CHEESE STUFFED MEATBALLS WITH CREAMY GRAVY
Great comfort food here. I love using the velveeta but a lot of it oozes out of meatballs. I have also used other cheeses like swiss and hard Italian cheese that doesn't ooze out as much.

Steps:
- 1. Mix all ingredients for meatballs together except for Velveeta Shape into balls and wrap each ball around a small piece of cheese. Place balls on baking sheet and bake at 350 degrees for 20 to 30 minutes depending on the size of meatballs.
- 2. Meanwhile make the gravy. Add the butter to skillet and saute the onion and garlic until translucent. Stir in the flour and make a roux. slowly stir in the beef broth and bouillon. Cook until thickened. Stir in the Worcestershire sauce and the sour cream. Lastly add the minced thyme.
- 3. Serve gravy over meatballs. Can make this a complete meal by serving meatballs and gravy over mashed potatoes or noodles.
CHEDDAR STUFFED MEATBALLS

Shape each portion around a cheese cube., Place meatballs in an 8x4-in. glass loaf pan coated with cooking spray; top with soup. - In a mixing bowl, combine all of the meatball ingredients except the cheese and mix well.
- Take a piece of meat about the size of a walnut, flatten it, put a cheese cube in the center, and press the meat mixture closed around the cheese, covering the cheese completely and evenly so it won't melt out into the pan.
- Spray skillet with non-stick cooking spray, then fry the meatballs over medium heat until they are very well browned on all sides.
- Remove meatballs from pan and make gravy from the drippings.
- Add flour to the drippings in the pan and mix well (you may need to add a little oil if there wasn't enough grease rendered from the meatballs).
- Add milk or water and Meat Magic, and stir well, getting any meat off the bottom of the pan to prevent sticking.
- Cook over medium heat until the gravy thickens and starts to bubble.
- Add more milk or water if needed.
- Return the meatballs to the gravy and serve or serve separately.
GORGONZOLA FILLED MEATBALLS, BAY AND ONION CREAMY TOMATO GRAVY

- Preheat oven to 400 degrees F.
- Place meat in a mixing bowl and season with salt, pepper, add in garlic, eggs, cheese, bread crumbs and sage. Mix meat, roll into 8 large balls and arrange in a baking dish. Coat balls with 2 tablespoons extra-virgin olive oil. Using the end of a wooden spoon, make an indentation half way into each ball and fill the cavity with some Gorgonzola. Bake until golden and cooked through, 15 to 20 minutes.
- Heat 1 tablespoon extra-virgin olive oil and butter in a sauce pot over medium heat, add bay and onions and season with salt and pepper. Add chicken stock and tomatoes and heat through, stir in cream, reduce heat to medium-low and simmer to thicken slightly 8 to 10 minutes.
- Ladle sauce into shallow bowls and top with big stuffed meatballs and potatoes alongside, if desired.
CHEDDAR MEATBALLS
I've been tweaking my old meatball recipe over the years, and finally came up with a version everyone loves. And as we all know---everything's better with CHEESE! This also makes a great burger, just omit the parsley and oregano and try substituting the cheddar for pepper jack cheese.

- Preheat oven to 350 degrees.
- Saute onion in olive oil on low-med heat until translucent, about 5 minutes Add minced garlic and saute one minute more. Set aside.
- In large bowl, beat egg. Add the cracker crumbs, seasonings, onion and garlic and mix well with fork. Crumble the ground beef into the bowl and gently mix with hands, being careful not to "overwork" it, as this can cause tough meatballs.
- Place a cooling rack in a cookie sheet with sides or large baking pan. shape mixture into 1 1/2 inch balls and place on rack. Bake at 350 for 25 minutes.

- In a large bowl, beat the egg, milk, cornstarch, onion, salt, pepper, nutmeg, allspice and ginger. Add beef; mix well. Shape into 1-1/2-in. meatballs. (Mixture will be very soft. For easier shaping, rinse hands in cold water frequently.) , In a large skillet over medium heat, brown the meatballs in butter, half at a time, for about 10 minutes or until no longer pink.
