MEATBALL PARMESAN

Meatball Parmesan image

Whether you scoop this onto a toasted semolina hero roll for a sandwich, or serve it straight from the pan with garlic bread on the side, meatball Parmesan makes a filling, savory meal. You can form the meatballs up to a day ahead and keep them in the fridge until you're ready to fry. But they are best fried just before baking. Serve this with some kind of crisp green vegetable on the side.

Time 1h30m

Yield 6 servings

Number Of Ingredients 13

3 slices white bread (stale is fine)
1/3 cup milk
1 pound ground pork or veal
1 pound ground beef
1/2 cup finely chopped onion
1 1/4 cups finely grated Parmesan, preferably Parmigiano-Reggiano
1/4 cup chopped parsley
2 garlic cloves, finely chopped
1 tablespoon kosher salt
1 teaspoon black pepper
Olive oil, for frying
5 cups Simple Tomato Sauce (see recipe)
1/2 pound fresh mozzarella, torn into bite-sized pieces

Steps:

  • Heat oven to 400. Remove crusts from bread slices and discard. Tear remaining bread into small pieces and place in a small bowl. Pour milk over bread and let stand until liquid is almost absorbed, 5 to 10 minutes.
  • In a large bowl, combine pork or veal, beef, soaked bread, onion, 1/4 cup Parmesan, the parsley, the garlic, the salt and the pepper until just combined. Form meat into golf-ball-size rounds. (You should have about 25 meatballs.) Meatballs can be formed up to 24 hours ahead, covered and refrigerated before frying.
  • Fill a large skillet with 1/4-inch oil. Place over medium-high heat. When oil is hot, fry meatballs in batches, turning occasionally, until golden brown, 8 to 10 minutes per batch. Transfer fried meatballs to a paper towel-lined plate.
  • Spoon a thin layer of sauce over the bottom of a 9-by-13-inch baking pan. Sprinkle one-third of the Parmesan over sauce. Scatter half the meatballs over the Parmesan and top with half the mozzarella pieces. Top with half of the remaining sauce, sprinkle with another third of the Parmesan, and repeat layering, ending with a final layer of sauce and Parmesan.
  • Transfer pan to oven and bake until cheese is golden and casserole is bubbling, about 40 minutes. Let cool a few minutes before serving.

Categories     Main Dish

Time 1h

Number Of Ingredients 16

1 pound ground beef ((500 grams))
1 large egg
3 tablespoons bread crumbs
3 tablespoons freshly grated parmesan cheese
1 clove garlic minced
½-1 tablespoon freshly chopped parsley
½ teaspoon salt
1-2 dashes black pepper
¼ cup milk (I used 2%) ((60 grams))
2 tablespoons olive oil
1-2 cloves garlic minced
1½ cups tomato puree/passata ((338 grams))
¼-½ teaspoon salt
4-5 fresh basil leaves (chopped)
½ teaspoon oregano
¼ cup water ((60 grams))

Steps:

  • In a large bowl mix together the ground beef, egg, bread crumbs, parmesan cheese, minced garlic, chopped parsley, salt and pepper. Slowly add the milk until you have a soft compact mixture.Form the mixture into small balls.
  • In a large pan add the olive oil, garlic, tomato puree/passata, salt, fresh basil, oregano and water. Mix to combine.
  • Add the meatballs and gently mix to cover them in sauce. Cover the pan and cook on low/medium (more low than medium) heat for approximately 15- 20 minutes, uncover and continue to cook for another 15-20 minutes or until cooked through and the sauce has thickened. If you find the sauce thickening too much then add a little more water.
  • Serve immediately as a main dish or over your favourite al dente pasta. Top with freshly grated parmesan cheese before serving. Enjoy!

MEATBALLS WITH PARSLEY AND PARMESAN

Meatballs with Parsley and Parmesan image

Meatballs are usually the spicy sidekick to spaghetti, but with a crusty roll, zesty tomato sauce, and some fresh mozzarella, they are transformed into hero material. Proving their versatility, these beefy bites from home cook Gayle Gardener of New Mexico also work as hors d'oeuvres. Just add a dipping sauce, and they'll be the hit of the party. If you're counting calories, substitute ground turkey or chicken for the beef and bake them.

Yield makes about 44 meatballs

Number Of Ingredients 10

4 large eggs
1/2 cup fresh bread crumbs
6 tablespoons grated Parmesan cheese
3 tablespoons olive oil
1/4 cup chopped fresh parsley leaves
3 large garlic cloves, minced
2 teaspoons salt
1 teaspoon ground black pepper
2 pounds lean ground beef
Olive oil, for frying

Steps:

  • Stir the eggs, bread crumbs, cheese, 3 tablespoons olive oil, the parsley, garlic, salt, and pepper in a large bowl to blend. Add the beef and mix thoroughly. Form the mixture into 1 1/2-inch meatballs.
  • Pour enough oil into a heavy large skillet to coat the bottom; heat over medium-low heat. Working in batches, add meatballs and fry until brown and cooked through, turning frequently and adding more oil as needed, about 15 minutes per batch. Transfer to plate.

  • In a large bowl, add the beef, bread crumbs, onion, milk, egg, parsley, salt, garlic powder, ground pepper and cheese. Gently mix the ingredients together by hand until well combined.
  • Using a 3 tablespoon cookie scoop, scoop the meatball mixture out of the bowl and round the meat into uniform sized meatballs. Place the meatballs on a lined 9 x 13 pan {the HH likes to use foil} and bake the meatballs for about 50 minutes, or until an instant-read thermometer inserted into center registers 160°F. Turn the meatballs at the 30 and 40 minute mark to prevent excessive browning on one side.
  • Let the meatballs rest for about 5 minutes before adding sauce and serving. Extras, if there are any can be popped in the freezer to use at a later date. This recipe make 9 – 10 good sized meatballs.

  • In a medium bowl, add ground chicken, bread crumbs, Parmesan cheese, egg, 1 teaspoon minced garlic, parsley, and salt and pepper to taste (I like 1 teaspoon salt and 1/2 teaspoon pepper) and mix well (I use my hands).
  • Working with 2 tablespoons of meat mixture at a time, roll into balls and arrange in a single layer on a baking sheet or plate. (I use the OXO medium scoop (heaping), a size 40 portioner, and make 20 meatballs about 1 ounce each). Freeze at least 10 minutes for best results (this is optional but will help the meatballs hold their shape).
  • In a large oven-proof skillet, heat olive oil over medium-high heat until shimmering. Add meatballs in a single layer and cook until browned all over (about 2 minutes per side). You can do this in batches if necessary. Transfer to a bowl and leave the oil in the skillet.
  • To the skillet, add remaining minced garlic and stir until fragrant, about 30 seconds. Add crushed tomatoes (Be careful! They may splatter when they hit the hot oil, so keep the lid handy), basil, oregano, and red pepper flakes (if using). Bring the sauce to boil over medium-high heat.

  • Using a 1" scoop (for small bite-size meatballs) or a 1 1/2" scoop (for larger ones) place the meatballs on the baking sheet. Round with your hands to smooth out each meatball. (If your meatballs are cracking, wet your hands to help smooth them.) I usually drop a scooped portion into one hand and smooth it gently before placing them on the trays.
