Seriously Amazing Swedish Meatballs in Brown Gravy image

My favorite recipe for Swedish meatballs nuzzled in a simple yet creamy brown gravy! Just like IKEA but only better. It's so good you'll wanna slurp it through a straw!

1 small onion, finely chopped
5 tablespoons butter
2 slices of bread, torn into small pieces
3 tablespoons milk
1 ¼ pound lean ground beef
1 large egg
1 teaspoon salt + ½ teaspoon black pepper
¼ teaspoon ground nutmeg
½ teaspoon EACH ground allspice AND garlic powder
1 tablespoon EACH oil AND Worcestershire sauce
2 tablespoons flour
1 ¾ cup beef or chicken broth, low sodium
½ cup sour cream
½ - 2 teaspoons yellow mustard
buttered egg noodles or mashed potatoes, for serving

Steps:

  • In a large skillet, heat a tablespoon of butter over medium heat. Add the onions and allow them to soften and become translucent about 3-5 minutes. Remove to a medium bowl and allow them to cool.
  • In a small bowl, pour the milk over the bread and press down with a spoon or your fingers so that the bread soaks up all the milk, let sit 5 minutes.
  • When the onions have cooled, add the ground beef, bread mixture, an egg, salt, pepper, nutmeg, and allspice to the bowl and mix until just combined. Don't overmix the meat as it will result in tough meatballs. Shape into 18-22 meatballs that are about 1- 1 ¼ inch in diameter.
  • Heat 1 tablespoon of butter along with oil in a skillet over medium-high heat. Add the meatballs and cook for 6-9 minutes, turn every couple of minutes to ensure even browning. Remove to a plate. If you don't have a skillet large enough to hold all the meatballs, do it in batches, do not overcrowd the pan, you don't want them to steam as they won't develop that brown outer crust and as a result, the sauce will be very light in color.
  • Add the remaining 3 tbsp of butter to the skillet on medium-low heat. Sprinkle the flour in and whisk for 1-2 minutes or until it turns golden brown. Slowly pour the beef broth in while you whisk. Lower the heat, whisk in the sour cream until it dissolves completely.
  • Add the garlic powder, a ½ teaspoon of mustard, and Worcestershire sauce and let come to a gentle simmer before lowering the heat. Allow sauce to thicken for 6-10 minutes or until it reaches desired consistency. Taste and adjust with additional mustard as desired. Add meatballs in when there are 4 minutes remaining. Keep in mind the sauce will thicken as it sits, so if you aren't serving right away, consider leaving it a little thinner. Serve on top of buttered egg noodles or mashed potatoes. Top with fresh parsley if desired!

2 tablespoons oil
1 tablespoon butter
1 small onion, finely chopped
8 ounces slice white button mushrooms (can use more if desired, or use one or two 10-ounce cans sliced mushrooms well drained)
5 tablespoons all-purpose flour (you may reduce to 4 tablespoons for a thinner gravy)
1 pinch cayenne pepper (optional)
2 cups canned low sodium beef broth (use a good-quality beef broth)
2 -3 teaspoons Worcestershire sauce
3 tablespoons ketchup (can use more)
2 -4 teaspoons beef bouillon powder (optional or to taste)
1/4 teaspoon fresh ground black pepper (or to taste)
1/4 cup sour cream
salt (optional and to taste)
1 lb ground beef (can use half each beef and ground pork)
1 egg, slightly beaten
1 tablespoon fresh minced garlic
1/3 cup milk
1/3 cup dry breadcrumbs
1/3 cup grated parmesan cheese
1 1/2 teaspoons seasoning salt
1/2 teaspoon fresh ground black pepper
2 teaspoons dried parsley flakes

Steps:

