MEATBALL PIZZA SANDWICH CASSEROLE
Take Italian favorites--ready-made frozen meatballs, mozzarella, and prepared pizza sauce--and turn them into a fun casserole.

Steps:
- Heat oven to 350°F. In large bowl, beat cream cheese and pizza sauce until well blended.
- In ungreased 13x9-inch (3-quart) glass baking dish, spread 1 cup of sauce mixture; arrange baguette slices over sauce. Spread top of baguette slices with 1 cup sauce mixture; sprinkle with 1/2 cup of the mozzarella cheese.
- Stir meatballs and pepperoni into remaining sauce mixture; pour over cheese. Sprinkle with bell pepper and remaining 1 cup mozzarella cheese.
- Bake 30 to 40 minutes or until thoroughly heated and cheese is melted. Sprinkle with basil.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- In a medium bowl, gently mix by hand the ground beef, bread crumbs, Italian seasoning, garlic, parsley, Parmesan cheese, and egg. Shape into 12 meatballs, and place in a baking dish.
- Bake for 15 to 20 minutes in the preheated oven, or until cooked through. Meanwhile, cut the baguette in half lengthwise, and remove some of the bread from the inside to make a well for the meatballs. Brush with olive oil, and season with garlic powder and salt. Slip the baguette into the oven during the last 5 minutes of the meatball's time, or until lightly toasted.
- While the bread toasts, warm the spaghetti sauce in a saucepan over medium heat. When the meatballs are done, use a slotted spoon to transfer them to the sauce. Spoon onto the baguette and top with slices of provolone cheese. Return to the oven for 2 to 3 minutes to melt the cheese. Cool slightly, cut into servings, and enjoy!

Steps:
- 1. Preheat oven to 400. Place entire bag of meatballs in pot with sauce (I also add garlic, onion powder, salt and pepper to taste) and cook over medium heat until warmed completely through, about 10 minutes. Stir as needed to keep meatballs from sticking to pot.
- 2. Once heated through remove from heat. Place meatballs in the center of a 9x13 baking dish, layer mozzarella and Italian blend cheeses over meatballs topping off with the Parmesan.
- 3. Take the slices of Italian bread and line the pan all the way around with them so that they are kind of keeping the meatballs toward the center of the pan. The bread slices will be standing up in the pan as shown in the picture.
- 4. You have creative freedom here with the bread...you can lightly butter and garlic the bread prior to placing it in the pan if you prefer or even brush lightly with olive oil and garlic. The choice is yours. I have made it plain and as noted above and all are delicious!
- 5. Place in oven and bake for approximately 25 minutes or until cheese is melted and bubbly. Remove from oven, serve and enjoy! A side salad goes nicely with this quick meal!

- Preheat oven to 400.
- In a bowl, combine onions, crumbs & cheese; add beef and mix well.
- Shape beef into 1-inch balls; place on rimmed cookie sheet; bake for 15-20 minutes (no longer pink in center); turn oven down to 350.
- Meanwhile, arrange bread cubes in an UNgreased 13x9 pan.
- Combine cream cheese, mayo, seasonings, and S&P; spread over bread.
- Sprinkle one cup Mozzarella cheese over the cream-cheese mixture layer.
- Combine sauce, water & garlic; add meatballs and gently mix; pour this over the cheese layer.
- Sprinkle remaining Mozzarella.
- Bake (uncovered) at 350 for 30 minutes (top will be bubbly and quite fragrant).
- OPTIONS: Use half Cheddar and half Mozzarella; try some sliced black olives; sprinkle some grated zucchini in for added nutritional value (and get a few veggies past the kids!--it's the secret ingredient).

- Heat oven to 400 degrees F. Arrange bread in a single layer in an ungreased 13X9X2 baking dish.
- Bake about 8 - 10 minutes or until edges are light golden brown.
- Meanwhile, heat olive oil in a Dutch oven or frying pan and add meatballs. Sauté for about 5 minutes stirring well. Add spaghetti sauce, brown sugar, garlic powder, italian seasoning, and water.
- Pour sauce/meatball mix over bread.
- Bake uncovered 25 to 30 minutes or until hot in center. Sprinkle with cheese. Bake about 5 minutes or until cheese is melted.
- Serve with Grated or Shredded Parmesan Cheese if desired.

DECONSTRUCTED MEATBALL SANDWICH CASSEROLE
Steps:
- Using a large dinner fork, combine the ground beef, eggs, breadcrumbs, onions, Parmesan cheese, parsley, milk, 1 tablespoon of the tomato paste (reserve the rest of the paste for the sauce), oregano, basil, garlic powder, salt and black pepper until thoroughly mixed.
- Form the mixture into meatballs about 1 1/2 inches in diameter.
- Place the meatballs on the prepared pan, not touching each other, and bake 15 to 20 minutes, until cooked through. Set aside. (Yield: About 54 meatballs.)
- Place a 2-quart saucepan over medium heat.
- Add the olive oil and minced onions. Cook until the onions begin to soften and turn translucent.
- Add the pressed garlic and cook, stirring constantly, for 30 more seconds. Do not let the garlic brown.
- Add the remaining tomato paste, the tomato sauce, water, oregano and basil.
- Whisk until the tomato paste is incorporated.
- Reduce the heat to low and let simmer for 10 minutes, stirring occasionally. This will be a rich, thick sauce. Adjust thickness to your personal tastes by adding water, a little at a time, until you reach the desired consistency. (Yield: About 4 cups of sauce.)
- Spread one side of each slice of bread with mayonnaise.
- Sprinkle with garlic powder, onion powder and salt and add diced tomatoes.
- Preheat the oven to 400 F.
- Spread the baked meatballs in the center of a 9- by 13-inch glass casserole dish, leaving space around the perimeter for the garlic bread.
- Top with the tomato sauce.
- Arrange the garlic bread standing upright on end around the edge of the casserole dish.
- Sprinkle the casserole evenly with the crushed red peppers (if desired), mozzarella, Italian-blend and Parmesan cheeses; and finish with chopped parsley. Make sure the cheeses and parsley cover the garlic bread as well as the meatballs.
- Bake for about 20 minutes or until the garlic bread is toasted.
- Serve the meatballs partially covering the garlic bread with extra tomato sauce on the side for dipping.
- Serve with a side salad to round out the meal.

- Preheat oven to 425 degrees F (220 degrees C).
- Heat garlic bread with spread side up on a baking sheet in the preheated oven until warm and golden brown, 10 to 12 minutes. Set aside to cool.
- Reduce oven temperature to 350 degrees F (175 degrees C).
- Bring spaghetti sauce to a boil in a large pot. Place frozen meatballs into sauce. Reduce heat to low and simmer until meatballs are heated through, about 20 minutes.
