Meat Loaf in a Mug image

This meat loaf in a mug is a smart take on the classic with hardly any cleanup (or leftovers)! -Mrs. Ruby Matt, Garnavillo, Iowa

Number Of Ingredients 5

2 tablespoons 2% milk
1 tablespoon ketchup
2 tablespoons quick-cooking oats
1 teaspoon onion soup mix
1/4 pound lean ground beef

Steps:

  • In a small bowl, combine milk, ketchup, oats and soup mix. Crumble beef over mixture and mix well. Pat into a microwave-safe mug or custard cup coated with cooking spray. , Cover and microwave on high for 3 minutes or until meat is no longer pink and a thermometer reads 160°; drain. Let stand for 3 minutes. If desired, serve with additional ketchup.

I was hungry for meatloaf but I was the only one home. Found this quick and easy meatloaf that is made for one and made in the microwave. Could also make this in the oven if you prefer.

Number Of Ingredients 6

2 tablespoons 2% low-fat milk
1 tablespoon ketchup
2 tablespoons quick-cooking oats
1 teaspoon onion soup mix
1/4 lb lean ground beef
additional ketchup (for topping)

Steps:

  • In a bowl, mix milk, ketchup, oats and soup mix.
  • Fold beef into mixture and mix well.
  • Put into a microwave-safe mug or custard cup coated with cooking spray.
  • Cover and microwave on high for 3 minutes or until meat is no longer pink and a meat thermometer reads 160°.
  • Drain meatloaf and let stand for 3 minutes.
  • Top with ketchup if desired.

1 slice white bread, torn into pieces
2 tablespoons milk
1/2 teaspoon Worcestershire sauce
1/4 lb ground beef
1 green onion, thinly sliced
1/4 teaspoon seasoning salt
1/8 teaspoon ground black pepper

Steps:

  • Place the torn bread into a small bowl, and pour in the milk and Worcestershire sauce; set aside for a few minutes for the bread to absorb the liquid. Add the ground beef, green onion, seasoned salt, and pepper to the bread; mix well and place into a 10 ounce, microwave-safe mug.
  • Cook in the microwave at 70 percent power until the meatloaf is firm and no longer pink in the center, 4 to 5 1/2 minutes depending on the microwave. Remove the meatloaf from the microwave, and allow to stand 2 minutes before serving.

  • Line the bottom of the microwave with a big sheet of wax paper in case juices from the meatloaves bubble out. Place mugs in a circle on top of wax paper. Cover mugs with another big sheet of wax paper. Microwave at MEDIUM-HIGH (70% power) 11 minutes. Cut into meatloaves with a knife and fork. If any are still pink inside, microwave them 30 seconds more and recheck for doneness. Carefully remove each mug from the microwave using oven mitts.
  • Spread 1 tablespoon ketchup over each meatloaf; cover with wax paper, and let stand 2 minutes.