  • Mix all meatball ingredients in a bowl using clean hands.
  • Shape into 1-inch balls.
  • Heat oil and butter in a skillet over medium-high heat (use a skillet with high sides to hold in the gravy and meatballs or use a saucepan) add in the meatballs in two batches and brown until almost cooked through turning frequently for even browning (about 10 minutes) remove to a plate.
  • You may drain some fat from the skillet but leave in about 3 tablespoons.
  • Add in onion and saute until softened (about 3-4 minutes) scraping any browned bits that have accumulated on the bottom of the skillet while cooking.
  • Add in mushrooms cook stirring until softened.
  • Add in flour and stir for 1 minute.
  • Slowly add in beef broth; bring to a boil stirring/whisking constantly until smooth, bubbly and thickened.
  • Add in Worcestershire sauce, ketchup and black pepper; bring back to a simmer stirring (if using add in the beef bouillon powder, start with 3 tablespoons ketchup you may add in more if desired).
  • Add in cooked meatballs and simmer uncovered for about 20-25 minutes over low heat, stirring frequently.
  • Season with salt to taste if desired.
  • At the end of cooking stir in 1/4 cup sour cream until combined and heated through (do not boil).

1 medium onion, finely chopped

3 to 4 tablespoons butter
GRAVY:
1 tablespoon butter

Steps:

  • In a large bowl, beat the egg, milk, cornstarch, onion, salt, pepper, nutmeg, allspice and ginger. Add beef; mix well. Shape into 1-1/2-in. meatballs. (Mixture will be very soft. For easier shaping, rinse hands in cold water frequently.) , In a large skillet over medium heat, brown the meatballs in butter, half at a time, for about 10 minutes or until no longer pink. 1 egg, lightly beaten
1/3 cup unseasoned breadcrumbs

Steps:

  • Heat oven to 350 degrees; place a rack on a baking sheet and coat with nonstick cooking spray.
  • In large bowl, mix ground beef, egg, bread crumbs, garlic salt, 1/2 t Italian seasoning, 1/4 teaspoon of the black pepper.
  • Form into 40 meatballs, about 1 level tablespoon each.
  • Place on prepared rack over baking sheet.
  • Bake meatballs at 350 degrees for 20 minutes.
  • Meanwhile, heat olive oil in a large nonstick skillet over medium-high heat.

Steps:

  • Shape meatballs: Add all ingredients for the meatballs (EXCEPT for the oil) to a large bowl. Mix well, then shape into firm meatballs (I use about 2 teaspoons of mixture per meatball).
  • Brown meatballs: Heat oil in a large skillet over medium-high heat, then brown the meatballs in batches on all sides. Be very careful when flipping them - slide a spatula underneath to keep them from breaking up. Set browned meatballs aside on a plate.
  • Make the gravy: Lower heat to medium. Add butter to the skillet and melt, then add sliced onion and cook for 5-10 minutes, until very softened and golden brown. Stir in the flour, then stir in the beef broth until smooth.
  • Simmer gravy: Simmer gravy until thickened, then carefully add the meatballs and finish simmering until meatballs are done in the middle. Serve over mashed potatoes.

1 lb hamburger meat
1/2 tsp salt
1/4 tsp pepper
2 TBSP flour
1 tsp Better Than Bouillon Roasted Beef Base
8 oz water
3/4 cup milk
2 cups rice, cooked according to package directions

Steps:

  • Add salt and pepper to hamburger meat and mix well with hands.
  • Roll out meatballs, each about the same size so they will cook evenly.
  • Place meatballs in a skillet that has been preheated to medium-high heat.
  • Cook meatballs for 5-10 minutes, making sure they aren't sticking by moving them around in the skillet, but not turning them over quite yet.
  • After the bottoms are cooked, turn them all over and cook an additional 5-10 minutes.
  • When most of the red is gone (cut through a meatball if you are in doubt,) remove all meatballs from the pan.
  • Mix together the Better Than Bouillon base and 8 oz of water. Add the flour and BTB mix to the skillet and stir.
  • When the flour has mixed in well, add in the milk and stir. Bring to a slight boil, stirring continuously.
  • Add the meatballs back in and cook for an additional 5-10 minutes.
  • Serve over rice and enjoy!
