MEATBALL SANDWICH
Meatballs in tomato sauce with melted cheese on a lightly toasted baguette.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- In a medium bowl, gently mix by hand the ground beef, bread crumbs, Italian seasoning, garlic, parsley, Parmesan cheese, and egg. Shape into 12 meatballs, and place in a baking dish.
- Bake for 15 to 20 minutes in the preheated oven, or until cooked through. Meanwhile, cut the baguette in half lengthwise, and remove some of the bread from the inside to make a well for the meatballs. Brush with olive oil, and season with garlic powder and salt. Slip the baguette into the oven during the last 5 minutes of the meatball's time, or until lightly toasted.
- While the bread toasts, warm the spaghetti sauce in a saucepan over medium heat. When the meatballs are done, use a slotted spoon to transfer them to the sauce. Spoon onto the baguette and top with slices of provolone cheese. Return to the oven for 2 to 3 minutes to melt the cheese. Cool slightly, cut into servings, and enjoy!

MEATBALL HEROS WITH TRI-COLORED PEPPERS

- Preheat the broiler.
- Heat the oil in a large skillet over a medium heat. Add the onions, peppers, and salt and saute for 15 minutes, stirring occasionally.
- Cut the bread into quarters crosswise and cut each quarter in half, being careful not to cut all the way through, so the 2 haves stay connected. Scoop the soft center out of the bread.
- Put the bread, open-faced, on a baking sheet. Place 1 meatball and some sauce on 1 side of each piece of bread. Top with some of the pepper mixture. Moisten the other side of each sandwich with a little sauce and sprinkle with the cheese. Broil until the cheese is melted, about 4 minutes.

Baked meatballs and a chunky sauce made with mushrooms, onions, sweet bell peppers and tomatoes make our homemade version of this sandwich shop favorite into a deliciously hearty meal.

- Preheat the oven to 400°F. Line a shallow baking pan with aluminum foil and coat it with nonstick spray.
- Place the ground meat, garlic, onion, breadcrumbs, milk, egg, parmesan cheese, parsley, salt and a few grinds of black pepper in a large mixing bowl. Combine well and form into 1-1/4 inch diameter meatballs (you should have about 16).
- Arrange the meatballs in a single layer on the prepared pan and bake for 8 minutes, then turn them and continue baking until cooked through and lightly browned, 7 to 8 minutes longer.
- Remove from the oven and set aside. Leave the oven on.
- While the meatballs bake, make the sauce. Heat the olive oil in a large skillet over medium heat. Add the onions and cook until soft and translucent, 4 to 5 minutes.
- Add the mushrooms and continue cooking until any liquid they've given off has evaporated and they begin to brown, 4 to 6 minutes longer.
- Add the garlic and cook until fragrant, 1 minute, then add the peppers and continue cooking until they're slightly softened, 3 to 4 minutes. Season to taste with salt and pepper.
- Stir in the tomatoes and tomato paste, raise the heat to medium-high and bring the sauce to a simmer.
- Continue cooking, stirring often, until the sauce begins to thicken, then reduce the heat to medium and cover the pan.
- Simmer the sauce, stirring occasionally, until the peppers are tender, 7 to 8 minutes longer. Add the meatballs and turn to coat with sauce.
- To assemble the sandwiches, slice the rolls lengthwise, spread flat and add 3 to 4 meatballs to each.
- Top each with a portion of sauce and sprinkle with 2 tablespoons of shredded cheese.
- Put a fresh piece of foil on your baking pan, arrange the sandwiches in a single layer and bake until the cheese is melted, about 3 minutes. Serve immediately.

- Mix turkey, onion, herb seasoning and salt in large bowl; form mixture into 24 one-inch meatballs.
- Heat olive oil in large skillet over medium-high heat. Add meatballs; cook for 3 to 4 minutes or until browned.
- Reduce heat to low; cook, stirring occasionally, for 15 minutes or until cooked through. Remove meatballs from skillet; keep warm.
- Add bell peppers, mushrooms, garlic and bouillon to skillet; cook, stirring occasionally, for 2 to 3 minutes. Combine 1 tablespoon evaporated milk and flour in small bowl; add to skillet.
- Gradually stir in remaining evaporated milk; cook, stirring frequently, for 5 to 8 minutes or until sauce is slightly thickened.
- Add meatballs to skillet; stir to coat. Serve over rice. Garnish with parsley.

- Mix together ground beef, onion, Parmesan cheese, eggs, parsley, cornflakes, garlic, oregano, pepper, and salt in a large bowl; blend well.
- Spray a large baking dish or sheet with nonstick spray (Pam).
- Shape meat mixture into 1 1/2 inch balls and place in prepared pan.
- Bake at 350°F for 20 minutes or until firm to touch.
- Heat marinara sauce in a saucepan according to package directions.
- Add meatballs and simmer 15 minutes or until sauce is slightly thickened.
- Spoon 5-6 meatballs onto bottom half of rolls.
- Add enough sauce on top to coat.
- Cover with top half of roll and serve.
- Slightly messy but worth it.
