Steps:
- Preheat oven to 350°F (180°C).
- In a saucepan over medium heat, add the ground beef and sprinkle with salt and pepper.
- Using a spoon, break up the meat and stir until browned.
- Add the onion and garlic and continue to cook until the onions are translucent.
- Add the ketchup, mustard, Worcestershire, and brown sugar.
- Stir until the meat is fully cooked and sauce is evenly combined. Set aside.
- Cut the dinner rolls in half and place the bottom half in a baking pan.
- Top with meat and sprinkle with cheese. Place the top of the rolls back on top.
- Brush the rolls with melted butter and sprinkle with sesame seeds.
- Bake for 10 minutes, or until rolls are toasted and cheese is melted.
- Cut into individual sliders.

- Preheat the oven to 350°F (175°C).
- Combine the beef, salt, pepper, and garlic powder in a 9x13-inch (23x33-cm) rimmed baking dish, mixing thoroughly, then pressing into a flat, even layer. Bake for 20 minutes. Drain the liquid and set the cooked beef aside.
- Slice the rolls in half lengthwise. Place the bottom half in the same baking dish. Place the cooked beef on the rolls, followed by the onions and cheese. Top with the remaining rolls.

- Mix ground beef, pork sausage, bread crumbs, egg, Cajun seasoning, seasoned salt, garlic powder, pepper, and salt together in a large bowl until well combined. Form mixture into twelve 2-inch meatballs. Form any remaining meat mixture into meatballs or patties, and freeze for another time.
- Preheat the oven to 350 degrees F (175 degrees C).
- Heat oil in a large, deep frying pan over medium-high heat. Place meatballs in the hot oil and cook until browned, 4 to 5 minutes per side. Transfer meatballs to a plate and cover with aluminum foil. Drain all but about 1 tablespoon grease from the pan.
- Add onion to the pan; cook and stir until onion has softened and turned translucent, about 5 minutes. Add spaghetti sauce, garlic powder, and seasoned salt; bring to a simmer. Return meatballs to the pan and simmer until no longer pink in the centers, about 5 minutes more. An instant-read thermometer inserted into the center of the meatballs should read at least 165 degrees F (74 degrees C).
- Meanwhile, slice ciabatta buns in half and spread butter over the cut sides. Place on a baking sheet.

- Use a paring knife to cut out the center of a slider bun, leaving a ¼-inch (6 mm) border around the edge. Remove the bread from the center of the bun and place it in a food processor. Use your fingers to press the remaining bread to the bottom or sides of the bun to make a mini bread bowl. Set the bread bowl on a baking sheet and repeat with the remaining buns.
- Pulse the bread in the food processor for 20-30 seconds, until it breaks down into fine bread crumbs. Set aside ½ cup (55 G) of the bread crumbs and transfer the rest, about 1 cup (115 G), to a resealable bag and freeze for another use.
- Make the meatballs: Preheat the oven to 400°F (200°C). Grease the foil pieces with nonstick spray. Set aside.
- In a medium bowl, combine the ground turkey, reserved ½ cup (55 G) bread crumbs, onion, egg, pepper, salt, and garlic. Gently mix until well combined.
- Using a 2-ounce ice cream scoop, scoop 8 meatballs onto the prepared baking sheet and roll into balls. Chill for 30-60 minutes to set.
- Make the sauce: In a medium bowl, mix together the ketchup and barbeque sauce.
- Roll the foil squares into strips.
- Remove the meatballs from the refrigerator. Lay a foil strip over the top of each meatball, down the center. Press the foil down the center of the meatball to create an indentation that resembles a brain.
- Brush the meatballs with the sauce.
- Using a toothpick, add some texture to the sides of each meatball by pressing the side of the toothpick into the meat to create grooves and ridges.
- Bake the meatballs for 18-20 minutes, or until the sauce begins to lightly brown on top and the internal temperature reaches 165°F (75°C).
- Assemble the sliders: Scoop ½ tablespoon of sauce into the bottom of each prepared slider bun. Top the sauce with 1 tablespoon of grated mozzarella cheese. Gently tuck a meatball into the hole in the bun, making sure only a small amount, about ¼ inch (6 mm), of the meatball is inside the bun. Brush the tops with more sauce.
- Bake for 10 minutes, or until the sauce has set and the bread is toasted.
- Cut 8 of the toothpicks in half. Insert the ends of the toothpick halves into the rounded side of the halved olives. Make sure that the toothpicks do not stick out the front, which should look like eyeballs.
- Remove the sliders from the oven and add the eyes by pushing the ends of the toothpicks with the olives into the side of the sliders. Serve immediately, being careful to remove the toothpicks before consuming.

- In a food processor, combine the nuts and garlic and pulse to a coarse crumb. Add the breadcrumbs, Parmesan, parsley, salt and a few turns of pepper and pulse to combine. Add the eggs and process until the mixture holds together in a ball. Roll 1 1/2 tablespoon-sized balls, packing just firmly enough so they hold together but not so much that they toughen. Put the balls on a plate or sheet of parchment paper.
- Warm the tomato sauce in a large pot over medium heat.
- Heat 1/4 inch of oil in a skillet over medium-high heat and cook the balls in batches, turning until they're golden brown on all sides, 7 to 10 minutes. (Alternatively, you can deep fry the suckers if that's what you're into.) Add the balls to the tomato sauce.
- Put 1 slice of mozzarella, 2 balls and 1 basil leaf on the bottom of each roll. Top with the top of the slider bun and serve with additional marinara sauce and chopped parsley or basil on the side.
