Mushroom and Provolone Meatloaf image

Finely chopped mushrooms and shredded provolone add moisture and flavor to this glazed meatloaf.

Provided by Food Network Kitchen

Time 1h25m

Yield 6

Number Of Ingredients 12

1 1/2 pounds ground meatloaf mix (equal parts ground beef, pork and veal or turkey)
1 1/2 cups finely chopped button mushrooms
1 cup dried breadcrumbs
1 cup shredded provolone
2 tablespoons chopped fresh flat-leaf parsley
2 large eggs, lightly beaten
1 medium onion, grated
1 clove garlic, minced
1/2 cup ketchup
1 tablespoon plus 1 teaspoon Worcestershire sauce
Kosher salt and freshly ground black pepper
2 teaspoons light brown sugar

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment paper.
  • Combine the meatloaf mix, mushrooms, breadcrumbs, provolone, parsley, eggs, onion, garlic, 1/4 cup of the ketchup, 1 tablespoon of the Worcestershire, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large bowl. Using your hands, mix together until well combined.
  • Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf, about 9 inches by 5 inches. Bake for 30 minutes.
  • Stir together the brown sugar, remaining 1/4 cup ketchup and remaining 1 teaspoon Worcestershire in a small bowl for the glaze. Remove the meatloaf from the oven and brush the top and sides all over with the glaze. Return to the oven and bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 25 minutes more. Let rest for 10 minutes before slicing and serving.

MUSHROOM SWISS MEATLOAF

Mushroom Swiss Meatloaf image

Provided by Gina Luker

Number Of Ingredients 9

2 pounds ground beef
½ onion (diced)
1 pound mushrooms (fresh, diced very fine )
1 pack brown gravy mix
4 - 5 slices Swiss cheese slices (deli, not processed)
1 teaspoons garlic (minced )
2 eggs (beaten)
1 cup panko bread crumbs
2 tablespoons butter

Steps:

  • Preheat the oven to 350 1.
  • In a fry pan, begin to sauté the mushrooms in the butter, over med high heat. Add salt to help draw out the water from the mushrooms. The goal here is to remove as much liquid from the mushrooms as possible. Half the way through sautéing the mushrooms, add the onions.
  • Add the garlic. Careful not to add the garlic at the beginning as it may burn and become bitter.
  • When the mushrooms have wilted and reduced, remove from the pan and allow to cool.
  • Prepare the gravy mix according to the package directions and set aside.
  • In a large bowl, combine the hamburger, eggs, and panko. Mix REALLY well.
  • Add the ½ of the cooled mushroom and onion mix.
  • Pack the meatloaf mix into an 8x8 cake pan lined with parchment paper. (or choose any other baking dish you prefer. You can use a loaf pan, but keep in mind to adjust the cooking time as it will be considerably thicker and take longer to roast.) Pack the mixture in, and then turn it out onto a parchment lined baking sheet to hold its shape.
  • Bake the meatloaf for approximately 1 hour. Be sure to check the temperature with a thermometer, as the cooking time may need to be adjusted according to the thickness of the loaf. Always be safe and cook the loaf to an internal temperature of 160F.
  • 15 minutes before the cooking time is complete, take the remaining mushroom and onion mixture and mix it with 2 - 3 tablespoons of the gravy mixture. The consistency should be thick, spreadable, but not runny.
  • Spread this mixture over the top of the meatloaf evenly and then top that with the 4 - 5 slices of Swiss cheese. Overlap them to make them fit over the top of the loaf if you need to.
  • Continue roasting the meatloaf until the cheese has melted.
  • Remove from the oven and let rest 5 minutes. Slice to serve and use the remaining prepared gravy to top the meatloaf.

BIG D'S MUSHROOM AND CHEESE-STUFFED VENISON LOAF

Big D's Mushroom and Cheese-Stuffed Venison Loaf image

A moist and flavorful comfort food. Very easy to make. A dish that would please anyone. My family never liked venison until now. I make my own venison burger (mixed with pork and smoked bacon) to die for. Makes the best meatloaf sandwiches or subs (trust me) for work or hunting (awesome cold). Works excellent with beef too. Your friends and family will beg for more. Good thing I like to hunt (the rest of my side of family doesn't).

BACON-WRAPPED STUFFED MEATLOAF WITH MUSHROOMS AND CHEESE

Bacon-Wrapped Stuffed Meatloaf with Mushrooms and Cheese image

This is a hearty and flavorful mushroom-stuffed meatloaf created by a true meatatarian.

