MEATBALL STUFFED ZUCCHINI
As a home gardener, I'm always looking for tasty ways to use my huge crop of zucchini. This is one of my favorites!-Linda Logan, Warren, Ohio

- Cut each zucchini in half lengthwise; cut a thin slice off the bottoms so they sit flat. Scoop out pulp, leaving 1/4-in. shells. Finely chop pulp. , In a large bowl, combine the pulp, bread crumbs, parsley, Parmesan cheese, onion, egg and seasonings. Crumble beef over mixture and mix well. , Fill zucchini shells with meat mixture. Place in a 13x9-in. baking dish. Combine tomato soup and water; pour over zucchini. Bake at 350° for 45-50 minutes.

ZUCCHINI MEATBALLS RECIPE BY TASTY
Here's what you need: zucchinis, salt, large egg, ricotta cheese, bread crumbs, italian seasoning, fresh basil, fresh parsley, pepper, olive oil, medium onion, garlic, cooked pasta, marinara sauce

Steps:
- Cut off the bottoms of each zucchini and use a cheese grater or box grater to shred into a large bowl. Sprinkle salt on top, toss, and let rest in a colander in the sink for 20 minutes to pull out excess moisture.
- Preheat the oven to 375˚F (190˚C).
- Using a dish towel, squeeze out excess liquid from the shredded zucchini. Move the zucchini to a dry bowl and add the egg, ricotta bread crumbs, Italian seasoning, basil, parsley, pepper, olive oil, onion, and garlic. Stir until evenly mixed, then form the mixture into golf ball-sized balls.
- Bake for 30-40 minutes, or until browned, flipping halfway through.
- Serve over pasta with marinara sauce.

- Slice off and discard stem ends of zucchini. Pierce zucchini several times with a fork. On a microwave-safe plate, microwave for 3 minutes. Flip zucchini and microwave for 3 more minutes, or until softened.
- In a large bowl, combine beef, onion, breadcrumbs, egg, onion powder, Italian seasoning, salt, pepper, and 1/4 tsp. garlic powder. Mix thoroughly. Firmly and evenly form into 16 small meatballs.
- Bring a large skillet sprayed with nonstick spray to medium-high heat. Add meatballs, and cook and rotate until browned on all sides, about 3 minutes. Reduce heat to medium low. Carefully add sauce, and coat the meatballs. Cover and cook for 8 minutes, or until meatballs are cooked through.

- Slice off the ends of the zucchini and halve each length-wise. Scoop out the inside of each zucchini half, leaving about 1/4 inch of squash inside. Discard or save for another use.
- Place zucchini halves into a 9 x 13 inch baking dish. Spoon half of the tomato sauce into each zucchini boat. Line frozen meatballs into each zucchini half.
- Top meatballs evenly with remaining tomato sauce. Cover tightly with foil and bake at 350 degrees for 45 - 50 minutes or until zucchini is mostly tender when pierced with a knife.
- Remove cover and sprinkle mozzarella cheese evenly over stuffed zucchini. Return to the oven and bake an additional 5 minutes or until cheese is melted. Allow zucchini to cool 5 minutes before serving.
