Meatloaf for Two image

Filled with spices and aromatics then topped with a spicy harissa ketchup glaze, this is not your average meatloaf.

2 tablespoons olive oil
1/2 medium red onion, diced
Kosher salt and freshly ground black pepper
1/2 cup ketchup
1 tablespoon harissa
1/2 pound 80/20 ground beef
1/2 pound ground lamb
3/4 cups plain dried breadcrumbs
1/2 cup whole milk
1 large egg, lightly beaten
1/4 cup chopped cilantro leaves
Small handful fresh mint leaves, chopped
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon sweet paprika

Steps:

  • Preheat the oven to 350 degrees F (180 degrees C). Line a small baking sheet with parchment paper.
  • Heat the oil in a medium nonstick skillet over medium-high heat. Add the onions, season with salt and cook, stirring occasionally, until softened, about 5 minutes.
  • Meanwhile, combine the ketchup and harissa in a small bowl.
  • Put the beef, lamb, breadcrumbs, milk, beaten egg, cilantro, mint, coriander, cumin and paprika in a large bowl. Season with salt and pepper.
  • Add the sauteed onions and using your hands, mix together until well combined.
  • Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf.
  • Pour the ketchup-harissa glaze on top of the meatloaf and spread all over until the sides and top are coated. Bake the meatloaf until the edges have browned, about 45 minutes.
  • Allow the meatloaf to rest for at least 15 minutes before cutting and serving.

1 can (10-3/4 ounces) condensed cream of celery soup, undiluted
1-1/4 cups water
1 large egg
1/4 cup dry bread crumbs
2 tablespoons grated Parmesan cheese
1-1/2 teaspoons dried parsley flakes
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
1/8 teaspoon salt, optional
1/8 teaspoon pepper
1/2 pound lean ground beef (90% lean)
Hot mashed potatoes, optional

Steps:

  • In a small bowl, combine soup and water until blended. Pour half into a 1-1/2-qt. slow cooker. Cover and refrigerate remaining soup mixture., In a small bowl, combine the egg, bread crumbs, cheese, parsley, garlic powder, onion powder, salt if desired and pepper. Crumble beef over mixture and mix well. , Shape into a loaf; place in slow cooker. Cover and cook on low for 5-6 hours or until meat is no longer pink and a thermometer reads 160°. , For gravy, place reserved soup mixture in a small saucepan; cook over low heat until heated through. Serve the meat loaf and gravy with mashed potatoes if desired.

½ cup ketchup
⅓ cup brown sugar
1 tablespoon lemon juice
1 teaspoon dry mustard
2 pounds lean ground beef
3 slices bread, shredded
¼ cup diced onion
1 egg, beaten
1 cube beef bouillon, crumbled
3 tablespoons lemon juice

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a small bowl, combine ketchup, brown sugar, 1 tablespoon lemon juice and dry mustard until smooth.
  • In a large bowl, combine ground beef, shredded bread, onion, egg, bouillon, 3 tablespoons lemon juice, and 1/3 cup of the ketchup mixture until well mixed. Form into a loaf and place in a 9x5 inch loaf pan.
  • Bake 1 hour. Pour off fat. Pour reserved ketchup mixture over loaf. Bake 10 minutes more.

1 egg
2 tablespoons Mrs. Dash seasoning mix
3 -4 dashes Tabasco sauce
1/8 cup plain breadcrumbs or 1/8 cup seasoned dry bread crumb
1/8 cup half-and-half
salt (to taste)
1/4 cup ketchup
4 -6 slices bacon

Steps:

  • put all ingredients in a large bowl and mix with your hands (it's easier,and mixes better than a spoon).
  • If mixture is to wet add more bread crumbs,if to dry add more milk.
  • Line a 13 x 11 baking sheet with foil.
  • Form meat into a loaf on pan.
  • cover meat wih ketchup and spread evenly over meat.
  • Lay bacon over the loaf and wrap underneath.
  • bake in 350 degree oven 45 minutes to 1 hour.
  • Serve with garlic mashed potatoes.

2 medium potatoes, peeled and cubed

1/4 cup panko bread crumbs, toasted

  • In a small bowl, combine the carrot, oats, milk, Worcestershire sauce, garlic, salt and pepper. Crumble beef over mixture and mix well. Shape into two 1-in. thick patties., Grill burgers, covered, over medium heat or broil 4 in. from the heat for 6-8 minutes on each side or until a thermometer reads 160° and juices run clear., Meanwhile, place potatoes in a small saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or until tender. Drain. Press through a potato ricer or strainer into a small bowl. 1/3 cup crushed saltine
3 tablespoons chopped onions
1/4 teaspoon salt
1/8 teaspoon rubbed sage
1 dash pepper
1/2 lb lean ground beef
1/4 cup ketchup
2 tablespoons brown sugar
1/4 teaspoon Worcestershire sauce

Steps:

  • In a bowl, beat the egg. Add milk, cracker crumbs, onion, salt, sage and pepper. Crumble beef over mixture and mix well. Place mixture into 2 mini loaf pans or shape into 2 loaves and place in a shallow baking dish coated with nonstick cooking spray.
  • Combine the ketchup, brown sugar and worcestrershire sauce; spoon over the meat loaves. Bake at 350 for 40-45 minutes or until meat is no longer pink and a meat thermometer reads 160: drain. Makes 2 mini meat loaves.