Provided by MUDD

Categories     Meat and Poultry Recipes     Pork     Ground Pork Recipes

Time 2h

Yield 12

Number Of Ingredients 14

1 (16 ounce) package bacon, divided
2 tablespoons olive oil, divided
1 medium onion, diced, divided
6 cloves garlic, chopped, divided
1 ½ pounds ground beef chuck
½ pound ground pork
2 large eggs
½ cup chopped fresh parsley
2 tablespoons paprika
4 teaspoons ground black pepper
2 teaspoons sea salt
aluminum foil
1 (12 ounce) package button mushrooms, sliced
12 (1 ounce) slices Provolone cheese

Steps:

  • Place 1/2 of the bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Remove to a paper towel-lined plate to drain.
  • Heat 1 tablespoon oil in a large skillet over medium-high heat. Add 1/4 of the diced onion and 4 chopped garlic cloves and lightly saute until soft, about 3 minutes. Remove to a large bowl, and add ground beef, ground pork, eggs, parsley, paprika, pepper, and sea salt. Blend together with your hands until mostly combined. Place in the refrigerator.
  • Preheat the oven to 375 degrees F (190 degrees C). Lay a 2-foot square piece of aluminum foil on a flat surface.
  • Wipe the skillet clean, add remaining 1 tablespoon oil, and heat over medium heat until shimmering, 1 to 2 minutes. Add mushrooms and saute until all moisture has evaporated and mushrooms start to turn dark reddish-brown with golden spots, 8 to 10 minutes. Add remaining 2 cloves chopped garlic and cook until fragrant, about 30 seconds.
  • Place meat mixture in the center of the aluminum foil and shape meat into an evenly thick square about 1/2 inch thick, making sure there are no gaps or thin spots. Cover meat with overlapping slices of Provolone cheese, leaving about 1/2 inch to 1 inch uncovered meat around the perimeter. Lay cooked bacon strips over Provolone cheese and spread mushrooms evenly over bacon.
  • Lift one end of the foil and begin rolling the meat in a pinwheel fashion. Place meatloaf in a baking dish, molding the ends to create a seal around the stuffing; discard the foil. Lay remaining uncooked bacon over meatloaf, leaving about 1/4 inch between each slice, and tucking ends in under the loaf.
  • Cook in the preheated oven for 45 minutes, turning halfway. Switch to the broil setting and cook until meat is no longer pink in the center, about 15 minutes more. An instant-read thermometer inserted into the center of the meat should read at least 160 degrees F (70 degrees C).
  • Remove from the oven and allow to rest 10 to 15 minutes before slicing.

BACON WRAPPED MUSHROOM MEATLOAF

Bacon Wrapped Mushroom Meatloaf image

Moist and juicy comfort food. Great for family dinners, but tasty enough for company. Great with colcannon or other mashed potato dishes. Pairs well with carmenere or chianti. Caution: This is NOT a low-fat dish. Enjoy in moderation. You can use ground turkey instead of the beef without losing much flavor, if you must. Try venison or veal in place of the lamb for a change.

CHEESE AND MUSHROOM-STUFFED MEATLOAF

Cheese and Mushroom-Stuffed Meatloaf image

My family's favourite meatloaf (OK, sometimes my little one picks out the mushrooms). This one is really good.

Provided by evelynathens

Categories     Cheese

Time 1h35m

Yield 6 serving(s)

Number Of Ingredients 14

2 tablespoons olive oil
1 medium onion, chopped
2 cloves garlic, minced
10 ounces sliced mushrooms
1 1/2 lbs ground beef
2/3 cup fresh breadcrumb
1/2 cup minced parsley
1/4 cup ketchup
1 egg, beaten to blend
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon dried thyme, crumbled
1/4 teaspoon dried sage, crumbled
1 1/2 cups grated cheddar cheese

Steps:

  • Heat oil in skillet over medium heat.
  • Add onion and sauté until translucent, about 4 minutes.
  • Add garlic and mushrooms.
  • Cook until mushrooms are golden-brown and liquid evaporates, about 8-9 minutes.
  • Cool.
  • Preheat oven to 350 degrees F (175C).
  • Mix beef and everything else but cheese.
  • Turn out onto large square of plastic wrap.
  • Pat into 9 x 12 inch rectangle.
  • Spread mushroom filling over rectangle, leaving a ½ inch border on all sides.
  • Cover mushrooms with cheese.
  • Starting at one short end, roll up jelly roll fashion. Take time and lovingly pat it into a compact shape to fit into your loaf pan - this will ensure that it doesn't crack as it bakes.
  • Arrange seam side down in 9 x 5 inch loaf pan.
  • (Can be prepared up to 6 hours ahead. Cover and refrigerate) Bake until loaf shrinks from sides of pan and browns, about 1 hour.
  • Pour off any drippings.
  • Gently turn out loaf and let stand 10 minutes before slicing.

  • Saute the onion, celery and bell pepper until they are softened in butter & olive oil, stirring occasionally, about 10 minutes. Then add the garlic and stir and cook for 1 minute. Next add the chopped kale and stir and cook until it is completely wilted, about 5 minutes. Pour the cooked vegetables into a bowl to cool. You do not want to add the egg or cheese to something hot because it will either cook your egg or melt your cheese.
  • Once the veggies are cooled, add the ground beef, pork rind panko crumbs, parmesan cheese, mozzarella cheese cubes, salt & pepper, paprika, thyme, marinara sauce (reserve a little for the top), the egg, and mix until well combined.
  • Drizzle olive oil over the underside of the mushrooms, then sprinkle them with pepper & thyme. Fill each mushroom with the meat mixture and round it out on top. Put a little marinara sauce over the top of each one and spread it out to cover the top. Then sprinkle the top with shredded mozzarella cheese and the pork panko.
  • Bake at 350 degrees Fahrenheit for 30 minutes. Rotate the pan and turn the heat down to 325 for an additional 20 minutes. Make sure the meat mixture has reached 170 degrees and is cooked through.
