to die for!
  • 5. You can top with Ketchup or tomato sauce for the last 10 minutes of cooking if you prefer.

  • Preheat oven to 350F, with rack on middle position. Place large pan of water on lower rack underneath.
  • In a large heavy saucepan, saute onion and garlic in olive oil until soft. Add a pinch of kosher salt, pinch of pepper, and the thyme. Saute 30 seconds more, and transfer to large bowl.
  • Add 1 tsp kosher salt, 1 tsp black pepper, Worcestershire sauce, eggs, beef broth, and bread crumbs. When I made this meatloaf for Lenny recently, I wanted to make sure there weren’t any large chucks of bread or onion so, I toasted about three slices of whole grain bread and then pulsed it to a nice crumb consistency in my food processor.
